I've been living in Thailand with my family for the last three years, and I've lately been wondering
about something.
A lot of food here is cooked in a lot of oil, and I'm constantly seeing smoke (definitely not steam)
coming from woks as they cook whatever I'm about to eat. I basically understand that oil polymerises
(turns to plastic) at high temperatures, and that that is carcinogenic, but I'm not sure just HOW bad it
is.
I mean, this whole country seems to run on food cooked in smoking oil, and Thailand's cancer rates
don't seem to be particularly high (they're not in the top 50 list).
From what I've seen the main oil used here is palm, I think followed by soy.
Does anyone have any ideas on how to quantify the risk? Do I need to worry about it?
