Note: All residents must obtain a new pool pass or updated this year
in order to utilize the Highland Lakes facilities. Passes can be
obtained at the Clubhouse with proof of residency.

Beef Bourguignon
Preheat oven to 325 degrees. Saute bacon in Dutch oven over high heat until brown and
crisp. Using slotted spoon, transfer bacon to paper towels. Season beef generously with
salt and pepper and coat with flour. Working in batches brown beef in same pot over high
heat. Transfer to large bowl. Add chopped onions, carrots, turnip and parsnip to pot and
sauté until light brown. Add garlic and sauté 1 minute. Transfer vegetables to bowl with
beef. Add 1 cup broth and brandy to pot; boil until reduced to glaze, scraping up browned
bits. Return meat, vegetables, and their juices to pot. Add wine, thyme and tomato paste.
Bring to simmer, stirring occasionally. Cover pot and place in oven. Cook about 2 hours
and 20 minutes. Meanwhile, sauté pearl onions in 1 tablespoon butter until slightly
browned. Remove. Saute mushrooms in remaining 1 tablespoon butter until liquid has
evaporated and mushrooms are golden brown. Add onions and mushrooms to beef, cover,
and cook 45 minutes longer. Serves 8.
