DEMAND ANALYSIS

The products and the pricing for the Kai-Vegan Restaurant and the vegan products it

offers is based on the results of the survey and interview shown in Table conducted to the

respondents who are 35 years and above, middle class income earners who earns at least ₱40,000

a month and living in General Santos City.

Table 1.1 shows the projected annual demand based on the results of the survey

conducted to 100 respondents. Furthermore, the next paragraph will explain how the researchers

came up with the daily, monthly and annual sales.


Daily Sales

The researchers considered the following information derived from the survey conducted

in calculating the projected sales. Out of the 100 respondents, 82% eat vegetables and only 11%

have dined-in in a vegan restaurant. These percentages projected on the total population would

result to 12,057 who are vegetable eaters and have dined-in a vegan restaurant.

Since it is very unrealistic to assume that all of these population of 12,057 goes to a

vegan restaurant frequently on a daily basis given that there are only 2 competitors here in

General Santos City, the researchers computed the weighted average daily foot traffic . The

12,057 goers is multiplied by two taking into account that there are generally two adults in a

household, a mother and a father. The survey showed that 85% of the respondents want to dine-

in in a vegan restaurant. Taking this percentage into account, it gives 20,498 total target market

divided by 30 (days in a month), the researchers approximated that a total of 683 population goes

to a vegan restaurant on a daily basis.

Out of these 683 populations, the direct competitors already serve a total of 220

customers shown in Table 1.2 leaving a total of 463 vegetable eaters that are not currently being

served by the existing establishments or direct competitors. The remaining 463 vegetable eaters

serve as the prospective daily customers for its first year.

Out of the 463 prospective daily customers, 343 or 74% are walk-in customers while the

remaining 120 or 26% are the customers who want to avail the meal plan. The percentages used

are based on the results of the survey. Since the number of customers is too large for a beginner

restaurant, the researchers set the market share or target customers to be served to 80 while 50

customers for the meal-plan.


For the vegan restaurant, out of the 80 customers, 15% wants to avail viands, 20% wants

to avail value meals, 15% wants to avail pastas 14% wants to avail burgers and 35% wants to

avail juice and teas. The percentages taken into account are based on the results of the survey.

For the meal plan, out of the 50 customers, 73% wants to avail the 7-day meal plan while

27% wants to avail the 22-day meal plan.

For the grocery haul, the projected daily sales are computed in the same way with the

restaurant. Therefore, out of the 80 customers , 13% wants to avail the vegan frozen food, 7%

respectively for vegan powder and natural sweetener,5% for sauces and dressings,8%

respectively for butter & cheese and spreads , 6% for plant based cream and milk, 14% for

chocolates, 10% respectively for juice and snacks , and 12% for ice cream.

Since there are two direct competitors for the Vegan restaurant, the researchers had the

chance to interview its competitor regarding its average number of customers each day and those

information are used as input in determining its market share. But for the Vegan Grocery Haul,

there are no competitors so far for this venture and so, 100% of the market are still unoccupied

by the competitors.

The total market share is computed based on the weighted average daily customers of the
target market, e.g. 463

According to the survey conducted and the information gathered, 47.5% of the target market is
already being supplied by the two direct competitors, leaving the 52.5% uncatered. The percentage not
served by these existing establishments constitutes the open market.

Demand- Supply Analysis

Based on the interview and survey conducted, Vegan restaurant’s level of demand on the

target market supplied by its direct competitors is estimated to be 47.5% of the total population
of the respondents who would like to avail the product and services to be offered and of the

78.74% of the open market, it was estimated that 85% are willing to patronize the Vegan resto.

Aspect such as the change in the taste and preferences of the target market and competitor’s

entry may have an effect on estimate.

For the Vegan grocery haul and given the considerations stated in the prior page, the

researcher determined a 100% unoccupied open market.
