History of Vegetables

The vegetables grown included onions, garlic,


cabbages, melons, and lentils. In Ancient Rome, a
thick porridge was made of emmer wheat or
beans, accompanied by green vegetables but little
meat, and fish was not esteemed.

Definition and Terms


Vegetables are plants such as cabbages, potatoes,
and onions which you can cook and eat.

A good general diet should include plenty of fresh


vegetables.

Mushroom and Ricotta Bruschetta

Ingredients :

 1 cup ricotta cheese


 1 egg
 1 lemon, zested
 1/2 teaspoon salt
 1 pinch freshly ground black pepper, or to taste
 1 pinch red pepper flakes, or to taste
 4 slices French bread, toasted
 1 tablespoon olive oil
 1 tablespoon butter

History of Seafood
The harvesting and consuming of
seafoods are ancient practices that may
date back to at least the Upper
Paleolithic period which dates to between
50,000 and 10,000 years ago.[1] Isotopic
analysis of the skeletal remains of
Tianyuan man, a 40,000-year-old modern
human from eastern Asia, has shown that
he regularly consumed freshwater
fish.[2][3] Archaeology features such as
shell middens,[4] discarded fish bones
and cave paintings show that sea foods
were important for survival and consumed
in significant quantities .

Classification
1. Lobster (bogavante) has the dark blue body with
long whiskers and the claws up to 45 cm long. This
is one of the most delicious marine products that
can be boiled or grilled with the addition of
different spices.
2. Norwegian lobster (cigalo) has an elongated shape.
Its body is orange or red. The lobster has 2 huge
claws of different size. Its length is from 12 to 20
cm. The lobster’s back is a delicacy, but its claws
are inedible.
3. Shrimp (gamba) has the length of 2-30 cm. It is
common in the seas all over the world. Shrimps are
a low-calorie delicacy, rich in protein and calcium.
4. Crayfish (langosta) is a bright orange or pink
crustacean, living in the North Sea of Atlantic. Its
meat is considered a delicacy.
5. Prawn (langostina) has a long head and short
whiskers, elongated light-grey body. Its size is
from 12 to 20 cm. Prawns are used for making
soups, paella, curry and other dishes.

Ingredients :
 3 cloves garlic, minced

 1/3 cup olive oil

 1/4 cup tomato sauce

 2 tablespoons red wine vinegar

 2 tablespoons chopped fresh basil

 1/2 teaspoon salt

 1/4 teaspoon cayenne pepper

 2 pounds fresh shrimp, peeled and deveined
