evaluation declines. Since the result was just for the initial analysis, the increasing mold count cannot be determined. The yeast and mold colonies were look similar to bacterial colonies. Microbiology of Concentrated Foods

The excellent keeping quality of products such as fruits and vegetables is due to their pH. It is common observation that fruits generally undergo mold and yeast spoilage, and this is due to the capacity of these organism to grow at pH values <3.5 which is considerably below the minima for most food spoilage and all poisoning bacteria.(Jay,2000). Microbial cells are significantly affected by the pH of foods because they apparently have no mechanism for adjusting their internal pH. In general, yeast and molds are more aid tolerant than bacteria. Foods with low pH values usually below 4 are not spoiled by bacteria but more susceptible to spoilage by yeast and mold (Fraizier, 1988). Concentrated solution has high as 67-72B supports growth of yeast. Osmophilic or xerotolerant microorganisms are the one

causing spoilage to concentrated solution of sugar.

Microbial Analysis Standard plate count for yeasts and molds will be done to know the microbial load of the most acceptable product. Potato Dextrose Agar (PDA) will be the culture media to be used for enumerating and determining for yeast and molds for aerobic

plate count. Results will be expressed in the term of CFU Colony Forming Units per ml of concentrate. Formula: CFU/g= average CFU * DF Volume of sample plated Where: CFU = Colony Forming Units DF = Dilution Factor
