Recipe: Ginger soy vinigerate


Ingredients:  Soy sauce
 Lemon or lime juice
 Sesame oil
 Ginger
 Sugar or panela (or honey)
 Garlic (optional)
 Chilli (optional)

Instructions 1. Mix the soy sauce, lime juice and sugar in a bowl.
: 2. Smash or mince the ginger, garlic and chilli, then add this to
the liquid mixture.

Tips:  The ratio of soy sauce to lime juice to sugar depends on


your preference. Start with a little bit of everything, then
keep adding to suit your taste.
 Sesame oil is very strong. You only need to use a little bit.
 Smashing the ginger and garlic brings out more flavour. Add
the liquid from the smashed ginger to the mixture.

Recipe: Sweet-sour-salty-spicy vinigerate


Ingredients:  Fish sauce
 Lemon or lime juice
 Sugar or panela
 Garlic
 Fresh chilli

Instructions 1. Mix the fish sauce, lime juice and sugar in a bowl.
: 2. Smash the garlic and chilli, then add this to the liquid
mixture.

Tips:  Fish sauce is very salty and strong in flavour. Start with a
small amount (less than lime juice).
 The ratio of fish sauce to lime juice to sugar depends on
your preference. Start with a little bit of everything, then
keep adding to suit your taste.
Recipe: Sticky pineapple, cucumber and lettuce salad
Ingredients: For the salad:
 Pineapple (cut into cubes)
 Chilli
 Ginger (finely chopped or minced)
 Garlic (finely chopped or minced) (optional)
 Cucumber (cut into cubes or sliced thinly)
 Lettuce (shredded or sliced thinly)
 Peanuts (toasted and chopped)

For the dressing:


 See ‘Sweet-sour-salty-spicy vinigerate’ recipe.

Instructions 1. Fry or grill the pineapple, ginger, garlic and chilli in a pan
: until the pineapple is sticky and slightly charred. Leave this
aside to cool.
2. Mix pineapple, cucumber and lettuce in a bowl.
3. Add the dressing to the salad mix.
4. Add the peanuts to the salad mix.

Tips:  Use only a bit of oil to fry the pineapple.


 Prepare and set aside the vinigerate. Add it to the salad just
before serving.

Recipe: Watermelon, red onion and arugula salad


Ingredients: For the salad:
 Watermelon
 Arugula
 Red onion (sliced)
 Mint (chopped)
 Firm white cheese, e.g. fetta
 Pine nuts (or chopped almonds) toasted

For the dressing:


 Olive oil
 Salt and pepper
 Dried mixed herbs

Instructions 1. Lightly fry or satuee the red onion in a pan. Leave this aside
: to cool.
2. Cut the watermelon into cubes. Keep the juices to use for
the salad dressing.
3. Mix the watermelon, arugula, fried onion and mint in a
bowl.
4. Add the dressing to the salad mix.

Tips:  Prepare and set aside the salad dressing. Add it to the salad
just before serving.

Recipe: Uchuva, zucchini and lettuce salad


Ingredients: For the salad:
 Uchuva
 Zucchini
 Lettuce (shredded or sliced)
 Pine nuts (or chopped almonds) toasted
 Shaved parmesan cheese (optional)

For the dressing:


 Honey
 Pesto (or just finely minced basil and olive oil)
 Lime juice

Instructions 1. Lightly grill the zucchini. Leave it aside to cool.


: 2. Cut the uchuvas into halves.
3. Mix the uchuvas, zucchini and lettuce in a bowl.
5. Add the dressing to the salad mix.
6. Add the pine nuts and shaved parmesan.

Tips:  Prepare and set aside the salad dressing. Add it to the salad
just before serving.

Recipe: Roasted carrot, apple and lettuce salad


Ingredients: For the salad:
 Carrot (chopped intp cubes)
 Apple (sliced thinly)
 Lettuce (preferably Cos or Roman lettuce)
 Almonds (chopped and toasted)

For the dressing:


 Mayonaise
 Salt and pepper
 Lime juice

Instructions 1. Put carrots into tray with oil and roast in the oven until
: they sticky and slightly charred.
2. Cut the uchuvas into halves.
3. Mix the uchuvas, zucchini and lettuce in a bowl.
4. Add the dressing to the salad mix.

Tips:  Prepare and set aside the salad dressing. Add it to the salad
just before serving.

Recipe: Red cabbage, carrot and apple slaw


Ingredients: For the salad:
 Red cabbage (thinly sliced)
 Carrot (grated or finely sliced into medium length)
 Apple (grated or finely sliced into medium length)
 Red onion (finely sliced)
 Celery (chopped into small pieces) (optional)
 Parsley or mint (chopped)

For the dressing:


 Plain Greek yoghurt (or mayonnaise if you prefer a
creamier dressing)
 Olive oil
 Salt and pepper
 Lime juice

Instructions 1. Mix all ingredients in a bowl


: 2. Add the dressing to the salad mix.

Tips: 

Recipe: Tumeric and lemon grass marinated chicken wings


Ingredients:  Chicken wings

For the marinade:


 Tumeric
 Lemon grass (chopped)
 Chilli
 Salt
 Water

Instructions 1. Mix together tumeric powder, chilli, salt and chopped


: lemon grass.
2. Use a blender to pulse until the lemon grass is as finely
minced as possible.
3. Marinade the chicken wings for 3 hours minimum.

Tips:  When making the lemon grass and tumeric marinade, add
a bit of water so that it can mix in the blender.

Recipe: Soy, ginger and honey marinated chicken wings


Ingredients:  Chicken wings

For the marinade:


 Soy sauce
 Honey
 Garlic (minced)
 Ginger(minced)

Instructions 1. Mix together soy sauce, honey, garlic and ginger


: 2. Marinade the chicken wings for 3 hours minimum.

Tips:  Honey sticks and burns when the chicken is being grilled or
fried. To prevent burning, wrap the chicken in foil and cook
in the oven for a short time before grilling it.
