SUMMARY
E v a p o r a t o r s using M e c h a n i c a l Vapor R e c o m p r e s s i o n ( M V R )
have b e e n o p e r a t i n g s u c c e s s f u l l y in v a r i o u s food i n d u s t r i e s f o r s e v e r a l
y e a r s . Growing c o n c e r n o v e r f u e l a v a i l a b i l i t y a n d r i s i n g e n e r g y c o s t s
h a s c r e a t e d a n i n t e r e s t in the f e a s i b i l i t y of applying t h i s technology t o
c i t r u s processing. T h e r e a r e s e v e r a l p r o b l e m s , however, inherent t o
c o n c e n t r a t i n g o r a n g e j u i c e , which m a k e t h e e c o n o m i c a l a p p l i c a t i o n of
MVX e v a p o r a t i o n difficult. T h e s e include t h e s h o r t p r o c e s s i n g s e a s o n ,
a p p r e c i a b l e boiling point r i s e of t h e c o n c e n t r a t e d j u i c e , a n d t h e q u a l i t y
p r o b l e m s a s s o c i a t e d with long r e s i d e n c e t i m e s a n d high t e m p e r a t u r e s .

One p o s s i b l e a p p r o a c h i s t o o p e r a t e t h e c o m p r e s s o r u n d e r v a c c u m ,
u s e the MVR unit a s a p r e c o n c e n t r a t o r , a n d f i n i s h t h e c o n c e n t r a t i o n
in a s t a n d a r d m u l t i p l e - e f f e c t e v a p o r a t o r .
Two v e r s i o n s of t h i s s y s t e m , e a c h with a d i f f e r e n t p r e -
c o n c e n t r a t i o n l e v e l , w e r e c o m p a r e d t o T A S T E e v a p o r a t o r s . An
a n a l y s i s s h o w e d t h a t if the e c o n o m y r a t i o , pounds of w a t e r e v a p o r -
a t e d p e r pound of s t e a m , f o r t h e TASTE e v a p o r a t o r w a s g r e a t e r
than 3. 5, t h e n t h e p a y b a c k p e r i o d f o r an MVR s y s t e m would b e
g r e a t e r than 6 y e a r s . A s the e c o n o m y r a t i o f o r t h e TASTE e v a p o r -
a t o r d e c r e a s e s , t h e p a y b a c k f o r t h e MVR s y s t e m i m p r o v e s .
INTRODUCTION
-
S i n c e 1976, m a n y v e n d o r s have b e e n a c t i v e l y m a r k e t i n g
M e c h a n i c a l Vapor R e c o m p r e s s i o n ( M V R ) e v a p o r a t o r s in t h e food
p r o c e s s i n g i n d u s t r y . MVK u n i t s a r e u s e d f o r t h e high s o l i d s con-
c e n t r a t i o n of whey, s k i m m i l k , a n d d i s t i l l e r y p r o d u c t s a s w e l l a s
in the pulp a n d p a p e r a n d c h e m i c a l i n d u s t r i e s . T h e a d v a n c e s in
c o m p r e s s o r technologies and operating cost savings have been t h e
p r i m a r y driving f o r c e s toward acceptance by s o m e food p r o c e s s o r s .
The MVR u n i t s in e a c h c a s e m u s t b e c o m p a r e d with t h e o p e r a t i n g
c o s t s a n d i n v e s t m e n t f o r m u l t i p l e - e f f e c t e v a p o r a t o r s a n d , in s o m e
c a s e s , membrane concentration systems.
T h e p r i m a r y r e a s o n s f o r i n s t a l l i n g M V K s y s t e m s include
f a v o r a b l e e c o n o m i c s a n d c o n c e r n s o v e r the f u t u r e a v a i l a b i l i t y of
f o s s i l f u e l s . T h e p r i m a r y o b j e c t i o n s u s u a l l y include c o n c e r n s
about t h e o p e r a t i o n a n d m a i n t e n a n c e of t h e c o m p r e s s o r .
In o r d e r t o a s s e s s i t s t r u e p o t e n t i a l , t h e r e f o r e , MVR
m u s t b e e v a l u a t e d f o r e a c h p r o c e s s . Although t h e e v a l u a t i o n of
o r d e r -of - m a g n i t u d e e c o n o m i c s a n d s i z i n g of c o m p r e s s o r s i s not
difficult, t h e a p p l i c a t i o n of MVR t o c i t r u s p r o c e s s i n g m u s t b e
e v a l u a t e d u l t i m a t e l y by v e n d o r s a n d t h e r e a f t e r f i e l d t e s t e d . The
ECONOMICS
T h e following a s s u m p t i o n s w e r e u s e d a s the b a s i s f o r
e v a l u a t i o n of MVR s y s t e m s :
I n v e s t m e n t Cost: e q u a l t o the c o s t of a m u l t i p l e
e f f e c t TASTE e v a p o r a t o r p l u s t o t a l i n s t a l l e d c o s t s

MVR e v a p o r a t o r s u s u a l l y a r e m o r e e n e r g y e f f i c i e n t t h a n
m u l t i p l e - e f f e c t units f o r two r e a s o n s . All of t h e w a t e r v a p o r f r o m
the evaporator i s c o m p r e s s e d and reused to concentrate the feed,
a n d a p p r o x i m a t e l y 9 5 t o 9 8 p e r c e n t of t h e e l e c t r i c i t y s u p p l i e d t o
the c o m p r e s s o r i s t r a n s f e r r e d a s t h e r m a l energy to the compressed
v a p o r s . T h e b e s t a p p l i c a t i o n s f o r MVR o c c u r u n d e r t h e following
conditions:

b e c o m e s s u p e r h e a t e d , but i d e a l l y the e n t r o p y of t h e v a p o r r e m a i n s
constant. S i n c e t h e v a p o r i s being c o m p r e s s e d m e c h a n i c a l l y , a d d i t i o n -
a l thermal energy i s added to the compressed vapor to further increase
the vapor t e m p e r a t u r e .

COMPRESSOR COSTS
C o m p r e s s o r c o s t i s b a s e d p r i m a r i l y on t h e v o l u m e t r i c
flow r a t e of t h e v a p o r , t h e c o m p r e s s i o n r a t i o , t h e d r i v e , a n d
auxiliary controls. T h e capital c o s t s for c o m p r e s s o r s , a s a function
of i n l e t v o l u m e t r i c flow r a t e , a r e shown in F i g u r e 2. T o t a l i n s t a l l e d
i n l ~ e s t m e n tf o r c o m p r e s s o r s i s 1 5 0 t o 200 p e r c e n t g r e a t e r t h a n h a r d -
w a r e c o s t s . F o r e x a m p l e , a t a m a s s flow r a t e of 40, 000 l b s / h r w a t e r

x 50, 000 / l o , 000 l b s / h r ) . If the f o u r - e f f e c t unit i s c o n v e r t e d to a
f i v e - e f f e c t s y s t e m with a n economy r a t i o of 3. 5, the a n n u a l s t e a m
c o s t would b e c o m e $150, 000. T h e r e f o r e , the a n n u a l s a v i n g s would
be $60, 000 when the s t e a m c o s t i s $ 3 . 50 p e r 1000 l b s .

A s c h e m a t i c of a n MVR s y s t e m t h a t p r o d u c e s a 20° B r i x
p r o d u c t i s shown in F i g u r e 6. The o p e r a t i n g conditions a n d
m a t e r i a l b a l a n c e f o r the 20° B r i x unit i s shown in Table 3 f o r a
40, 000 l b s / h r unit. Under t h e s e conditions, t h e s u c t i o n p r e s s u r e
t o the c o m p r e s s o r i s held a t 7 p s i a while the d i s c h a r g e p r e s s u r e i s
10. 5 psia. T h e f i n a l c o n c e n t r a t i o n f o r p r o d u c t is c o m p l e t e d using a
t h r e e - e f f e c t , TASTE e v a p o r a t o r . The m a k e - u p s t e a m r e q u i r e d t o
i n c r e a s e t h e f e e d t e m p e r a t u r e to 195O F i s 360 l b s / h r . The s t e a m
r e q u i r e d t o a c h i e v e a c o n c e n t r a t e of 60° B r i x i s 7, 030 l b / h r .
A s u m m a r y of the s p e c i f i c a t i o n s a n d utility r e q u i r e m e n t s
for the MVR p r e c o n c e n t r a t o r i s shown in T a b l e 5. T h e s t e a m r e -
q u i r e m e n t s f o r p r e h e a t i n g the feed to 1 9 5 O ~a n d f o r final c o n c e n t r a t i o n
of the juice t o 60° B r i x a l s o a r e shown. T h e s e v a l u e s w e r e u s e d to
c o m p a r e the e c o n o m i c s of f o u r - a n d five-effect TASTE e v a p o r a t o r s
with the MVR s y s t e m s .
