Tucked away in the middle of the historic Filipponi Ranch, Per
Bacco Cellars is a hidden gem in the San Luis Obispo wine country.
Per Bacco is the product of a passion of premium wines held by two
individuals: Craig Shannon, owner and winemaker, is a third genera-
tion vineyard manager while Marco Rizzo, owner, also owns Caf
Roma, an Italian restaurant in San Luis Obispo. Their love for quality
wine without pretention is made obvious upon visiting the cellar. Per
Bacco is a destination worthy of the modest ride out to the Filipponi
Ranch.
The tasting room is located inside the cellar which makes for a
uniquely authentic wine tasting experience. Often, winemaker Craig is
working on future releases just a few feet from the tasting bar. Daily
from 11 a.m to 5 p.m., a selection of Per Bacco wines are presented
and guests may choose up to five of these wines to taste. Included are
samplings of Chardonnay and Pinot Noir; both are made from
premium grapes sourced from vineyards in the Edna Valley region.
The 2008 Edna Valley Chardonnay is a beautiful example of a Cali-
fornia Chardonnay with rich notes of tropical fruit and dense texture.
The San Francisco Chronicle awarded this wine with a silver medal.
Per Bacco sources Pinot Noir from Laetitia Vineyards in the cool
coastal Arroyo Grande valley. These grapes were used in Per Baccos
2007 Arroyo Grande Pinot Noir which was awarded a double gold
from the San Francisco Chronicle. The fruit from Laetitia Vineyards
also produces Per Baccos flagship wine, the Dionysus Pinot Noir.
Craig selects barrels that stand out among the entire lot and bottles the
wine separately under the Dionysus label. The wine is surprisingly
bold while, at the same time, exceptionally balanced and is extremely
limited with only around 85 cases produced. From time to time, Per
Baccos limited release wines are available at outstanding discounts.
Currently, this is the case for the 2008 Pinot Grigio which is on sale
for $70 per case! Everyday red wines are also frequently available.
Rosetto red wine is an interesting blend of 80% Pinot Noir and 20%
Syrah. The wine is bright and acidic, perfect for any Italian inspired
meal.
After wine tasting, guests are encouraged to enjoy the scenic
grounds surrounding the cellar. Two majestic Sycamore trees tower
over picnic tables, a bocce ball court and horse shoes. The charming
area is ideal for enjoying an afternoon picnic, and it is a relaxing area
for guests and wine club members to enjoy Per Bacco wines. Wine
club members are fondly referred to as La Famiglia and are welcome
to visit the cellar for complimentary wine tasting. Marco shares family
recipes with La Famiglia and performs mozzarella making demon-
strations at wine club pick up parties.
Per Baccos casual and friendly atmosphere is heightened by the
award-winning wine selection. The tasting room is open year round
and will surely charm all wine tasters as soon as they enter the cellar.

will say upon first sip!

Thanksgiving dinner poses an interesting dilemma for the
wine-pairing enthusiast. Do the broad variety of flavors from the
multitude of side dishes like potatoes, vegetables, stuffing, gravy
and cranberries make it impossible to pick one wine that comple-
ments everything, or do they just offer more opportunities to get
at least one of them to match perfectly?
In my opinion, Thanksgiving dinner is not the occasion to
serve a wine of great finesse or nuance. So, forget about that great
vintage Bordeaux or delicate Pinot Noir. Too many of the side
dishes, not to mention a flavorful roasted turkey, will just over-
power these types of wines. My approach to choosing wine for
Thanksgiving is to go for the big red wine. Whats more, I like to
stick with an American wine to go along with this all-American
holiday.
Heres where big red Zinfandels and Syrahs come to the rescue.
After smothering your plate with big food, you need a big wine to
follow up. The Zinfandel grape, commonly regarded as Americas
grape, has many interesting, powerful, flavors that come through
regardless of how eclectic your meal is. Think of dark berries,
spices and black pepper when considering Zinfandel.
One word of caution when consuming big red Zinfandels or
Syrahs: alcohol content in these wines is often equally big, some-
times as high as 18%, compared to typical wines having 13%-14%.
The reason is partly out of necessity. The bigger the flavors
become, the more the wine has to be balanced, weight-wise, in
your mouth, with other components, like alcohol, tannin and
acidity.
If you would like to also offer a white wine with Thanksgiving
dinner, I suggest a dry Riesling for its versatility in pairing with
many dishes and its ability to cleanse the palate with refreshing
acidity. Riesling is made in both a dry and semi-sweet style, and
this is not always stated on the label. Be sure to check with your
wine retailer when selecting it.

In 1979, Hoy Buell started Greenheart Farms. Today, its one of
Californias leading vegetable plug transplant producers and one of the
largest nurseries in the nation. Growing a wide variety of flowers,
cyclamen, poinsettias, roses, herbs and vegetable transplants for
farmers and wholesalers, wine grape plants were a natural addition.
By 1998, Hoy was growing and grafting hundreds of acres of wine
grape plants for local growers. However, Hoys personal love of wine
gave rise to planting his own vines in 1999 and by 2003, Hearthstone
Vineyard produced its first vintage.
Hearthstone Vineyards is located in the Adelaida region on the west
side of Paso Robles wine country. The Adelaida hills are on the east
side of the Santa Lucia Mountains, which provide a 3000-foot wall
between the ocean and the vineyard. The region experiences notable
diurnal temperature swings during the ripening season of July, August
and September. A typical day will vary 45 degrees between day and
night temperatures. The slightly higher elevation, rugged and rocky
limestone hillside and dynamic weather conditions contribute to the
uniqueness of the area and produce quality wines.
The distinctiveness of the Adelaida region is why a lot of varietals
can grow in the area. According to Hoy, diversity is more inter-
esting and he encourages this diversity by growing 20 different vari-
eties of grapes and various clones of each grape. Varietals include
Zinfandel, Syrah, Grenache, Mourvedre, Cabernet Sauvignon,
Cabernet Franc, Malbec, Tempranillo, Pinot Noir, Sangiovese,
Brunello, Viognier and Rousanne. The variety of grapes allows for a
broad range of wines and styles.
A boutique operation, Hearthstone wines are made by a passionate
team that is dedicated to sustainable farming and hands-on produc-
tion. Owner Hoy Buell is a Cal Poly graduate and a career horticultur-
alist whose expertise about planting and growing enable the grapes to
grow to their highest quality. Hoy is joined by winemaker Paul Ayers,
who, with 20 years of experience making wines, makes sure that the
wines represent the high quality fruit coming from the vineyard. In
the vineyard we observe and nurture the natural alchemy of sunlight,
clone and stone. In the winery, we watch, wonder and safeguard the
wine as its unique burgeoning identity emerges and matures, says
Hoy Buell.
The exceptional quality of Hearthstone wines is reflected in the
number of awards they have won at competitions around the country
in the past year. At the 2011 San Francisco International Wine
Competition, the 2008 Pinot Noir took home a gold medal. The 2007
Pearl (Roussane, Viognier) won gold medals at both the 2011 San
Diego International Wine Competition and the 2010 Critics Challenge
International Wine Competition. The 2007 Lodestone (Syrah,
Grenache, Mourvedre) won gold at the 2010 Critics Challenge and the
2007 Profundo (Sangiovese, Cabernet Sauvignon, Cabernet Franc,
Syrah) won gold from the 2011 San Francisco Chronicle Wine
Competition. These are just a few of the awards the wines have
received.
Hoys passion for the environment and sustainable farming has led
to his involvement in several major reclamation projects around the

what it takes to run an operation that remains viable in the economy
while also finding balance in the interaction with the environment,
Hoys projects all seek to support and align with the natural systems
of the earth. He is responsible for growing 2.5 million pine trees to
replant deforested Louisiana and 2,600 acres of saltgrass for the
Owens lake restoration project in Sierra Nevada. Currently Hoy is a
part of the Colorado River re-vegetation project where he is helping
to propagate, transplant and reestablish native plants to eight thou-
sand acres of their natural habitat. Recently, Greenheart Farms
became certified sustainable, making the vegetable transplant nursery
the first sustainable one in the US.
Hearthstones name is derived from the word hearth, meaning heat
or a fireplace, and which symbolizes the home and feelings of warmth
and love. And this is what Hearthstone, with its Gaelic image of
smoke on the label, represents. The rustic tasting room is casual and
inviting. The staff is friendly and knowledgeable. Stop by for a taste
and meet tasting room manager Josslyn Wagster, owner Hoy Buell or
winemaker Paul Ayers who will welcome you and make you feel at
home.
Hearthstone Vineyard offers a number of wine club dinners,
blending events and other events throughout the year. As a member
of the Hearthstone Wine Club, you will receive invitations to these
events, as well as receive a variety of special reserve wines that are
limited in production and only available to wine club members.
Stop by the tasting room to taste the newest releases from Hearth-
stone Vineyards. These limited-production wines will only be avail-
able in the tasting room and include the 2009 Reserve Cabernet
Sauvignon (100 cases), the 2008 Brunello [a Sangiovese clone] (50
cases) and the 2008 Syrah (33 cases).

Over the past 30 years Ken Volk has been awarded many different
titles: Winemaker of the Year, Outstanding Citizen, Agriculturalist of
the Year and Wine Industry Person of the Year. But if there were one
word that could truly encapsulate Volks career in the wine industry
it would be visionary.
Volk grew up working in his familys gardens and orchards and
often envisioned his own future doing something similar, so it was
no surprise when he decided to pursue a degree in Fruit Science at
Cal Poly State University in San Luis Obispo. His path diverged after
he made his first wine with Gamay grapes, a baseball bat and a trash
can. It wasnt long before Volk was taking enology classes at the U.C.
Davis extension program as well as technical classes at the wine lab
in St. Helena and the now defunct Napa School of Cellaring. His
home winemaking eventually took over his garage at his home in
Cayucos.
When Volk started Wild Horse Winery with his family in the early
1980s there were far fewer wineries, since the Central Coast was not
yet taken seriously as a fine wine-producing region. But Volk recog-
nized the regions potential and over the next twenty-two years he
grew production from 600 to 150,000 cases, becoming a brand
synonymous with quality Central Coast wine. In 2003, Ken sold
Wild Horse to Peak Wines, a division of Jim Beam Brands.
Volk has always had a passion for reinvention and the desire to
continually learn and try new things, so in 2004 he retired from
Wild Horse Winery and purchased the original Byron Winery and
Vineyard in Santa Maria, and renamed the property Kenneth Volk
Vineyards. With his new venture, Volk knew he wanted to keep his
case production lower and focus on producing world-class wines
including Pinot Noir, Chardonnay, Cabernet Sauvignon and Merlot.
The flagship wine of Kenneth Volk Vineyards is the Santa Maria
Cuve for both Pinot Noir and Chardonnay, which are single-varietal
wines that are a blend from many of the top vineyards of the Santa
Maria Valley appellation.
We capitalize on the diverse microclimates in the Central Coast,
working with some of the best vineyard sites of Santa Barbara, San
Luis Obispo and San Benito counties. We scope out different loca-
tions that are most suitable for a specific variety rather than trying to
source everything from one appellation. I enjoy being able to spend
time in so many unique vineyard sites, said Volk.
But with well over three thousand cultivars of Vitis Vinifera (aka
wine grapes) used for regional wine production all over the world,
Volk has also built his eponymous winery on under-appreciated and
hard-to-pronounce grape varietals, which he calls his Heirloom
Wines. This collection includes such wines as Negrette, Cabernet
Pfeffer, Verdelho, Touriga Nacional, Blaufrnkisch, Malvasia Bianca,
Albario and Aglianico. Although many of these grapes have lacked
promotion in what Volk calls the mass-marketed chocolate, vanilla
and strawberry wine standards, Volk saw this as a niche to be able
to make interesting and memorable wines that dont often make it
into the consciousness of the average wine drinker.
We take an advocacy position on these [grape] varieties as they
could face extinction in our current market. Its a challenge but its
fun and educational for us. In some ways its sort of like cross-
training, and gives us insight into making better wines in general,

this year hes adding an Albario as well as his first Torrontes. When
asked what he envisions for future forays into new grape varieties,
Volk answered that hed love to spend time in the Caucasus region

of Eurasia, near the Caspian Sea where many of the worlds Vinifera
grapes originated, and many of which have yet to be categorized.
Along with his vision for working with obscure as well as tradi-
tional varietals, Volk has also had opportunity to see how technolog-
ical developments have affected the process of winemaking.
Listening to this life-long learner speak of these developments, its
obvious that Volks initial interest in fruit science still looms large.
With our increasing understanding of the genetics of wine
grapes, were now able to understand how and why different grapes
tend toward certain growing conditions, said Volk. Simple
sequence DNA has also become relatively affordable for under-
standing the genetic background of grapes and where different wine
grapes originated. Were able to get away from opinions and stories
to really understand the truth behind each grape.
As chair of the Wine and Viticulture Advisory Council at Cal Poly
San Luis Obispo, the third largest viticulture program in the
country, Volk is invested in creating a center for excellence and
increasing the opportunities offered by this program for future
generations of wine industry enthusiasts. He also recently opened a
satellite tasting room for Kenneth Volk Vineyards in Paso Robles in
May 2010, sharing the facility with Lone Madrone wines and Fat
Cat Farms, offering visitors an additional location to experience
Kenneth Volk Vineyards unparalleled wines. Theres no telling in
which direction Volks zeal will take him next, but its a path thats
certain to offer new and fascinating ways to enjoy wine for enthusi-
asts of all levels.

This family-owned brewery started by Jim and Jaime Dietenhofer
of Los Olivos, has been life-long dream in the making. Harnessing
their Bavarian heritage the Dietenhofers wanted to create a craft
brewery in the Santa Ynez Valley that focused on creating the highest
quality beer and help add to a growing hop culture in the Central
Coast.
Utilizing the skill sets from award-winning head brewer A.J. Stoll
and his brewteam, Figueroa Mountain Brewing has been able to create
a line-up of seven quality craft beers (soon to be more). The brewteam
has been able to earn multiple medals including three golds in a very
short period of time (open since 2010).
In addition to selling beer in draft and bottles on the open market,
Figueroa Mountain Brewery has a tap room that puts the patrons a few
feet away from the brewing action. Complete with a state-of-the-art
stainless brewing system, customers can enjoy the pint of beer that
was made in the same room and epitomizes freshness. An experience
that includes live music on Fridays, and a complete food and wine list.
Beer lovers may also enjoy the Fig Mtn Beer truck complete with

Like the inspiration behind achieving a dream, every grapevine
begins with years of nurture before it produces clusters worthy enough
to be used to craft quality wines. For Robert L. Hall, the inspiration
behind his dream began nearly 40 years ago and became a reality
resulting in the Robert Hall Winery of today.
The ability to develop an idea into a success has never been
anything new for Robert Hall. A true entrepreneur, his ventures
include construction, bowling centers, travel agencies, restaurants and
champion horse breeding. A Minnesota native, Robert resided in
Arizona before finding his home and fulfilling his dream in Paso
Robles.
During a family trip to France in the late 70s, Robert was capti-
vated with the Rhne Valleys style of winemaking. He then ventured
west to explore each of Californias wine appellations in order to find
the best growing conditions for producing premium wine grapes. He
acquired the Home Ranch in 1995 and soon after, the Terrace and
Bench vineyards were added, completing the Hall Ranch estate. Robert
soon became a ground breaking Rhne variety grower for the Paso
Robles region.
Roberts focus began with a balances soil that will produce clusters
of high quality each and every season on the 400 acres that comprise
The Hall Ranch. The quality of each bottle of wine is a direct reflec-
tion of the care given in the growing and nurturing of the vines.
Roberts hands-on approach to his wine growing, making and tasting
leaves each customer with a memorable experience of the winery and
of him personally.
Roberts dream of a full production winery quickly came into view
in 2002 with the construction of his production facilities. These facil-
ities include his custom crush pad consisting of two butcher presses
manufactured in France as well as 55 stainless steel tanks used in
fermenting the wine throughout the year.
With the collaboration of his long-time Winemaker Don Brady,
Robert Hall Winery has consistently produced award-winning,
sustainable wines. In 2008, Robert Hall Winery achieved Certified
Sustainability in Practice (SIP) standards which entailed an indepen-
dent third-party audit of the vineyard and winery practices by industry
peers. As true stewards of the land, environmental sustainability is
practiced to respect and conserve our earths natural resources.
Known for the Cabernet Sauvignon and the Rhne-style wines,
Roberts vineyards have a broad variety of styles appealing to all levels
of wine connoisseurs.
Robert Hall Winery crafts several different well known blends
including the flagship blends Rhone de Robles the Rose de Robles.
The Viognier, Chardonnay and Sauvignon Blanc are the most aromatic
whites, while the Cabernet Sauvignon and Syrah are smooth and spicy.
Also created is a Meritage blend, satisfying the craving for a solid and
bold red and Merlot, an all around easy drinking and approachable
red wine.
Robert Hall Winery also produces dessert wines. A traditional style
Vintage Port consisting of the Portuguese native grapes Touriga,

Alvarelho, Souzo and Tinta Co. This smooth-style dessert wine
pairs well with dark chocolate and blue cheese. In addition, the
Orange Muscat that is a crisp and refreshing fruit forward dessert wine
that pairing wonderfully with all fruits throughout the seasons as well
as other light desserts and cheeses.
Maybe the most evoking element of Robert Hall Winery are the
19,000 square feet of underground caverns used to store 132-gallon
oak barrels at a natural, and optimal wine storage temperature of 55-
65 degrees year round. Above the caverns one can find the tasting
room and hospitality building.
The welcoming embrace of the tasting room begins with a knowl-
edgeable staff that not only serves wine but provides guided tours of
the entire facility from the vines to the bottle. The center of the
10,000-square-foot tasting room holds the tasting bar made up of a
gold granite top that compliments the colors of the ceiling and its
massive wooden beams used to hold up the ceiling. The gorgeous
panoramic view of the tasting room overlooks the garden terrace and
amphitheater that are used for private events and concerts. The hospi-
tality center is designed to host seminars, private parties, weddings
and corporate events.
Robert, a true steward of the land, can often be found working in
the vineyard or in the tasting room greeting visitors. You are welcome

Carina Cellars was launched as a vision between winemaker Joey
Tensley and businessman David Hardee. It was a meeting that might
seem out of place given that the two men come from opposite places.
Tensley grew up in Bakersfield and worked as assistant winemaker at
both Babcock and Beckmen wineries, before landing at Carina.
Hardee, by contrast, was involved in law and he charted out Carina
Cellars as a simple extension of his meticulous planning used as an
attorney. In a start-up operation, you try to eliminate as many poten-
tial obstacles as you can, he says referring to what wines he wanted
to make. The Rhne varieties were a logical choice over the oft-planted
Pinot Noir and Chardonnay, but Syrah is their main focus. Syrah is
very hip and the cool thing about it is that it adapts well to various
growing conditions, Tensley says.
Carina Cellars has made a name with Syrah but they also produce
a signature blend, Iconoclast, merging Napa Valley Cabernet Sauvi-
gnon with Santa Barbara Syrah. We recently released our 2009
wines, says Shaun Grimmitt. Our Clairvoyant is a 50 percent Syrah,
35 percent Grenache and 15 percent Mourvdre. This is a classic
French-style Rhne blend that mimics the great wines that come out
of France and shows our personal touch in producing something
similar. We are also showcasing our 2009 Zinfandel. Its an elegant Zin
that doesnt obscure Zinfandels awesome nuances, he notes.
They have expanded to two tasting bars inside their comfortable
tasting room to handle the influx of people on busy weekends. There
are small gift items as well; books, clothing and wine accessories. Their
tasting room also features rotating art which hugs the rustic walls.
Their latest art exhibition is Reflections, running currently through
December 31st, by Royanna Robertson and Mike Krone. Reflections is
a collection of works by a brother and a sister, in watercolor and oil;
each seeing the same subject, and in turn painting it in their own style,
and yet each painting is a reflection of the other. Carina Cellars will
participate in Autumn on the Trail on November 5th from 1 to 4 p.m.,
a passport event covering a dozen wineries showcasing the Santa Ynez
Valley.
Located right in downtown Los Olivos, Carina Cellars is one of the
best and most consistent wineries. Fine wine is like fine art, it is
subjective. There is no definitive right or wrong pairing, just personal

Good food builds good community. Thats the mantra of
Thomas Hill Organics, and its one to which owners Joe and
Debbie Thomas are deeply committed, as they serve the Paso
Robles community through both their farm and bistro.
Joe and Debbie met at the Santa Barbara County Vintners
Festival, and at the time Joe was teaching art at Santa Clara
University and Debbie was a key accounts sales manager for
Adidas in Los Angeles. They married and were quick to realize
their shared love of good food and good wine. They dreamed of
one day moving to wine country, and in 2004 they purchased the
perfect home in the eastern hills of Paso Robles and began to
make that dream into a reality. Thus Thomas Hill Farms was
born as they planted every last spot of the 10-acre property with
900 fruit and nut trees, a small vineyard of Italian varietals, and
an assortment of raised bed lettuces, herbs and garlic, and
seasonal row crops like tomates. Everything is grown organically
and farm tours are given by Joe by appointment only.
As the land began to produce, Joe and Debbie developed a
Community Supported Agriculture (CSA) program, where
members of the community can sign up for a T-Hill Basket that
includes an assortment of produce straight from their farm to
you. The program begins around May and runs through October.
But even with this program, Joe and Debbie found themselves
with a surplus of fruits and veggies, and were quick to realize
that there were no other farm-to-table restaurants in town. So in
January 2009, they opened Thomas Hill Organics in downtown
Paso Robles.
Chef Julie Simon was quick to join the team, and with her
Parisian upbringing and California-honed culinary skills, she
brings a fresh and unexpected explosion of flavor combinations
to the cuisine. The menu changes weekly depending on the
season and their wine list heralds an amazing line-up of locally
produced wine. You may choose to enjoy your meal in their inti-
mate indoor dining room, or outside on their beautiful outdoor
patio. The whole ambiance is reminiscent of dining at a quaint
European caf, surrounded by ivy cascading down brick walls, a
gently trickling fountain and an outdoor fireplace.
If you can make it, Monday nights feature Burgers and Beer,
and Wednesday nights are Wine Night. But no matter when you

Paso Garagiste today announced that forty of Californias most
cutting-edge artisan garagiste* winemakers are now set to pour at
the first annual Paso Garagiste Festival: Celebrating the Artisan Wine-
maker to be held November 11-12 at Paso Robles Windfall Farms. A
limited number of tickets for the festival, which will raise funds for the
Cal Poly Wine and Viticulture Program, are now on sale to the public

We knew that there was a powerful artisan wine movement with
deep roots in Paso Robles that simply needed the right vehicle to bring
it to light, says Paso Garagiste Co-founder, and longtime Paso resi-

Produced by PasoGaragiste.com, the Paso Garagiste Festival
features high-quality, cutting-edge, small production wineries that
produce fewer than 1,200 cases a year. Among the forty winemakers
scheduled to pour are Aaron Wines, Alta Colina, Caliza Winery,
Jalama Wines, J Dusi Wines, JK Wine Company, Stanger Vineyards,
Symbiosis Wines, Storm Wines, Tercero Wines and Vines on the
Marycrest.
Paso Garagiste also announced key additions to the festival line-up,
including seminars from top winemakers; a winemaker after party,

broadcasting from the event by The Krush 92.5.
Because festival attendance is strictly limited and benefits from the
intimate setting of Windfall Farms stunning Stallion Barn, festival-
goers will have a greater opportunity to get to know the garagiste
winemakers and their wines than is customary at larger wine festivals.

The Seminars
Held from 10 a.m. to noon, festival seminars are targeted at
aspiring garagistes and wine enthusiasts alike and will feature leading
lights of the Paso wine industry. Critically acclaimed Cypher winery
will lead one of the seminars in which the audience will taste the
nuances of oak treatments and learn how to identify them and will
include samples of wine in French, American, Hungarian Oak at
various levels of toast.
The Venue
Situated in the heart of beautiful Central Coast wine country,
Windfall Farms is a spectacular 724-acre horse farm with one of the
finest equestrian facilities in the Western United States and is a
community that promotes and enhances the sustainability of local
agriculture and celebrates equestrian, ranch, and agrarian lifestyles. It
features stunning brick buildings with glass and copper steeples and
is surrounded by vineyards, fenced pastures, green sprawling lawns
and panoramic views of the majestic, oak-studded rolling hills of the

As crush began at Halter Ranch Vineyard, an extended team
took its place at the brand new, state-of-the-art winery. In fact,
2011 marks the start of a new era for Halter Ranch, with the
appointment of Kevin Sass as Winemaker and Skylar Stuck as
General Manager.
Kevin Sass has a decade of winemaking experience and has
worked closely with many Paso Robles vineyards, including
Halter Ranch. He is particularly eager to showcase the potential
of the superb Halter Ranch estate fruit. Since 2002, we have
been making wine in an old airplane hangar. Weve been
hamstrung by our limited space and have had to cap our
production at roughly 8,000 cases, while our vineyards could
readily provide fruit for 30,000 cases. With this harvest, Sass
continues, we will sell less fruit to our neighbors and begin
building the Halter Ranch identity.
Skylar Stuck joined Halter Ranch in January 2011 and over-
sees all day-to-day operations. With 20 years experience in the
wine industry, Stuck is looking forward to this first vintage
crafted in the new winery. I am very excited to be part of the
on-going qualitative developments at Halter Ranch, where we
are committed to sustainable farming and share a philosophy of
enlightened environmental stewardship.
Halter Ranch Vineyard, a historic property on the west side
of Paso Robles in the heart of Californias Central Coast, draws
on both innovative and traditional winemaking. The winery
produces 100% estate-grown wines, specializing in Bordeaux
and Rhne Valley varietals and blends. It has earned Californias
prestigious SIP Certification (Sustainability in Practice) for its

WINE COUNTRY THIS MONTH
The Paso Wine Centre is a modern tasting lounge grounded by the
earthiness of custom-made community slab tasting tables and
wonderful artwork showcasing some of the vineyards of Paso. The
tables are the work of owner Kevin Rankin. He wanted to connect the
modern design of the space with natural wood, one of his passions. So
with the help of some new friends, he was able to obtain 100-year-old
oak slabs from Halter Ranch and a space outside of Denner.
Paso Wine Centre is available to anyone wanting to hold a private
party, with a reservation and fee required. So far, they have hosted
birthday parties, wedding rehearsal dinners, team meetings and finan-
cial seminars. Recently, 44 members from the San Jose Cyclist Club
rented the place for three hours to have a pasta dinner and team
meeting after a 96-mile training ride. The main attraction is the space
and the 200 Paso Robles wines in the shop, with 48 of themfor tasting
or by the glass. There is also plenty of cold bottled beer and light food
available. All events can be catered with your food of choice.

native yeast and keeping varietal wines 100% pure, guests are able to

With limitless vineyard views, a relaxed vibe and
locally sourced cuisine around every corner, Paso
Robles is an easy choice for the perfect romantic
escape. And this fall, the historic Paso Robles Inn is
partnering with tour operator, The Wine Wrangler,
to offer an all-inclusive package that makes the
most of this flourishing wine country destination,
including sumptuous meals, wine tasting, luxurious
accommodations at the Paso Robles Inn and a tour
of the vineyards from above in the basket of a hot
air balloon.
The adventure begins when guests check in to
the Paso Robles Inn for their Deluxe Spa Room. For
more than 150 years, the Paso Robles Inn hot
springs have attracted visitors from across the globe who seek peace,
quiet, and health in the healing waters. That tradition carries on
today in every Deluxe Spa Rooms private hot springs mineral spa tub
located on the balcony overlooking the Inns manicured gardens.
Additionally, each spa room features a cozy fireplace and a compli-
mentary bottle of award-winning Paso Robles wine for a relaxed
wind-down from the stresses of everyday life. In the evening, the
indulgence continues with a fresh gourmet dinner for two at the
renowned Paso Robles Inn Steakhouse, where the seasonal menu
features classic steakhouse dishes with a contemporary twist, comple-
mented by an extensive local wine list. After hours, the upstairs
Cattlemans Lounge is open for local flavor including drinks, dancing
and live music on weekends.
At dawn the next morning, guests will be escorted by Hummer to
the hot air balloon site where they will lift off for an hour of enjoying
an aerial view of some of the most picturesque vineyards, rolling hills
and countryside in the world. After the sunrise hot
air balloon tour, guests will enjoy a delicious, hearty
breakfast for two at a local caf before boarding the
Hummer for a day of wine tasting at four to six of
Paso Robles best wineries with experienced tour
guide, The Wine Wrangler. A decadent picnic lunch
among the vines is included. At the end of this long,
eventful day, it might be time for a long soak in the
private hot springs spa or perhaps a quiet dinner at
any one of downtown Paso Robles charming

When venturing to the Edna Valley wine
region from downtown San Luis Obispo, a
mere four miles into the trip stands the
entrance to Tolosa Winery. The drive to the
tasting room is surrounded by Tolosas estate
Winery Vineyard and attractive land-
scaping. With ample parking and a modern,
yet inviting, entrance, there is no wonder
Tolosa is one of the most popular wineries in
the Edna Valley. Standing at the bar feels
spacious and comfortable; however, Tolosa is
known for its accommodating outdoor patio.
Guests are welcome to picnic and enjoy wines
by the flight or glass outside. The space offers
plenty of shade and breathtaking views of
vineyards and the rolling hills of Edna Valley.
Tolosa Winery prides itself on being
sustainable, solar and estate; all three are
clearly identifiable and have a noticeable
affect on the wines. All five of Tolosas estate
vineyards are SIP Certified which refers to
vineyard practices which follow specific
guidelines set by the Central Coast Vineyard
Team in order to promote vineyards and
wineries which act sustainably in all aspects
of grape farming. Sun Power high efficiency
solar panels were installed in 2009. The solar
panels power 90-95%of all energy the winery
uses. Tolosas website notes that the amount
of emissions displaced by using solar power is
equivalent to, removing 2600 cars from Cali-
fornias roads. While all five are located
within the Edna Valley, Tolosas estate vine-
yards have varying soil types and microcli-
mates. Each vineyard produces grapes which
vary in variety or clonal selection. This
enables the production of the highest quality
fruit possible, farmed to the winemakers pref-
erence.
Tolosa offers two different flights of wine
the House Flight and the Limited Release
Flight. Each flight includes distinctive wines
which change regularly. The House Flight is
poured daily from 11 a.m. to 5 p.m. and the
Limited Release Flight is poured Thursday
through Sunday. All wines on both flights are
available by the glass and bottle. Discounts
apply for wine club members and for
purchases of 6 or 12 bottles of wine. The
newly released 2009 Pinot Noir, presented on
the House Flight, is an elegant and complex
estate wine at an everyday price. 1772 refers
to the year Mission San Luis Obispo de
Tolosa, Tolosas namesake, was founded. The
wines which are designated 1772 are barrel
selections from each vintage. The 2008
1772 Pinot Noir is currently offered on the
Limited Release Flight and is incredibly well
balanced and layered.
A must-do experience in the Edna Valley
region is to participate in Tolosas wine and
cheese pairing. The pairings are available
every weekend from 11 a.m. to 4 p.m.,
Saturday and Sunday, and held in the exclu-
sive Heritage Room. The menu changes every
week and includes two white wines and two
red wines, each of which is paired with a
sample of cheese from Vivant Fine Cheese.
Reservations are not required for individuals
or groups of seven or less. Be advised that on
a busy day, the cheese may run out and Tolosa
recommends guests, if planning to visit in the
later afternoon, to call to confirm the cheese
and wine flight is still available. Tolosa also
offers interesting tours of the property as well
as occasional barrel sampling. Visit their

Monarch Butterflies Flock to Pismo Beach
Each year thousands of vibrant orange and black
Monarch butterflies flock to Pismo Beach, seeking
shelter from the freezing northern winters. From
late October to February, the butterflies cluster in
the limbs of a grove of Eucalyptus trees at Pismo
State Beach. The grove is easily accessible. It is
located on State Highway 1 at the south boundary
of the city limits of Pismo Beach.
Spectators come from all over the Central Coast
and throughout the state to view the Monarchs.
Visitors are greeted by knowledgeable and well-
informed volunteer docents offering daily talks and
information.
The butterflies form dense clusters with each
one hanging with its wing down over the one below
it to form a shingle effect. This provides shelter
fromthe rain and warmth for the group. The weight
of the cluster help keeps it from whipping in the
wind and dislodging the butterflies.
This colony is one of the largest in the nation,
hosting an average of 25,000 butterflies over the
last five years.
During the season the Docent Trailer opens at 10
a.m. and closes at 4 p.m. daily. Daily talks happen
at 11 a.m. and 2 p.m., weather permitting.

San Luis Obispo Vintners Associa-
tion announces their 21st Annual
Rockin Harvest Celebration,
November 4th-6th. The Grand Tasting
and Auction will take place on
Saturday, November 5th fromnoon to 3
p.m. at the beautiful Avila Beach Golf
Resort. More than 60 wineries and
restaurants from the San Luis Obispo region are featured in the scenic
seaside setting of the Avila Beach Golf Resort. Winemakers, local chefs
and wine lovers share the fruits of their labor and passion for the art
of winemaking. This auction is not your typical run of the mill
auction. Be prepared to be entertained by the winemakers as they
show off their lifestyle auction lots. Back by popular demand, this
years auction will once again open up with live music from the Wine-
makers Band, The Crushtones, a group formed especially for last
years annual event. For locals, and those from out of the area, this is
a great time to explore San Luis Obispo and discover the culinary trea-
sures of our unique region.
New this year, SLO Vintners will offer two additional event features
in conjunction with the main event. A limited amount of back stage
passes will kick off the day at 11 a.m. These special guests will get an
hour early entrance to the event, and be able to sample special limited
reserve wines, poured during this hour only. Early bird tickets are very
limited.
Along with the new back stage pass, SLO Vintners wants the event
to continue on Sunday. Come party like a rock star and hit the SLO
Wine trail and let the party carry on at participating wineries, where
they pull out the wine, food and entertainment once again at their
individual wineries. Your ticket into the Grand Tasting from Saturday,
gets you into the winery event on Sunday for free! All you have to do
is wear your all access bracelet from the main event on Saturday and
bring your wine glass with you as well on Sunday, and youll be ready
to rock two days straight with SLO wineries.
Harvest celebration events take place all weekend and kick off on
Friday night with a variety of winemaker socials and dinners that offer
a great value. Wineries and restaurants partner to provide festive food
and wine experiences at various winery and restaurant locations in San
Luis Obispo. The weekend provides enthusiasts a chance to discover
the distinct characteristics of San Luis Obispo while meeting the
people that created the wines.

The histories of Sierra Madre Vineyard and the Santa Maria Valley
in Santa Barbara County have been entwined for more than three
decades. Santa Barbaras finest winemakers have long prized Sierra
Madre Pinot Noir for its earth, mineral and spice characteristics and its
long aging potential. It didnt hurt that the Oscar-winning movie Side-
ways poetically praised the virtues of Pinot Noir either, bringing atten-
tion to this region. The property, owned by the Robert Mondavi
Winery was sold to current owner Doug Circle in 2003, and was orig-
inally planted in 1971. It is located three miles east of Santa Maria and
is one of the coolest vineyards in the valley, and is the closest to the
ocean of any Santa Maria vineyard. Mondavi replanted parts of the
vineyard from 1997 to 2000 with newer clones like Dijon, 115 and
2A, among others, tighter spacing and better farming practices. But it
was strawberries that first attracted Circle to buy the property, not
grapes, since he was a successful agriculture farmer specializing in
strawberry production. But Circle also knew the land yielded excellent
grapes. The sandy-loam soils have excellent drainage and nourish the
low-yielding vines to set clusters with small berries, deep intense
flavors, color and concentration. This coastal valley property, all 165
planted acres of it, is well-suited to both Chardonnay and Pinot Noir
as the cold Pacific air blankets the vineyard on summer afternoons.
This natural moderation of heat accumulation slows down the
ripening in the grapes and allows for extended hang-time, where the
berry flavors concentrate while retaining crisp, fresh acidity. The
opportunity to work with the extremely high-quality Chardonnay and
Pinot Noir from the 40-year-old Sierra Madre Vineyard was just too
good to pass up, says Ed Maass, director of sales and marketing who
enthusiastically joined the winery in early 2011. The site is fantastic,
and the vines and rootstocks we matched in the 1990s are now
starting to show incredible results. These are delicious, authentic
wines, he adds. They currently sell most of their fruit from the Sierra
Madre Vineyard to a few dozen other high-quality wineries, and then
bottle wines under their own Sierra Madre Vineyard label.
Their portfolio of wine includes Chardonnay, Pinot Gris, Pinot
Blanc and the gold standard of red wines, Pinot Noir. The vineyard
offers some of the best Pinot Noir in the state, says winemaker Steve
Rasmussen. We are going to pleasantly surprise a lot of people with
the Chardonnay; it is just really a world class location for both of these
varietals. And Rasmussen should know, he was the winemaker at the
well-regarded Talley Winery in San Luis Obispo for 20 years and
produced exceptional wines there. He joined Sierra Madre because he
knew the intrinsic value of this land. Sierra Madre Vineyards was the
vineyard that originally inspired me to want to make Pinot Noir back
in 1985, says Rasmussen. In the early 1980s Pinot Noir was nothing
to write home about, but now were making world-class Pinot Noir.
As proof of this they have won numerous awards from prestigious
wine competitions including the Los Angeles International Wine
Competition and the San Francisco Chronicle Wine Competition.
Sierra Madre Vineyard is only a half hour drive from San Luis Obispo
and the Santa Ynez Valley and is offering something unique to other
Central Coast wineries vineyard tours are available by appointment
to small groups that would like to visit and spend some time enjoying
the beautiful piece of property. It is a truly lovely way to spend the day

Named after owner Bill Foleys daughters Lindsay and Courtney,
Lincourt was founded in 1996 and today produces boutique, hand-
crafted wines from the estate vineyards in Santa Ynez and Santa Rita
Hills.
The quaint and charming tasting room is an original 1926 Sears
Craftsman kit home. The building was shipped via railway (now
Alamo Pintado Road just outside the vineyard) and brought up the
hill and pieced together by numbers. Located on the property of an
old dairy farm, the building, which sits in its original spot since it was
built, still has the original glass windows as well.
At the Lincourt tasting room, which offers a selection of Bordeaux
and Burgundy varietals, guests can taste six wines for $10. White
wines include Pinot Grigio, Pinot Blanc, Sauvignon Blanc and three
different Chardonnays. Red wines include Cabernet Sauvignon,
Merlot, Pinot Noir and Syrah, as well as a Ros of Grenache. The
wines are approachable, fruit-forward wines that range in retail price
between $18 to $40. In November Lincourt will be releasing two new
Chardonnays and two new Pinot Noirs. These wines will be hand-
crafted, limited-production wines which will only be available in the
tasting room.

Lunch can be picked up in the local town of Los Olivos and wine can
be purchased in the tasting room. On weekends, Lincourt sets up a
second tasting bar on the veranda so that guests can enjoy being

the wine shipments received throughout the year and discounts on
wine purchases, wine club members also get free tastings at Lincourt,
as well as the other brands within the Foley family. Other wineries

The stunning Santa Barbara coastline has a new jewel in its treasure
chest with the recent opening of the Conway Family Wines Deep Sea
Tasting Room on Stearns Wharf. Located at the gateway to the Central
Coast wine region, the light-filled, spacious upstairs tasting room has
a distinct contemporary feel, with an expansive tasting bar. The
inviting setting features an artisan crafted table, seats and benches
constructed by the Conway brothers out of transformed French oak
wine barrels. Visitors can enjoy a glass of wine out on the venues deck,
which reveals a panoramic view of the Pacific Ocean, Santa Barbara
Harbor, Channel Islands and Riviera, with a glimpse of passing sea
lions and pelicans.
Open daily until 7 p.m., the tasting menu includes the popular
