ORDER OF AN EXECUTIVE OFFICER NOTICE OF CLOSURE


To: Darren and Carrie Pearson Proprietors, Bashaw Meats and Sausage Ltd. P.O. Box 577 Bashaw, Alberta T0B 0H0 Bashaw Meats and Sausage Ltd. Block 6; Lot 19; Plan 2627AC

RE:

WHEREAS I, an Executive Officer of Alberta Health Services, have inspected the above premises pursuant to the provisions of the Public Health Act, RSA 2000, c. P-37, as amended; AND WHEREAS such inspection disclosed that the following conditions exist in and about the above noted premises which are or may become injurious or dangerous to the public health or which might hinder the prevention or suppression of disease, namely: a. A lack of general sanitation and cleanliness throughout the food premises and particularly where food is being processed and prepared. AND WHEREAS such inspection disclosed that the following breaches of the Public Health Act and the Regulations there under exist in and about the above noted premises, namely: a) Articles not associated with or required for the operation, maintenance of the food premises are stored in areas where foods are prepared, processed and stored, contrary to section 20(1) of the Food Regulation, AR 31/2006. b) Foods are not being handled in a sanitary manner nor protected from contamination, contrary to section 23(1) of the Food Regulation, AR 31/20006. c) Food handled in the food establishment is not being carried out in a manner that makes food safe to eat, contrary to section 24 of the Food Regulation, AR 31/2006. d) The food establishment lacks availability of properly plumbed sinks for hand washing and for equipment washing, contrary to section 28(1) of the Food Regulation, AR 31/2006. e) Equipment that comes into contact with food is not kept in a clean and sanitary manner, contrary to section 28(2) and 28(3)(a)(b), of the Food Regulation, AR 31/2006. f) The food facility has no written procedures for cleaning and sanitizing of equipment, contrary to section 29(1)(2)(a)(b) of the Food Regulation, AR 31/2006. g) Food handler hygiene is lacking in terms of ensuring that food is not contaminated by hair and lack of hand washing, contrary to section 30(1)(c)(d) of the Food Regulation, AR 31/2006. h) There is evidence that food handlers are not washing their hands properly or as often as necessary, contrary to the Food Retail and Food Services Code, Appendix 1, Meat Facility Standard, Establishment: Design and Maintenance Section 3.

There is no paper towel in the basement washroom or the at the hand wash station in the processing area, contrary to the Food Retail and Food Services Code, Appendix 1, Meat Facility Standards, Sections 17. j) Areas of floors, walls and ceilings in the processing areas are not smooth, impervious to water, in good repair and/or easy to clean, contrary to the Food Retail and Food Services Code, Appendix 1, Meat Facility Standard, Establishment: Design and Maintenance Sections 2 and 4. k) Some of the shelving in the walk-in freezer is bare worn wood which is absorbent to moisture, contrary to the Food Retail and Food Services Code, Appendix 1, Meat Facility Standard, Establishment: Design and Maintenance Sections 3. l) The hand wash sinks in the processing area as well as the hand wash sink in the basement are not adequately plumbed to the sanitary sewer, contrary to the Food Retail and Food Services Code, Appendix 1, Meat Facility Standards, Section 5. AND WHEREAS, by virtue of the foregoing, the above noted premises are hereby declared to be closed. NOW THEREFORE, I hereby ORDER and DIRECT: 1. That the Owner(s) immediately close the above noted premises. 2. That the owner immediately undertake and diligently pursue the completion of the following work in and about the above noted premises, namely: a) Remove all articles not associated with or required for the operation, maintenance of the food premises from areas of the food establishment where foods are prepared, processed and stored. b) Ensure that all foods are handled in a sanitary manner, protected from contamination and rendered safe to eat. c) Ensure the availability of on-site hand wash sinks and equipment washing sinks that are conveniently located and properly plumbed to the sanitary sewer. d) Ensure that all equipment that comes into contact with food is kept in a clean and sanitary manner. e) Ensure the availability and practice of written procedures for cleaning and sanitizing of equipment. f) Ensure food handler hygiene is maintained and practiced so that food is not contaminated by hair and/or by the lack of hand washing. g) Ensure that all hand wash stations are fully equipped and maintained with a supply of hand soap and paper towels. h) Ensure that all floors, walls and ceilings in the processing areas are rendered smooth, impervious to water, in good repair and easy to clean. i) Ensure that all shelving in the walk-in freezer and coolers is rendered smooth, impervious to water and capable of regular wet washings and sanitizing. 3. That until such time as the work referred to above is completed to the satisfaction of an Executive Officer of Alberta Health Services; the above noted premises shall remain closed.

The above conditions were noted at the time of inspection and may not necessarily reflect all deficiencies. You are advised that further work may be required to ensure full compliance with the Public Health Act and regulations, or to prevent a public health nuisance. You have the right to appeal
A person who a) is directly affected by a decision of a Regional Health Authority, and b) feels himself aggrieved by the decision
