ICKE PA PIE
Who needs a pot to make pot pie?
Nobody. Grab a skillet and pop
open the secret ingredient – beer

WHAT YOU’LL NEED


• 2 tsp canola oil
• 2 boneless skinless
chicken breasts, cubed
• 2 leeks (dark-green parts
discarded), chopped
and rinsed
• 3 carrots, diced
• 1 cup frozen peas
• 1 cup beer
• 1 cup chicken stock
• 3 Tbsp flour
• 2 sprigs fresh rosemary
(leaves only), finely chopped
• 1 sheet puff pastry, thawed

WHAT TO DO
1/ In a large cast-iron pan on
medium-high, heat 1 tsp oil.
Add the chicken and brown,
8-10 minutes. Move the
meat to a plate.
2/ Preheat the oven to 180°C.
In the same pan, heat 1 tsp
oil. Add the leeks, carrots
and peas. Cook until the
leeks soften, 3 minutes or so.
Add the beer and stock and
bring to a boil; then drop the
heat to medium-low. Stir in the
flour. Add the rosemary and meat
and cook till thick, about 5 minutes.

suggests that you need to lift lighter and rest
longer to really pack on size.

five-minute rest periods produced the
greatest overall rep output in those lifting
weights at 50 per cent of their 1RM. The
study, published in the Journal of Human
Kinetics, found that a recovery time of 60
seconds – or even up to three minutes –
wasn’t enough to fully recharge.
But that doesn’t mean restful sessions
need to overrun. Longer rests will allow you
to lift effectively in the 20-25 rep range,
fitting in the same volume of work into fewer
sets. Essentially, a scientific rejig of your
current workout will see you rest more and
yet build a better body.
Extended rest periods are not an excuse
to exercise your thumbs on Instagram,
however. Offset your pursuit of ‘the pump’
by spending the intervening five minutes
working on your mobility with our muscle-
loosening exercises (below). Match the

At 88, Dr Bruce Ames knows a thing or

Arguably the most proliic nutrition expert
alive, he’s a senior scientist at a major
hospital and has authored more than 550
academic papers. He’s sipping espresso
in his oice as he summarises decades of
research. “Human beings need about 30
vitamins and minerals in their diet,” he
says. “Most of us are starving for some
vitamins and minerals due to poor diet,
and aging prematurely as a result.” But
it’s hard to eat healthfully in the modern

look ahead and plot accordingly. Bouris
insists that it’s vital to stay informed of what
the cutting-edge practitioners in your
industry are doing both locally and overseas.
Similarly, stay abreast of emerging trends
and how the expectations of the marketplace
are changing.
“You’ve got to be prepared,” Bouris says.
“Don’t let changes take advantage of you.
You’ve got to take advantage of the changes.”

TIME YOUR RUN


You’ve had your light-bulb moment. You’re
now armed with a game-changing idea that’ll
enable you to tell your boss to stick it and then
make you ludicrously rich. Yet before you
launch yourself into your new business to
become an all-conquering tycoon, Bouris
offers a cautionary word of advice.
“Don’t leave your job. Start your business
after work,” he says. “You’ve got to be aware
of the statistics. The Elon Musks and the Mark
Zuckerbergs - they’re one in 10 million. So the
odds are against you from the start. That’s
fine - still back yourself. But what those odds
tell you is that in your risk-management
process, try to avoid giving away your day job
because you’ll need that cash flow.”
Start off by developing your business at

But this could be life-changing. Or work out a
part-time arrangement with your employer
that’ll give you a couple of free days to
concentrate on your side project.
Your job doesn’t just provide a regular
income stream either, says Bouris. Keep your

A few years back, Bouris took
part in a project called
UberPITCH. Ten thousand people
applied for the chance to catch
an Uber with Bouris and wow him
with their business idea. Bouris
heard 57 pitches in 24 hours.
Very few of them were any good.
“People don’t actually know how
to pitch,” he says. Here’s your
guide to pitching like a pro.

For a moment, it looked like it was going to


be a short day.
An hour earlier Matt ‘Wilko’ Wilkinson,
Byron Bay local and one of the world’s best
surfers, arrived at my hotel in his Holden
Colorado Crew Cab. With coffee and towels in
the cab and surfboards and wetsuits in the tray,
the plan was to spend the day touring some of
Wilko’s favourite local breaks. In the water, he
would teach me how to get up on a board; in the
car I’d get a sense of the man.
I learn something about Wilko five minutes
in, when he says he’s “psyched” to spend the
day with me, a rank surf-beginner and
complete stranger. The funny thing is that it
appears he means it. I don’t think Wilko has too
many bad days.
