marks the 10th anniver-
sary of the terror attacks
that took place in New York
City, Pennsylvania and Wash-
ington, D.C. by extremists. As
most people know, on that day
several planes were hijacked by
terrorists and were purposely
crashed into targeted areas
across the country. The most
extensive destruction took
place at the World Trade Cen-
ter's "Twin Towers" and at the
Pentagon building in Washing-
ton D.C. Nearly 3,500 people
lost their lives on September
11, including hundreds of fire-
fighters who
entered the
towers in re-
sponse to the
attack. Many
other first re-
s p o n d e r s
have subse-
quently fallen
ill or died due
to respiratory
illnesses from
i n h a l i n g
toxic fumes
and smoke at Ground Zero. For
the last several years, rebuild-
ing efforts have been underway
in NYC. As the nation pre-
pares to com-
memorate the
tenth anniver-
sary of the at-
tacks, the
Ground Zero
memorial plaza
has nearly been
completed in
time for re-
me mb r a n c e
events. Two wa-

ts hard to believe its been
ten years since September
11, 2001. On one hand, it
seems as though it was just yes-
terday. On the other, it seems
like it was absolutely forever
ago. It has a strange abstract
quality to it, almost as if it hap-
pened in another world or an-
other dimension; realistic and
devastating, yes, but less and
less tangible as the years go by.
As much as I hate to admit it,
even my memory dulls a bit
when I think about that day
It was my second week of
Junior High. I was twelve and I
had never heard of a terrorist
before. In fact, I remember
thinking that the news anchors
were just pronouncing
tourists weird. At my age, I
was at an awkward crossroads
between awareness and confu-
sion. My parents came and
picked me up from school
shortly after the attack and ex-
plained to me what had hap-
pened. We spent the rest of the
day in front of the television. I
didnt fully understand what
was going on, and I think thats
why I have a fuzzy memory of
that day. But what I do remem-
ber quite clearly was the days
following the attacks.
Flags, patriotic songs,
neighbors helping neighbors,
insane national pride. For those
few days and weeks following
the attack, it didnt matter if
you were a Republican or a De-
mocrat. It didnt matter what
tax bracket you were in or if you
owned a business. You were an
American; the son or daughter
of a wounded country. Though
we were all affected individu-
ally, we were all affected to-
gether as a country. That
national pride brought us to-
gether in a way that seems so
foreign today, just ten years
later.
But what changed over
these ten years? Have we just
lost sight of what is important?

ast week, my family and
I rented a nice $1.75
million home on the
beach in Manasquan. As a
general rule, the Charnet fam-
ily likes to celebrate the last
days of summer vacation at a
special location. This year, my
wife Terry picked the location
close to home in Manasquan,
NJ. Though real estate prices
have come down a great deal,
summer ocean rental rates
have remained high and that
is one of my many reasons for
not wanting to vacation at the
NJ shore. My wife and her
family spent every summer at
the NJ shore, where my family
went to the east coast of
Florida in the winters. Our
family destination was the in-
tercostal waterway of Ft. Laud-
erdale when it was cold in NJ.
In the summers, if Terry and
her family were not at the
shore, they were up the pond
in Rockaway, NJ and my fam-
ily had a circular 22 foot above
ground pool that was great to
create a whirlpool in with all
of our friends.
So, you can see, one
minor area of friction in my
marriage is whether or not to
go to the NJ shore, spending
many thousands of dollars in
rental fees each year, support-
ing the NJ shore economy
paying $10.00 for a bologna
sandwich and a coke for one
son and another $10.00 for
two slices of pizza and a root
beer for the other. Lets not
forget the $20.00 per half hour
in the arcade to win a bunch
of tickets to trade for a bunch
of unneeded plastic crap. My
wife says going to the NJ shore
is a family tradition; now, re-
membering my profession as a
financial advisor and a retire-
ment & estate planning spe-
cialist, wouldnt that money
be better invested in the stock
and bond market or in build-
ing up a kitty to secure a down
payment for my kids first
home purchase, their wed-
dings or college education? Its
hard to compete with your
wifes family tradition the-
ory, even when logic and em-
pirical evidence exists in
abundance because shes my
wife and a happy wife makes
a happy life!
On our fourth day at the
shore and during a visit from
my sister, her husband and
their 14 month old daughter,
the house started rocking back
and forth, then up and down
for just under a minute. I im-
mediately realized that we
were experiencing an earth-
quake and reached for my
phone to look up Manasquan,
NJ earthquake. The search
revealed an earthquake in VA
with the shock wave reaching
up as high as Maine. I quickly
needled my wife on another

Earthquakes,
hurricanes
and rainbows

reason not to come to the NJ
shore. Two doors in the house
never closed properly again
and the owner of the home
lives in earthquake prone Cal-
ifornia, isnt that ironic. Next
we were informed by the TV
news anchorman interrupting
the earthquake report that
Hurricane Irene was due to hit
the Atlantic coast in North
Carolina making its way north
and right through the NJ
shore. What about that
honey, I asked sarcastically.
Terry ignored me saying its a
long way away and moving at
12 mph and anything could
happen before reaching NC,
let alone NJ. I said, Well
see. Over the next two days
the surf got rougher and the
distance from the front door to
the ocean got much shorter.
My NJ shore loving wife while
boogie-boarding and denying
her age, was slammed down
into the sand by the storm fu-
eled waves, severely sprained
her right wrist and ate some
sand as her front tooth went
through her bottom lip. I did-
nt have the heart at that time
to ask her about the NJ shore
and family traditions; Id save
that for later.
Later that day, as the hur-
ricane approached and the
evacuation order was given by
the governor, I was thinking
about the rental agreement
and the refund we were enti-
tled to if an emergency evacu-
ation order was given (the
only way to get a refund I
might add), Terry starts yelling
from the third floor balcony,
Rainbow, Rainbow, Rain-
bow!!! Well, shore enough
two rainbows appeared side by
side, starting and ending on
the ocean; two complete 180
degree rainbows for everyone
to take delight in witnessing.
My wife was chanting to
everyone with childlike en-
thusiasm to look overhead at
the rainbows and people came
running out of their homes to
drink in this magical sight.
After about 45 minutes, the
rainbows disappeared and the
reality of road closures and
being enveloped by the ocean
got my 2 younger boys and our
daughter quickly into pack-up
mode. We left Manasquan 2
hours later and one hour and
5 minutes after that we were
home in Wayne. But a hurri-
cane wasnt far behind us and
the forecast was gloomy at
best. I needed to prepare our
generator, the electrical cords
and bottled water. A last
minute food shopping trip for
essentials and flashlights and
candles needed to be within
reach. The Charnets were
ready; unlike in 1999 for Hur-
ricane Floyd. Now we have
French drains, double redun-
dant sump pumps, back-up
3500 watt generators, 20 flash-
lights, gallons of gasoline and
100 yards of electrical cords,
adaptors and a working well.
Terry quickly filled the bath
tubs with water for the toilets
if necessary and now Irene, we
were ready for your show! As
it turned out, we had a few
minor leaks, the power went

Never Forget, but have we
truly forgotten?
Granted, each of us holds
a different perspective on that
days events. In the New York
Metropolitan Area specifically,
we have a significantly differ-
ent viewpoint than most oth-
ers in the nation. I moved to
Florida several years ago and I
can tell you first hand the dif-
ference in perspectives. Sep-
tember 11th is much more
difficult to grasp for most of the
population outside of the
Northeast. But for us, it hap-
pened here; twenty, thirty min-
utes from our houses. Its
personal.
But how can we let our dif-
ferences in perspectives create a
situation in which we all just let
the memory dissolve little by lit-
tle? How can we let politics and
economics get in the way of our
strength as a nation? And most
importantly, how can we con-
tinue to successfully guard
against the enemy when we are
so internally divided?
I dont have an answer to
any of these questions; obvi-
ously, Im just a college student
from Wayne. But one thing I do
know is that if we want to truly
remember and memorialize
September 11, 2001, we cant
do it while pointing fingers at
the evil conservatives or the
senseless liberals. We owe it to
the fallen to observe this day as
a united nation. United we
stand, divided we fall.

hen a patient
with a massive ro-
tator cuff tear re-
pair comes back 2.5 months
after surgery feeling great, it
really is very satisfying as a
physician. We previously
discussed in an article a pa-
tient who underwent an al-
most 3 hour surgery to repair
a rotator cuff tear that was
borderline not repairable.
We used almost every trick in
the book to bring his rotator
cuff tendon back to its origi-
nal attachment site. He was
back just the other day feeling
vastly improved in his left
shoulder, and looking forward
to go back to this heavy lift-
ing job. A big part of the
improved results in shoulder
surgery has to do with the
advances in arthroscopic
surgery.
Arthroscopic surgery has
played an increasingly large
role in delivering orthopedic
solutions. In particular, it
has revolutionized shoulder
surgery. Gone are the days
where we have to make large
incisions from front to back of
the shoulder to repair large
rotator cuff tears. Also
known as minimally invasive
surgery, we work through a se-
ries of three or four stab inci-
sions of less than 1 cm to do
all the necessary work. The
key advantage is the use of a
telescope where we can access
virtually every part of the
shoulder. Especially in large
rotator cuff tears and labral
tears, this increased visualiza-
tion can make a critical dif-
ference. The telescope works
with a small light and fluid
flowing out from its end.
The combination of small
stab incisions and constantly
washing the joint with fluid
also helps to
diminish the infection rate.
The ability to access dif-
ferent parts of the shoulder al-
lows the surgeon to introduce
stitches and repair even very
large tears. Some tears are so
large and pulled back into the
body that the roof of the
shoulder, the acromion, im-
pairs our ability to adequately
see and access the tendon
with regular open techniques.
The telescope helps us drive
under the acromion to visual-
ize and introduce various su-
tures, and begin the repair
technique. Another major
advance has been the devel-
opment of bioabsorbable an-
chors. These implants are
essentially miniature screws
that have small sutures that
come out them. Through the
stab incisions, the implants
are screwed into the bone of
humeral head. (The humeral
head is the ball, of the ball
and socket.) The sutures
from the anchor are then used
to pass through the rotator
cuff tendon, and are subse-
quently tied down. We use a
combination of various knots,
often similar to the knots that
sailors use, the tie the sutures
down. In the past few years,
the repair construct has been
made even stronger by intro-
ducing an additional set of
anchors to back up the origi-
nal anchors. Known as the
double row techniques, we
often use two rows of anchors,
rather than just one row, to
create the strongest and most
broad repair construct.
The combination of these
technical advances have re-
sulted in less pain after the
operation, more range of mo-
tion, and the ability to access
and repair even the very large
rotator cuff tears. Especially
in our patient who has a won-
derful wife and four great sons
to support, it has been a life
changing experience to have
had a successful arthroscopic
rotator cuff repair of the
shoulder.

eliac disease is a condition that damages the lining of
the small intestine, preventing it from absorbing parts
of food. When a person has Celiac disease, his or her
immune system attacks the villi, or areas along the lining of
the small intestine, whenever foods that contain gluten are
eaten. The damage that results from such an attack makes it
hard for the body to properly absorb nutrients, causing many
people to become malnourished regardless of how much food is
consumed. Found in foods such as bread and pasta, gluten is a
protein that can be avoided if people adopt a gluten-free diet.
Such a diet means avoiding foods, beverages and even medica-
tions that contain wheat, barley, rye, and possibly even oats.
While a gluten-free diet won't cure Celiac disease, it can cause
the symptoms to disappear and help the villi heal. Celiac dis-
ease is often mistaken for irritable bowel syndrome, so if such
a condition has been diagnosed but nothing seems to be work-
ing, men and womenshould request they be tested for Celiac
disease.

ur pets are living
longer than ever be-
fore, due to advanced
veterinary medicine and the
improved quality care of pet
owners. With that comes an
increased incidence of geri-
atric-related illnesses and dis-
eases. One 'senior pet'
condition is Cognitive Dys-
function Syndrome (CDS).
This is similar to Alzheimer's
in humans. Though we only
see this in older pets, Cogni-
tive Dysfunction Syndrome
causes behavioral changes that
are not a normal part of the
aging process.
There are some basic cat-
egories of clinical signs associ-
ated with Cognitive
Dysfunction Syndrome. These
must be differentiated from
what a pet owner may inter-
pret as their pet 'just getting
old'. These categories are dis-
orientation, interaction
changes, changes with sleep
patterns, and urinating and/or
defecating in the house. Obvi-
ous disorientation may be ex-
hibited as your pet looking
'lost' in familiar places like be-
coming stuck behind furniture
or in corners. They may walk
in circles, pace, or stare off
aimlessly at walls and objects.
Your pet may fail to recognize
common commands, not re-
spond to their name or not rec-
ognize familiar people. These
behaviors should be differenti-
ated from hearing/vision loss
and neurologic conditions by
your veterinarian.
Interaction changes can
be seen as the pet no longer
seeking attention or enjoying
being petted. They may not be
as excited to greet family mem-
bers and visitors. Typical sleep-
ing changes seen are less sleep
during the night and more dur-
ing the daytime. They may
also stay up at night vocalizing
or pacing. Pets with CDS
which were perfectly house-
trained, may begin to have ac-
cidents in the house, even if
they have recently been out-
side. Simply, they forget to ask
to be let outside and when
they are outdoors, they will
often forget why they are
there. These changes should
also be differentiated from
common medical conditions
by your veterinarian before
treatment for Cognitive Dys-
function Syndrome has begun.
The key to diagnosis is
based mainly on the pet
owner's observation and de-
scription/onset of clinical
signs. There is no diagnostic
test for Cognitive Dysfunction
Syndrome. Therefore, if your
pet exhibits any behavioral
changes, keep a journal of
what, when and where the be-
haviors are exhibited.
These changes are not
part of the normal
aging process. They
can be very disruptive
and upsetting for your
pet and the house-
hold. Unfortunately a
specific cause is un-
known but there are
treatment options.
As with humans, there is
no cure for Cognitive Dysfunc-
tion Syndrome but there are
treatment options that may
help reduce clinical signs and
improve your pet's quality of
life. One treatment option is
medication that is specifically
approved for Cognitive Dys-
function Syndrome. To learn

or a youngster with a
sports related injury, phys-
ical therapy treatment can
offer an opportunity to minimize
lost playing time and maximize
performance upon return. Chil-
dren can be particularly suscep-
tible to sports injuries for a
variety of reasons. Children
younger than eight years old
have slower reaction times and
are less coordinated because
they are still growing and devel-
oping. Also there is a large dis-
crepancy between the height
and weight of children of the
same age causing an increased
risk of injury. Children may un-
knowingly take greater risks
than adults during athletics be-
cause they may not assess the
danger of the situation like an
adult.
In addition, because young
athletes are increasingly exposed
to overtraining and excessive
levels of physical activity, over-
use injuries are becoming more
prevalent. Children are often
playing the same sport year
round or multiple sports during
the season causing overtraining.
Overuse injuries occur from the
repetitive actions that place too
much stress on the bones and
muscles. If not managed prop-
erly and efficiently overuse in-
juries can affect normal physical
growth and maturation. Pre-
vention is the key; gradual
rather than rapid increases in
duration and intensity of train-
ing can usually thwart physical
breakdown.
Certain intrinsic factors
can predispose a young athlete
to overuse injuries. Poor align-
ment and posture can lead to ab-
normal stresses on the immature
skeleton. Muscular imbalances
can result in muscular strain and
overuse. Children who have a
rapid growth spurt may demon-
strate decreased flexibility of the
muscultendinous unit leading to
injury. If identified early, the
progressive inflexibility associ-
ated with rapid growth can be
prevented with a stretching pro-
gram that can reduce the risk of
injury.
Some of the most common
types of sports related overuse
injuries in the young athlete are
of the following:
Anterior knee pain is pain
in front of the knee or under the
knee cap. The knee is usually
sore or swollen. The cause is
usually due to muscular imbal-
ance caused by weakness and
poor flexibility.
Little League Elbow is
caused by repetitive throwing
that can result in pain and ten-
derness of the elbow. The pain
typically occurs after the follow
through of the throw. Pitchers
sometimes complain of loss of
velocity or decreased endurance.
Swimmers shoulder is an
inflammation of the shoulder
caused by the repeated overhead
movements associated with
swimming or throwing a ball.
Shin splints are character-
ized by pain in the front of the
lower part of the legs. They are
often caused by repeated run-
ning on a hard surface or over-
training at the beginning of a
season.
Children and adolescents
are not little adults and careful
attention must be paid to the
childs musculoskeletal develop-
ment in order to provide the
most safe and effective treat-
ment. Kids Therapy Center fo-

regain mobility and muscle
strength through a multi-
pronged approach:
Each athlete is evaluated
to determine their needs. Ther-
apists evaluate muscular
strength, joint range of motion,
posture and gait.
Customized treatment as-
sists each child in maximizing
their potential.

atthew graduated with honors from New York
University in 1997 and began a satisfying career in
orthopedics specializing in spine rehabilitation. Ever
keen to learn and do more for his patients Matthew began

osture affects all human
functions, both con-
sciously and uncon-
sciously, from breathing to
thinking." (American Journal of
Pain Management, January,
1994)
Checking your child's pos-
ture is one of the simplest, yet
most important things parents
can do to ensure the present and
future health of their children.
Few parents, however, are ever
given the "tools" to adequately
assess posture.
The following are some key
points to look for:
1) First have your child stand
facing you, relaxed with feet in
line and slightly apart. Have
them nod their head a couple of
times with eyes closed, then look
straight ahead.
2) Always start at the feet.
The centre of the pelvis should
be directly in line with the mid-
point between the feet. Is the
pelvis shifted to the left or to the
right? Does the pelvis appear ro-
tated to the left or right? Is one
side of the pelvis lower?
3) Now assess the thorax
(chest) in relation to the pelvis.
Is the midpoint of the chest bone
directly above the midpoint of
the pelvis? If not, which way is it
shifted? Is one shoulder lower
than the other? Does one hand
hang lower? Does the thorax ap-
pear rotated relative to the
pelvis?
4) Finally, look at the head.
Draw a mental line from the
midpoint between the eyes to
the centre of the upper lip. Is it
vertical or tilted? Is the head
aligned directly above the centre
of the chest bone, or off to one
side? Is the face rotated to the
left or right?
5) Now stand close behind
your child. Making sure their
feet are in line, look down: Is one
buttock more forward or back?
Are the two dimples at the top
of the buttocks in line with the
heels, or is one side back? Look-
ing up, is one shoulder blade for-
ward or back?
6) Lastly, stand at the side of
your child about five feet away.
Draw another mental line, start-
ing at a point about an inch in
front of the big ankle bone. It
should extend vertically up
through the centre of the hip
bone, up through the centre of
the ear. Is the centre of hip for-
ward of this line (a very common
fault)? Where does the shoulder
lie? Is the centre of the ear for-
ward (another common fault)?
7) There are three spinal
curves when looking from the
side. Is there a very deep curve
in the lower back? Does the ab-
domen protrude? Does the top
of the pelvis look like it's rocked
forward? Is the middle and
upper back excessively rounded,
or very flat? Are the shoulders
rounded? Does the curve in the
neck appear nonexistent, or ex-
cessive?
Check your children's posture
regularly. If you feel after evalu-
ating your childs posture that
there is an an abnormallity, then
call your family Chiropracic
physician for further evaluation.

arents and students who
want to improve grades
and classroom perform-
ance may want to look to ex-
tracurricular activities. There is
evidence that some after-school
activities can actually help pro-
mote better results inside of the
classroom -- even helping to
mediate symptoms of Attention
Deficit Hyperactivity Disorder.
Activities like dance, sports,
band, cheerleading, martial
arts, among other extracurricu-
lar events, can promote good
feelings about school and offer
lessons that carry over into the
classroom environment, help-
ing students become more suc-
cessful. A study by the U.S. De-
partment of Education revealed
that students who participate in
co-curricular activities are three
times more likely to have a
grade point average of 3.0 or
better than students who do
not participate in co-curricular
activities. In a 2003 study pub-
lished in Sociology of Educa-
tion, researchers found that
there are positive associations
between extracurricular partic-
ipation and academic achieve-
ment. Many adolescents who
participate in extracurricular
activities report higher grades,
more positive attitudes toward
school and higher academic as-
pirations. Extracurricular activ-
ities also may be able to correct
behaviors associated with bois-
terous children or those who
have been diagnosed with a
clinical medical condition,
such as ADHD. In a study ti-
tled, "The Effects of Mixed
Martial Arts on Behavior of
Male Children with Attention
Deficit Hyperactivity Disorder,"
researchers found that a martial
arts program two times per
week helped increase the per-

ith minimum re-
modeling savvy
and a modest
budget, it's possible to change
some items in the home to be
more in tune with personal
style. Although many home-
owners gravitate toward new
paint colors or furnishings to
revamp the look of different
rooms in the home, replacing
tired-looking doors is another
affordable option. The
switching out of doors can be
a high-impact project for lit-
tle cost. Think about the
room in the house where the
door(s) add little appeal. Per-
haps a bathroom door has
been marred with holes from
a former towel rack. A bed-
room with simple, flat doors
may lack panache. Some
doors have been warped by
moisture or have been dam-
aged. These eyesores can be
replaced.
A trip to the hardware or
home improvement store can
yield a number of options in
new doors. Hollow core doors
are typically more affordable
than solid wood doors. If cost
is a factor, select among the
various styles in hollow de-
signs.
Switching out a door can
be a challenging endeavor
and is often easiest as a two-
person job. Some people sim-
ply use the old door as a
template for the new door.
Remember, not all doors are
the same size (width and
height) as the existing door
opening. Therefore, some
cutting and fitting will be
necessary.
Here are some steps to
follow.
1. Measure the width and
height of the old door. Many
doors are a standard width of
13/8 inches, though older
doors may be different in
width.
2. Doors are sold as pre-hung
doors or door blanks. Pre-
hung ones are surrounded by a
jamb. When using these
doors, measure accordingly
taking the jamb under consid-
eration. Blanks are simply the
door with no holes for hinges
or locksets already included.

3. Remove the old door by
taking out the hinge pins,
starting from the bottom and
working up. You may need a
screwdriver and a hammer to
tap out stubborn pins. Keep
the pins in a safe spot.
4. Lay the old door on top of
the new door and trace the di-
mensions for cutting. Be sure
to line up the lockset edge so
things will line up. There
should be 1/8 inch clearance
on the sides of the door and
5/8 inch clearance on the
bottom.
5. Use a circular saw to cut
the door accurately. If only a
little needs to be removed
from the door, consider using
a hand plane instead. If you
need to remove more than 1
inch, take half off the bottom
and top of the door so it will
be even.
6. Place the old door back on
top of the new. Mark the loca-
tion of the hinge mortices (the
recessed area and holes where
the hinges will fit) with a util-
ity knife and straight edge.
7. Lightly chisel out the hinge
mortices so that they are the
right thickness to house the
hinge hardware. Test the
hinge in the mortice.
8. Test the door's fit within
the opening to ensure all cuts
are accurate. Plane areas if
there is anything that is off or
if the door rubs.
9. Mark and drill the space for
the lockset and doorknob. Test
the fit.
10. Attach the new door and
interlace the hinges. Have a
helper put in the hinge pins.
11. Put in the knob and be
sure the entire set up works
correctly.
12. Enjoy the new door.

Easy pizza dough
Milk replaces water in this
recipe to add flavor to the
dough. If milk isn't available,
substitute with water.
4 cups bread or all-purpose white
flour
11/4 cups lukewarm milk
21/4 teaspoons active dry yeast
2 tablespoons olive oil
1 teaspoon sugar
1 teaspoon salt
1/4 cup additional milk
1. Preheat oven to 450 F.
2. Prepare the dough "starter." In
a large liquid measuring cup, add
the 11/4 cups warm milk, 1 tea-
spoon sugar and the yeast. Stir
and set aside for 5 minutes.
Allow the starter to foam up,
which is called proofing.
3. In a large mixing bowl, add
the flour and make a well in the
center of the flour. Add the salt.
Mix to combine well.
4. Mix the starter with the re-
maining milk, olive oil and the
flour in the mixing bowl until
combined and a little sticky.
5. Either turn out the dough
onto a floured surface and knead
by hand for 8 minutes to get a
smooth, elastic, rubbery dough
ball, or use a stand mixer with a
dough hook to knead.
6. Put the kneaded dough in a
bowl and drizzle with some olive
oil. Cover the dough with a
damp towel or plastic wrap.
Allow to rise around an hour, or
until it doubles in size. The rate
of rising will depend on the tem-
perature in the house and the
potency of the yeast.
7. Sprinkle cornmeal on the bot-
tom of the pizza pan. Deflate the
dough and press into the pan.
Stretch and flatten as necessary.
8. Top with sauce, cheese and fa-
vorite toppings. Bake for about
12 to 15 minutes, or until the
bottom of the pizza looks slightly
browned.

Beef and Chipotle Burritos
Makes 6 burritos
11/2 pounds boneless beef
round steak, cut 3/4-inch thick
1 14.5 ounce can diced toma-
toes, un-drained
1/3 cup chopped onion
1 to 2 canned chipotle peppers
in adobo sauce, chopped
1 teaspoon dried oregano,
crushed
1/4 teaspoon ground cumin
1 clove garlic, minced
6 9- to 10-inch tomato-flavored
or plain flour tortillas, warmed
3/4 cup shredded sharp cheddar
cheese (3 ounces)
1 recipe Pico de Gallo Salsa (see
below)
Shredded jicama or radishes
(optional)
Dairy sour cream (optional)
1. Trim fat from meat. Cut meat
into six pieces. In a 31/2- or 4-
quart slow cooker place meat,
un-drained tomatoes, onion,
chipotle pepper, oregano, cumin
and garlic.
2. Cover and cook on low-heat
setting for 8 to 10 hours or on
high-heat setting for 4 to 5
hours. Remove meat from slow
cooker. Using two forks pull
meat apart into shreds. Place
shredded meat in a large bowl.
Stir in enough cooking liquid to
reach desired consistency. Di-
vide meat among warm tortillas,
spooning it just below the cen-
ters. Top with cheese, Pico de
Gallo Salsa, and, if desired, ji-
cama and sour cream. Roll up
tortillas.
