Banana & Ricotta Hotcakes

SERVES 2 | PREP 5mins | COOK 5mins

INGREDIENTS

METHOD

1 cup ricotta cheese

2 large eggs

2 tbs plain flour (or gluten-free if required)

1 tsp vanilla extract

1 banana, sliced

2 tsp honey

Blend ricotta, eggs, flour and vanilla until smooth.

Heat a non-stick frypan over moderate heat and cook 2 tablespoons of mixture per pancake, for
1-2 minutes or until golden, flip and cook the other side.

Divide between two plates, top with sliced banana and drizzle with honey.
