IIBN – Executive Director Part-time: 2008-2014; Full-time: 2015 – Present

IIBN is a global, not for profit, organisation that facilitates connectivity by and between Irish
entrepreneurs in London, Dublin and New York with a view to identifying and exploiting
business opportunities around the world. IIBN recently merged with iCham to now offer
connectivity with Central Eastern Europe.
 Responsible for chapter development and global strategic planning, including liaising
with CEO and Board’s of Directors in each chapter city.
 Business Development – responsible for sourcing, establishing and building symbiotic
relationships with potential and existing sponsors and partners.
 Member Recruitment and Development – responsible for targeting and soliciting new
members and identifying offerings to sustain existing individual and corporate members.
 Event management – establish themes and execute visions for over 30 events per year,
including speaker and panel events, corporate presentations, and networking
opportunities.
 Mentorship Programs – implemented, developed and advanced mentor programs across
three cities and various executive levels.
 Communication and Marketing – manage website; prepare newsletters and PR materials
with local and global applicability.
 Finance – prepare all accounting and budgeting reports.
 Was a founding member of IIBN NY, served on the Board of Directors from 2008-2014.

dwellers.
Burger Joint - General Manager (NY) 2012 – 2014
 Successfully conceived and launched the Burger Joint Restaurant, including: sourced
premises; successfully negotiated favorable lease terms and rent; oversaw remodeling and
design of restaurant and bar; secured all health/safety, food, and liquor licenses; hired all
staff; sourced food, beverages/liquor and restaurant equipment.
 Successfully managed $300,000 budget by accurate forecasts, waste reduction,
conscientious purchasing, and cost-effective operations procedures. Secured financial
success within 1 year by improving food cost margins by 16% (42% to 26%) and labour
costs by 10%.
 Developed and implemented menus and price strategies.
 Responsible for business development – introduced events and parties, and art selling
programs, and worked with many local associations, businesses and groups to increase
profile.
 Human Resources – responsible for all recruitment, training, and management of staff;
developed and implemented all policies and procedures for governance and compliance.
 Customer Relations – responsible for building and maintaining customer relationships; press
releases, active social media campaigns; and TV coverage (featured in ABC TV Programme

Le Parker Meridien Hotel (NY)

Le Parker Meridien Hotel is a 4-Star hotel in New York city with 729 Room and 500+
employees. Starting in their Management Rotation Training Programme in 1997, I ultimately
held a number of management roles in the hotel.

Restaurant Manager 2001 - 2005

 Managed the hotel’s 102 seat restaurant (weekday covers: 300; weekend covers 600+)
 Developed competitive profitable pricing strategies; coordinated with chef on menu design.
 Developed procedures for ongoing service improvements to increase covers and
satisfaction.
 Successfully managed and motivated a staff of 17 union affiliated employees.
 Spearheaded and managed the design and opening of the Burger Joint in the hotel.
 Managed the daily operations of the Burger Joint that served 1000+ burgers per daily
 Developed and documented all Burger Joint processes/procedures, and training manuals.
