ABSTRACT

The restaurant is where people pay to sit and eat meals that are cooked and served on the

premises. They are an important factor in the choice of a destination for some tourists. We

have observed that there is an increasing number of tourists in Dumaguete City and we like to

know the impacts it has done in the restaurant establishments here.

This research study aims to know the impacts of tourists to the restaurant businesses here in

Dumaguete City. This study also aims to help and provide information to the various

businesses that caters to tourists in Dumaguete city specifically to the restaurants here in our

city.

This research made use of quantitative method because we collected our data through

questionnaire.The results showed that tourists that visits Dumaguete City has a great effect in

our restaurant businesses here financially and economically.

Chapter I

The Research Problem And The Objectives

I. Background Of The Study

The study focuses on The Impact of the Increasing Number of Tourists to the Restaurant

Business in Dumaguete City. Our topic directly or obviously tells us the purpose of this

research and it is to find out whether it favors them or not. Still, we continue to find out

more about this. The tourists play a significant role in any restaurant business since they

too are one of the reasons why a business is running successfully.

This study will help us understand what the restaurant businesses prioritize or continue to

work towards in order to keep on serving and pleasing foreigners or tourists that aren’t so

familiar with what they currently offer. This study aims to understand what the changes

do the tourists bring to the restaurant business. This will also help us know more about

the perspective of those people working in the restaurant business towards the tourists

they cater from day to day.

It shines a light to Dumaguete’s tourism that we too can compete, offer, cater & serve to

any tourists that comes and go with happy faces just like in any city or province.

II. Statement Of The Problem

We have observed the increasing number of tourists that comes in Dumaguete City for the

past few years. With that, the Food and Beverage industry is clearly affected with this.

That’s when the restaurant businesses comes in and becomes relevant. This is the reason

why we are studying this topic. In connection with that, we have formulated these

following questions: What are the impacts of the increasing number of tourists to the

restaurants in Dumaguete City? Do the restaurants have enough facilities and amenities to

cater the increasing number of tourists?

III. Research Objectives

Our objectives are the following:

 To determine if the tourists affect the sales of a restaurant

 To identify the specific areas in the restaurant for improvement in order to cater

the increasing number of tourists.

 To be able to know the advantages and disadvantages of the increasing number of

tourists.

 To identify the preferred cuisines of guests/tourists.

IV. Hypothesis

H1. The restaurant does not offer good food, facilities, & customer service.

H2. The increasing number of tourists does not affect the sales of the restaurant.

H3. Customer’s experiences & feedbacks do not give positive image to the restaurant.

V. Scope And Limitations Of The Study

Our study aims to find out what are the impacts that comes with the increasing number of

tourists to the restaurant businesses here in Dumaguete City.

Our study also aims to find out what areas are affected with the change that comes with

the tourists.

The researchers limits this study to only 15 restaurants here in Dumaguete City because

of the limited time and also because some of the establishments didn’t accept the survey.

The study conducted covers the following : Gabby’s Bistro, Café Racer, Lantaw, Lab-as,

Harbour City, Jo’s Inato, Don Atilano, Sans Rival, Max’s, Yellow Cab, Honeycomb,

Mooon Café, Hukad, Dong Juan and Casablanca.

VI. Definitions Of Terms

 Business - The practice of making one's living by engaging in commerce. It is the

activity of making one's living or making money by producing or buying and

selling goods or services.

 Cart system - a serving cart for displaying foods to restaurant patrons.

 City - A city is an area in which a large number of people live fairly close together. It

is an inhabited place of greater size, population, or importance than a town or

village.

 Cuisine – a style or method of cooking, especially as characteristics of a particular

country, region, or establishment.

 Establishment – a business organization , public institution, or household.

 Food – any nutritious substance that people or animals eat or drink , or that plants

absorb, in order to maintain life and growth.

 Impact - Have a strong effect or influence on someone or something. It’s also

something that has on a situation, process, or person is

a sudden and powerful effect that it has on them.

 Increasing - Become or make greater in size, amount, intensity, or degree.

 Number - an arithmetical value, expressed by a word, symbol, or figure, representing

a particular quantity and used in counting and making calculations and for

showing order in a series or for identification. It is also a quantity or amount.

 Restaurant - a place where people pay to sit and eat meals that are cooked and served

on the premises in exchange for money.

 Tourists – a group of people who travel or visit a place for pleasure or culture.

I. Related Literature

Tourists affecting the Restaurants

The success of restaurants is closely tied to travel and tourism. Across all dining segments,

about one in every four dollars spent at restaurants comes as a direct result of travel and

tourism.

The effect of travel and tourism is most significant in the fine-dining sector, where it

generates 30 percent of sales. Travel and tourism generate about 19 percent of sales in

quickservice restaurants, and about 15 percent of sales in fast-casual restaurants.

Travel and tourism help the restaurant industry create hundreds of thousands of jobs each

year.

II. Related Studies

Analysis of the Relationship between Tourism and Food Culture

Food tourism studies have emerged in recent decades, focusing on food destination, food

tourists and hygiene issues, using both qualitative and quantitative analyses . Gastronomic

tourists experience a complete sensory experience, especially in terms of flavor, suggesting,

according to Cohen and Avieli , that through food, tourists receive a greater engagement with

the environment where the visit takes place, far from the role of simple observer traditionally

associated with tourist visits. In addition, gastronomy is part of the cultural, social,

environmental, sustainable and economic history of nations and their people. This is because

it reflects a certain lifestyle of the different geographical areas, strengthening traditions in

rural areas and modernity in urban areas, as it is something rooted in their own culture and

tradition , although this implies a constant need for innovation in products and services to

provide greater value and thus achieve greater competitiveness in a given location in relation

to other destinations . Therefore, local and regional food could give added value to the

destination and contribute in this way to the competitiveness of the geographic area , and, in

this sense, many researchers highlight that each country/region/city should promote food as a

central attraction to tourists as dining out and trying national and local cuisines are pleasant

activities for most tourists . In fact, gastronomy involves a transfer of knowledge and

information about the people, culture, traditions and identity of the visited place.

The Role of Food and Culinary Condition in Tourism Industry

From the public perspective food assumes a secondary and minor role in tourism industry

which is evaluated by Tourists words of mouth. Occasionally in these assessments, even the

diversity of globetrotters' viewpoints and their cultural, social and even religious

characteristics are not taken into consideration. In this article various effective techniques for

attracting tourists' attention to Iranian dishes are discussed. Additionally, some attempts made

in different states for achieving desirability of food, its ingredients and delivering problems

from world travelers' view, have been pointed out. The gap between the culinary condition

and tourists' expectations has also been debated.

Restaurants serve a significant and vital role in tourism. Not only they provide tourists with

food, but also they create their experiences. In fact, restaurants are not merely designed for

eating purpose . Foodservice, which plays a supportive role, is key parts of tourism industry.

Flawless performance of restaurants requires deep understanding of customers' demands,

needs and expectations.

Some researchers have studied the effects of food serving quality on the selection of places by

tourists. In theses researches, eating food has been investigated as one of the travelling

motivations and as a factor affecting the selection of restaurants by the passengers.

Chapter III

Research Method and Procedure

I. Research Method

In our research study, we used the Quantitative Method because we collected our data through

our survey questionnaires. We used two forms for our question, the checklist format and

open-ended format. The checklist format because our questionnaires are already in a

structured form. The open-ended format for us to understand better the situation and reasons

behind the answers given from the checklist.

II. Sample Design

In our research study we used non-probability sampling because we are focusing on the

restaurant establishments as our target respondents. We used one of the four kind of the non-

probability sampling which is the purposive or the judgment sampling. We selected the

restaurants who are fit in the purpose of our study. Among the restaurants here in Dumaguete

City we selected 15 restaurant establishments that gave us the data we need for our research

study.

III. Instrumentation/Techniques

The instrument we used to get the data we need is through the survey questionnaire. The

questionnaire we had provided consisted of 13 questions that would help us answer our

objectives.We then disseminated these questionnaires to the fifteen restaurants we selected.

The first part of the questionnaire is Name of the establishment and the years of business here

in Dumaguete City. The second part are the different questions that will give us the answers

for our analization.

IV. Data Gathering Procedure

We formulated our questions basing on our topic on what are the impacts of the increasing

number of tourists bring about to the restaurant establishments. We then randomly distributed

the survey questionnaires to fifteen (15) restaurants in Dumaguete City. We asked a little of

their time to answer our questionnaire but we also prepared ourselves from rejection because

of their busy schedules. Despite the rejection, 15 kind restaurants accommodated us. We then

waited for at least a day for them to answer. After collecting the necessary data, the

researchers tallied and tabulated the data. The information gathered will be used to get the

conclusion of the research.

Interpretation:

By analyzing the data most of the “group” type of tourists are the ones who mostly visits the

restaurants of Dumaguete City next is the “family” type of tourist that usually dines in and

orders in bulk. Then the “solo female” and “solo male” type of tourist are the one’s usually

not seen in the restaurants of Dumaguete City.

Interpretation:

The respondents answered “Yes” to the question “does having foreign tourist an advantage?”

simply because foreign tourists helped them increase their revenue as well as promote their

business to the other tourists. They served as walking advertisers to the establishments.

Interpretation:

The respondents says that their foreign customers are Americans followed by Koreans,

Chinese and Japanese. As they specify there are also a lot of European and Local tourist who

Interpretation:

13 of respondents says that their staffs knows some foreign language in catering foreign

guests and 2 of our respondents says that their staffs doesn't know any foreign languages in

Interpretation:

2 out of 15 of the respondents says that they don't have that enough space in catering a huge

number of tourists. Most of the restaurants in our city can cater big numbers of tourists dining

in their restaurants. Having a larger dining area is very important because as you can see the

number of tourist has been growing for the past few years. This is an essential aspect in the

Interpretation:

1out o 15 of our respondents says that tourist doesn't have any positive effects in their

restaurants because most of their customers are local people from our City. Then most of the

respondents says that they have positive effects to them, this simply means that most of the

restaurants because tourists can increase their revenue at the same time promote their business

globally.

Most of our respondents says that their non smoking dining area is one of their facilities that

can attract tourists next is the WiFi service followed by the smoking dining area. Some of

tourists. In this way the establishments will know what and how to improve their food and

Conclusion and Recommendation

I. Conclusion

The purpose of our study is to know what are the impacts of the growing number of tourists in

Dumaguete City to the restaurant establishments, if it really have affected them from the past

few years. Through our results we have found out that tourists really had an impact to

Dumaguete City’s restaurant establishments. It revealed that the tourists have some positive

impacts to them. One of it are the boost of sales of their restaurants. It also helps them

promote their restaurants internationally. With the positive feedbacks from the tourists it

simply says that the service and product of the restaurants here in Dumaguete can compete to

other businesses globally. The restaurants adapted ways to cater the growing numbers of

tourists. Like for the foreign tourists the restaurant staffs were trained well and knows how to

converse with them by knowing other foreign languages since communication is one of the

most important attribute to know in catering tourists. They also have provided a much bigger

space for the tourists. They provided some amenities/facilities to attract tourists. Restaurants

here in Dumaguete also offers different types of cuisines like American, European, Mexican,

Japanese, Chinese and Filipino cuisine.

II. Recommendation

We recommend that restaurant businesses should always be flexible to change and

continually strive to be better for them to cater the locals and tourists. They should always

prioritize the customers, tourists or not. Foods, Facilities, Services & etc. should always be a

working progress for local & tourist customers to leave with happy faces and stomachs and

for them to keep coming back.
