Abstract Sucrose is a disaccharide that does not have free anomeric carbons, so it lacks reducing power and the reaction with
Fehling's liquor is negative. However, in the presence of HCl and hot, sucrose is hydrolyzed, that is, it incorporates a molecule of
water and breaks down into the monosaccharides that form it, glucose and fructose, which are themselves reducing. The proof that
the hydrolysis has been verified is done with the Fehling liquor and, if the result is positive, a red precipitate will appear. In this
laboratory the amount of total sugars for a peach juice was determined, corresponding to our results is 13.74% vs the 15% found in
the nutritional information table of the juice. Reducing sugars are those that have a free carbon in their structure and can reduce,
under certain conditions, copper salts. On the other hand, non-reducing sugars are those that are bound by glycosidic bonds of the
Alpha or Beta type.
4. Conclusiones
El método de Lane y Eynon puede llegar a tener
desventajas si no es realizado correctamente, el Cu2O
formado puede sr nuevamente oxidado por el O2 del
Fig.No.3 Información Nutricional de la muestra de jugo aire, quedando azul otra vez y con un tiempo
prolongado de calentamiento podría haber
descomposición de los azúcares.
Después de analizar los resultados de azúcares totales
obtenidos de la muestra de jugo, podemos concluir que
en efecto posee el porcentaje que manifiesta en su
información nutricional.
A pesar de poseer una diferencia de 1.26% con nuestros
resultados, ésta puede deberse a errores en las
diluciones o titulaciones no precisas.
