COMPREHENSIVE CONSULTANCY REPORT FOR HERITAGE HOTEL-KATITO

Kindly find the attached report for the Hotel:

1. RECEPTION AREA
The hotel lacks reception area, and to the Hotel, this is a key department which should not miss
in any hotel, this is the area where the booking, inquiries, Hotel telephone and all hotel cash are
deposited.
The area I was shown is not very conducive since it’s next to the septic tank. I suggest that a new
place next to the entrance should be built for the said department.

2. RESTAUANT.
I realized that, there is only bar being used as a restaurant, this is not right since there are some
families who may wish to have food with their children, yet children are not allowed to sit at the
bar, also there are some Christians who may not wish to sit next to where alcohol is sold yet all
are hotel customers
RECOMMENDATIONS-I suggests that the guest launch should be converted to restaurant come
conference hall.
The restaurant staff are not trained and have no any idea about the service, the number is
good but thorough training should be done to make them understand their duties.
Restaurant should operate until late hours, waiters should work in shifts.

3. KITCHEN
The Kitchen only have 1 staff, Deep freeze, fryers are missing, the kitchen should be well
equipped and properly stocked, there after close monitoring should be done by the manager to
ensure maximum profit is achieved.
The kitchen should operate until late hours; therefore the staff should work in shifts.

4. HOUSEKEEPING
The department needs close supervision and professionalism, the staff working there must have
some technical knowhow on how the rooms should be cleaned, when to change the bed sheets
and pillow cases, dusting of rooms etc.
The staff here is over worked since she is only 1 person doing all the rooms and doing the
laundry, what will follow to this is short cuts which latter may affect the appearance of the room
and even bed sheets,

5.BAR
The stock level is encouraging but more needs to be done.A bar man should atleast know the
types of glasses and the drinks served in them,he should also know how to make atleast 5 types
of cocktail juices.
GENERAL REPORT
1. The building was done without earthing-this is very dangerous and it can cause a lot of
damages even death can occur. This should be treated as a matter of urgency

2.The hotel should have a store, then bulk purchase should be done and kept in the store, things
like tissue papers, soaps. For food stuff suppliers should be brought on board and payments can
be done maybe twice a month. This will control daily expenses and the daily sales should go to
bank.

3. The hotel should have its own account-this is because some organizations don’t write
cheques on personal names eg world vision

5. The staff must be in uniforms at all times while on duty.

Otherwise let’s leave it at this point, revert back to me.
