Thai Lemon Shrimp

Shrimp in a lemony sweet chili sauce that is just bursting with flavour!

Servings: makes 4 servings

Prep Time: 15 minutes


Cook Time: 5 minutes
Total Time: 20 minutes

Ingredients

 1 pound shrimp, shelled and deveined


 1/3 cup sweet chili sauce
 1 lemon, juice and zest
 3 kaffir lime leaves, sliced or 1 lime, zest
 1 teaspoon chili sauce or to taste
 1 tablespoon fish sauce
 3 cloves garlic, chopped
 1 teaspoon palm sugar or brown sugar
 1/4 cup coconut milk
 1/4 cup cilantro, chopped

Directions

1. Marinate the shrimp in the sweet chili sauce, lemon juice, lemon zest, kaffir lime leaves, chili sauce,
fish sauce, garlic and sugar for 10 or more minutes.
2. Heat a pan over medium heat.
3. Add the shrimp along with the marinade and the coconut milk and simmer until the shrimp are
cooked, about 2-3 minutes.
4. Remove from heat and mix in the cilantro.

Grilled Tofu
Buy “extra firm” tofu only. Soft tofu will not work.

1. Unpack and press on the tofu to release water. Extra firm tofu may not contain much water.

2. Cut the tofu in 1 inch by 1 inch cubes.

3. Put the tofu cubes in a bowl. Add soy sauce and Caesar salad sauce. Marinate for 30 min.

4. Spray Pam on a grille pan. Preheat over medium heat.

5. Place the tofu cube on the pan and grille 5 min for each side.
Shahi Beef Rezala
Ingredients
Beef medium pieces – 2 kg Beef medium pieces – 1 kg

Soy Bean Oil ½ cup Soy Bean Oil ¼ cup

Ghee ½ cup Ghee ¼ cup

Sour Yogurt 1 cup Sour Yogurt ½ cup

Fried Onion 1 cup Fried Onion ½ cup

Cashew Nut 2 tbsp Cashew Nut 1 tbsp

Onion Paste ¼ cup Onion Paste 1/8 cup

Ginger Paste 2 tsp Ginger Paste ½ tsp

Garlic Paste 1 tsp Garlic Paste ½ tsp

Turmeric powder 1 tsp Turmeric powder ½ tsp

Coriander powder 1 tsp Coriander powder ½ tsp

Jaiphal, zaitri ½ tsp Jaiphal, zaitri 1/4 tsp

Bay leaf 2 Bay leaf 1

Cinnamon 2 Cinnamon 1

Elaichi 3 Elaichi 2

Salt 1 tbsp Salt ½ tbsp

Chili powder ½ tsp Chili powder 1/4 tsp

Kewra water 2 tbsp Kewra water 1 tbsp

Cut fresh onion 1½ cup Cut fresh onion 3/4 cup

Green chilli 5 Green chilli 2

Directions
1. Heat oil then add ghee and heat until melted.
2. Add Bay Leaf, cinnamon, elaichi and fry lightly
3. Add fresh cut onion and fry lightly until it softens. Do not brown.
4. Add ginger, garlic paste and fry lightly
5. Add onion paste
6. Add coriander powder, jaiphal, zaitri powder
7. Add chili powder, turmeric powder and salt
8. Cover and use low-med heat for 5 min. Oil will come up.
9. Add meat, cover and use low-med heat for 15 min. Water will be released.
10. Add 1½ water, cover and use med heat for 40 min. Oil will come up.
11. Blend sour yogurt, fried onion and cashew nut. Add this paste.
12. Add ½ cup water and use med heat for 15 min.
13. Add kewra water and green chilli
14. Cover and low-med heat for 5 min. Done!
Crispy Fried Fish
Ingredients
Fish 4 pieces – 250 gm
Salt ¾ tsp
Turmeric ½ tsp
Arrowroot powder ½ tsp
Corn Flour ½ tsp
Mustard Oil 8 tbsp (100 gm)

Use 1 tsp regular flour instead if you do not have Arrowroot powder and corn flour.

Directions
1. Wash fish. Pat dry thoroughly. Wet fish will be soggy.
2. Mix the masala and coat fish thoroughly.
3. Heat oil until it starts to smoke. Color will change to pale yellow.
4. Gently lower the fish into the oil. Oil should flow freely around the fish.
5. Fry each side for about 3 min.

Leftover Chicken
Ingredients
Chicken (leftover) 500 gm
Onion 2
Ginger paste ½ TBSP
Garlic paste ½ TBSP
Dry red chilli 1
Ground pepper 1 tsp
Oil 1 TBSP

Directions
1. Pour oil in a pan and heat.
2. Add ginger and garlic paste and sauté until raw smell goes.
3. Add red chilli and sauté for 1 MIN.
4. Add onion and sauté until translucent.
5. Add chicken, mix, and sprinkle a little water.
6. Add ground pepper and cook over low heat for 10-15 MIN until meat turns dark.
Aloo Bhaji
Ingredients
Aloo (sliced) 400 gm
Onion 100 gm
Kalo jeera ¼ tsp
Dry red chilli 2
Green chilli 2
Salt 6 gm
Sugar ¼ tsp
Turmeric ¼ tsp
Mustard Oil 40 gm

Directions
1. Pour oil in a pan and heat until smoking gently.
2. Add red chilli.
3. Add kalo jeera.
4. Add potato slices.
5. Add turmeric. Fry under medium high for 2 MIN
6. Add salt.
7. Add sugar. Keep frying for another 4 MIN

Fried Okra (Bhendi)


Ingredients
Okra (sliced) 400 gm
Cumin ½ tsp
Coriander ½ tsp
Chilli powder ½ tsp
Turmeric ¼ tsp
Garlic 3 cloves, chopped finely
Onion 1
Tomato 1
Kalo jeera ½ tsp
Mustard/Veg Oil

Directions
1. Pour oil in a pan and heat until smoking gently.
2. Add onion and fry until translucent and soft. Do not over fry.
3. Add kalo jeera.
4. Add garlic.
5. Add Okra. Fry under medium for 6-8 MIN
6. Add tomato. Fry for another 5 MIN.
7. Add all other spices. Mix and fry for 1 MIN. Serve.
