hops and yeast. He identified hops as a female flower cone of the vine Humulus Lupulus. Hops provide bitterness and flavor to beer. Troy then took us through a brief description of how beer is made. These steps include the malting of the grain and then mashing the result in water; sparging the mash with hot water to producesweet wort which is then boiled with hops. The mixture is then cooled, oxygenated and fermented by adding yeast. The fermentation period is variable but averages ten to fourteen days. Responding to a question, Troy stated that beer is often drunk too cold. Lager should be around 45 degrees F and British Ale at around 60 degrees F. Troy then reviewed the 23 different style categories of beer. He went on to identify how beers are judged in the areas of aroma, appearance, flavor, mouthfeel and finishing with an overall impression. Descriptors of beer were also identified including words like musty, yeasty, grassy and estery. There were many questions from the audience that enjoyed Troys beer tasting of stout and German wheat beer. Thank you, Troy, for an enjoyable program.
