Barley Mushroom & Sausage Chowder


8 1 1 1 1 2 1 2 1 Cup (125 ml) Pearl Barley Cups (2L) Chicken Stock Bay Leaf Pound (250 g) Mild or spicy Italian sausage removed from casings and crumbled Medium onion, minced Cup (250 ml) sliced leeks Carrot, chopped Stalks celery, chopped Ounce dried mushrooms soaked in boiling water until soft Pound (250 g) fresh mushrooms chopped Eggs Cup sour cream Salt and pepper Fresh dill

Taco Soup
1 1 1 1 1-2 1-2 Pound hamburger Large can (28 oz) tomatoes Tsp of cumin Tsp of chili powder Garlic cloves, chopped Tsp of garlic powder Various beans/ vegetables Chick Peas Black Beans Corn Kidney Beans, Etc Chopped onion (optional) Tortilla chips Grated cheese

Fry the hamburger and onions. Drain off the fat. In a large sauce pan place the hamburger, onions, tomatoes, vegetables, and spices. Bring to a boil. Cover and simmer for 15 20 minutes. Serve in bowls and add crushed taco chips and grated cheese.

East Indian Stew


2 1 1 1 2 3 1 2-3 Tbsp vegetable oil Tbsp curry powder Medium onion (minced/finely chopped) Tsp ground ginger Garlic cloves (finely chopped) Cans good quality tomato sauce (check the label for sugar content) Cans chickpeas (rinsed & drained) Cups of cooked rice

Begin cooking rice. Heat oil over medium heat. Add onion & garlic; season with salt & pepper. Cook, stirring frequently until onion is tender (4-6 minutes). Add curry & ginger, stir about 1 minute. Add tomato sauce, chick peas & 1 and a 1/2 cups of water. Bring to a boil; reduce to simmer, stirring occasionally until thickened (8-10 minutes). Serve with rice.

Chili Soup
1 1 1 1 Pound lean ground beef or turkey Cups diced ham or back bacon Clove garlic - minced Medium onion - diced

Brown above ingredients in a little oil until cooked. Add mixture to below liquid 1 2 3 Large can diced tomatoes with juice Cups water (beef broth or tomato juice) Cup dark molasses (more or less) Medium potatoes - diced

Bring above to boil and simmer for an hour 1 Large can kidney beans 1 Large can pork and beans 2 Tbsp Worcestershire sauce 1 Tbsp oregano 1 Tbsp chili powder (more or less depending on how spicy you like it) Add the rest of these ingredients and simmer for another 1/2 hour.

New England Clam Chowder


Cook 5 or more strips of bacon in a 4 qt pot until crisp. Remove and drain bacon, pouring off all but 2 tbsp of grease. Add 1 medium diced onion and saut until translucent. Add: 4 Cups soup stock or water 4 Cups bottled clam juice 1 2/3 Cups clams cooked and chopped (I used canned) 1 Clove garlic chopped 2 Cups chopped onions 1 Pounds potatoes, peeled and diced into half Inch cubes 1 Bay leaf 2 Cups light cream Pinch of pepper. Shake in 1/4 c flour. Cover pot and simmer about 12 minutes or until potatoes are tender. Add 3 c milk. Crumble in bacon. Heat, stirring occasionally until hot without boiling.

Borscht
1 10 1 2 1 1 2 1 Pound ham bone cups of water Medium onion, sliced Good sized beets cut into thin strips Carrot Medium potato, sliced Cup white beans cooked (according to pkg directions) Cups shredded cabbage Cup strained tomatoes Clove crushed garlic

Cover meat with cold water and salt. Bring to a boil and skim. Cover and simmer about 2 hours; add all the vegetables and cook for 20 -30 minutes or until done. I often put in dill for flavour at this point. Season with salt and pepper. Add a couple of tbsp of lemon juice if you want it a bit tart. Flavour with freshly chopped dill and add cream if you desire.

Split Pea Soup


2 6 5 1 1 1 3 2 1 Cups split green peas rinsed Cups cold water Cups ham bone broth or other broth/stock Carrot chopped Celery chopped Onion chopped Garlic cloves chopped Tsp lemon juice Bay leaf Salt and pepper to taste

Chicken Tortilla Soup


1 2 1 1 1 1 1 1 1 Tbsp olive oil Chopped chicken breasts Onion Litre chicken broth Can of tomato soup Cup frozen corn Can black beans (rinsed & drained) Tsp cumin Tsp chili powder Bag of tortilla chips Garlic Powder (to taste) Sour cream (optional)

Cook chicken, onion, and garlic in olive oil. Add chicken broth & tomato soup (do not add water). Add corn, black beans & spices. Simmer for 15 minutes. Serve with tortilla chips & sour cream.
