1. Mix the rice flour, coconut, sugar, vanilla powder and salt.
If using roasted rice flour: add hot water gradually (so that the dough comes
together), stirring until blended.
2. Add brown sugar into the dough, stir again evenly.
3. Compact and shape the dough mix by clenching it in your fist firmly, so that the cake
is formed and does not easily fall apart.
4. Itak Gurgur is ready to be served along with tea or coffee.
