The Real California Gold

T
he 101 through Santa Maria is a beau-
tiful drive through agriculture on the
east side and development and
commerce on the west side. Santa Maria,
more than any other California town, exem-
plifies the true cross cultural divide of
yesterday and today.
Take the Costa De Oro Winery tasting
room as an example. Sitting off the Stowell
Road off ramp, the small building occupies a
parking lot with a drive through coffee shop
called Hunter’s Landing (a local chain) and a
Cool Hand Luke’s restaurant and bar. The
little building fits right in with its modern day
counterparts, but make no mistake, the Burk
family and Costa De Oro represent genera-
tions of Santa Maria farmers.
Gary Burk, and his wife Teresa, have been
making wine since the mid-’90s. “My father
and Bob Espinola planted the vineyard in
1989,” Burk says. The Gold Coast Estates
vineyard they planted isn’t too far from the
little roadside tasting room and 1994 was the
first vintage. “My family and the Espinolas
have been growing vegetables here since
1978. Everything from broccoli to cauliflower
to strawberries,” Burk says. Indeed, the broc-
coli growing right next to the tasting room

belongs to the Burk family growers. Burk’s
father still keeps an active hand in the agricul-
ture business.
Costa De Oro’s (Gold Coast in English)
tasting room is a little like a farmer’s roadside
stand, in fact. Part wine tasting bar, part fruit
and vegetable stand, part gift shop, the Burk’s
have gone to lengths to create a warm and
inviting space that, while elegant, colorful
and interesting, maintains something of a
country store atmosphere. “Teresa’s been inte-
gral in putting the look of the place together,”
says Burk.
The tasting room opened in April of 2006
and since then, has been getting a great deal
of notoriety. “Our first thought was that being
right off the freeway here would make it diffi-
cult to get permits and licenses. But, it
wasn’t,” says Burk. “It makes sense, though.
You’ve got Cool Hand Luke’s right here,
which has a bar and right over the freeway is
Olive Garden.” The location is truly unique.
Santa Maria’s award-winning wines are mostly
off the beaten path from Tepesquet Canyon or
the Foxen trail. Costa De Oro stands alone in
the heart of Santa Maria almost literally on the
dividing line between the agricultural east
and the industrial west sides.
The wines that Gary and his assistant
winemaker Paul Lato are making are rich,
food friendly and crafted in the Old World
style. The Estate Pinot Noir has a Burgundian
mouth feel and layers of subtle fruit and
mineral. “I am convinced,” says Lato, “that
Pinot goes better with beef than Cabernet.”
His statement reveals something of one of
Costa De Oro’s secrets. These wines are made
to accompany food and the winemakers are
interested in creating flavorful, nuanced and
delicious wines whose real beauty lies in
pairing them with good, simple fare.
The Sauvignon Blanc, which is aged in
neutral oak for a short while, has lots of the
tell-tale acid, but also a great citrus and floral
taste. This is not the grassy, light Sauvignon
Blanc that is so prolific these days. This Sauvi-
gnon Blanc works well as an aperitif or as an
accompaniment to fish, chicken and pasta
dishes.
“We like to make serious wine,” says Burk.
“But we also want to make wines that you can
pour on the patio and sip.” Sourcing grapes
from the estate vineyard as well as vineyards
throughout the Central Coast has helped
Burk do just that. “When you talk about
wines that are over the top, I usually find that
one glass is all you can handle, whereas I
want the best glass to be the one at the
bottom of the bottle. The wine should evolve
over the course of it being opened and we

shoot for that,” Burk says.

While Burk has no formal
wine education, he and Teresa are
trained musicians and worked for
a time in the studios in Los
Angeles, he has “the best kind” of
training, that being hands on.
Lato is a sommelier and came to
Burk through Au Bon Climat’s Jim
Clendenen who met him while he
worked in restaurants in Toronto.
Lato is originally from Poland and
his world travels have helped him
define his palate and his style. It
was Clendenen who introduced
the two after Burk had worked
with him at ABC as well. “That
was a real education in wine,”
says Burk. “Back then, and I think
even now, all the employees
gather at lunch-time and drink
wine with their food, tasting and
discussing. It’s very Old World, a
very European style of wine-
making.”
In many ways, Costa De Oro
bridges cultures, from Santa
Maria’s agricultural/industrial
roots to Old and New World wine
distinctions. “We’ve found that
because of our location, people
come looking for more than just
wine,” Burk says. And that’s just
what they find. Between a
vegetable-growing winemaker
and his sommelier assistant, Gary
Burk is interested in more than
just the bottle. He and Paul Lato
are interested in the whole table.

real Central Coast farmer’s market
and wine-tasting experience to
the world-weary travelers of the
101. It’s an oasis, of sorts, but it’s
also a true representation of the
unique quality and character of
Central Coast Wine Country.

Winemaker Profile: J. Paul Rosilez Winery

W
ine is good medicine.
You won’t hear any arguing with that
bit of wisdom from Joe Rosilez in
Paso Robles.
And you aren’t likely to find a “Do not
refill” sticker on the labels of his wines.
Rosilez is both a pharmacist and a wine-
maker.
Or should it be winemaker and a pharma-
cist? “Pharmacy is still my primary vocation,”
Rosilez says, even though he spends almost as
many hours in his wine laboratory as he does
filling prescriptions.
The result is an extraordinary array of
wines, from a Super Tuscan blend called
“Apothecary” to a quintessential California
Zinfandel called “Herder Vineyard.”
No surprise, Apothecary is Rosilez’s
personal favorite, as well as his signature
wine. A medium-bodied blend of 80%
Cabernet Sauvignon and 20% Sangiovese, it
also has sentimental value, since it happens to
be the only wine he and his wife, Whitney,
make together.
And don’t underestimate her influence.
Whitney is the one, after all, who gave him a
wine press and de-stemmer as a wedding
present – alongside the five tons of grapes a
family friend presented to the happy couple.
“We were married in July and picked grapes
in September,” he recalls fondly.
The result was the first vintage of J. Paul
Rosilez. “I’ll never forget pressing Chardonnay
grapes at midnight,” says Rosilez, who still
works until the wee hours in the wine lab,
after putting in very full days as a pharmacist.
The two professions create a type of
synergy that works well for Rosilez. He finds
that the analytical portion of winemaking
comes easily to him. But he attributes more of
his skill to intuition and just being “born
with” a good palate.
“Being a winemaker is almost like being a
good chef,” he explains. Chefs don’t measure,

they go by taste. Similarly, Rosilez runs tests
with his equipment mostly to validate his
instincts.
The impressive spectrum of wine varieties
offered by J. Paul Rosilez Winery comes,
surprisingly enough, from just one 26-acre
vineyard in Creston, a small community
southeast of Paso Robles. Owned by Carl and
Phyllis Herder, it provides seven varieties of
grapes to Rosilez, including the reds and
small amounts of Chardonnay and Viognier
This broad range is made possible by tiny
pockets of low-lying zones in the vineyard
called “microclimates,” which afford the
cooler growing conditions the whites need.
Buying all his grapes from one source is
certainly a factor in the success of the Roseliz
label. “Carl Herder is very receptive to my
ideas and we collaborate very closely,” he
said.
What wine would you likely find on the
dinner table in the Rosilez home? Mainly
Apothecary, but not for the reason you might
expect. “I don’t tend to drink much of other
people’s wine,” he said. “I like my own wine,
but mostly I don’t want others to influence
my style. When you acquire a following for a
certain style, it’s counterproductive to change
it and go with popular trends.”
Although he’s successfully tackled the
notoriously difficult Pinot Noir – his 2001
earned a gold medal at the Orange County
Fair – Rosilez finds the Italian variety
Sangiovese to be the most difficult. “It’s the
most challenging to work with, by far,“ he
said. “Pinot Noir is hard to grow, but once it
gets to the winemaker, it’s relatively easy to
make. The Sangiovese is very rough out of the
barrel, almost raw. It needs a great deal of
tender loving care.”
The hallmark wine of J. Paul Rosilez is
their Viognier, the white Rhône grape that is
redolent of peaches and cream, considered by
many wine experts to be the most sensuous of
the major whites. The Viognier from J. Paul
Rosilez is dry and full-bodied, with the char-

acteristic honeysuckle aroma.
Viognier is the one Rosilez checks on most
frequently during production, he said. “The
Viognier and our Cab, which is the base wine
for our Apothecary blend.”
Does Rosilez envision the day when wine-
making might become his vocation instead of
his avocation? No time soon. “I’ll stay in phar-
macy for another 14 years,” he predicts.
“Although, I do plan to scale back some, now
that we have three girls under the age of five.”
What will change is the location of the
tasting room. Although the family recently
built a charming adobe-style facility on
Highway 46 east of Paso Robles, a local resort
developer made an offer to buy the facility
that they couldn’t refuse.
As a result, after this summer the tasting
room business will shift to nearby Cambria, a
small town on the Pacific Ocean a few miles
south of Hearst Castle on the Pacific Coast
Highway.
Production will continue in the Paso
Robles facility for the next five years. Then the
winery’s production will relocate to Creston,
near the vineyard which produces its grapes.
Despite these changes, Rosilez sees a
future much like the present: boutique
production rates of 2,500-3,000 cases, hand-
crafted with the help of others – such as
friends Chris McGowan and Jeff Faccou, who
can be found crushing grapes on nights when
temperatures plunge to near-freezing; Nina
Faccou, the winery general manager; wife
Whitney; and his parents, Barbara and Joe,
who run the tasting room.

S
eeing the fruits of your labor reach a
new level is something that wine-
makers Kris Curran and Bruno D’Al-
fonso are harvesting. Numerous changes
have spurred the growth of their personal
and professional partnerships to new
heights – and the results are being enjoyed
by all that know them and enjoy their
wines. In the past 12 months, they have
joined forces, bringing their labels together
under a new organization called “D’Alfonso
– Curran Wine Group.” Their production
has now moved to their new winery, located
on Rancho La Vina in the heart of the Santa
Rita Hills AVA, and they have opened the
exquisite TRIO Tastings wine tasting room in
the heart of downtown Solvang.
Kris and Bruno have had wonderful
career experiences getting to this point. Kris
started her career with Cambria Winery,
then went on to Koehler winery before
becoming the founding winemaker for Sea
Smoke Cellars. Most recently she was
appointed the Director of Winemaking at
Foley Estates in the Santa Rita Hills AVA.

INTELLIGENCE FOR THE WINE CONSUMER by Len Napolitano

Do all wines get better with age?

Contrary to what you may expect, most wines today are made for
consumption while they are still young (within three years of the
vintage on the label) and will not improve very much over time.
With red wines, older vintages generally do have more
complexity and smoothness than a younger vintage, especially for
age-worthy grapes, such as Cabernet Sauvignon, Merlot and blends
containing these grapes. However, all wines age according to a curve
that reaches a peak year of improvement and then begins to decline.
It is the best guess of winemakers and wine critics as to when in the
life of the wine that peak will occur. My own rule is what I call three
plus three: that is, purchase wines that are young (less than three
years old) and consume them within three years. The only wines in
my cellar older than six years old are French red Bordeaux. That’s
not to imply that American wines do not last longer than six years.
Many do. It’s just that the vast majority of American wines will reach
their best within six years, in my opinion.
White wines reach their peak sooner than reds, so if you have
any white wines in your closet with a vintage more than three years
old, hurry up and consume them. Finer white wines, priced at
around $20 and up, however, are usually structured to withstand a
little more time in the bottle, but I would still recommend applying
the three year rule.
The issue of vintage can be complex. There are wine vintage
charts (available as a reference resource in many wine stores and in
wine publications) that list wine regions around the world and rate
each vintage year according to its quality, which is primarily deter-
mined by that year’s weather. Weather in a given year is more critical
in France, for example, than in California because wine production
laws in many parts of France prohibit irrigation of vines. The
climates in California wine regions are fairly consistent year-to-year,
making differences between vintages less meaningful.
So, unless you are specifically looking for wines to add to your
collection for the purpose of aging them over a period of years, don’t
be too concerned about vintage when you purchase. It’s better to
enjoy them according to your own needs and desires than trying to
guess at when they might be at their peak.

‘Dam Fine Wine’
C
astoro Cellars was founded 25 years
ago by the husband and wife team of
Niels and Bimmer Udsen. The winery
was named after the Italian translation of
Niels’ childhood nickname, “Beaver,”
prompting the motto “Dam Fine Wine.”
One of the oldest wineries in the Paso
Robles AVA, Castoro Cellars began making
wine in the early 1980s and over the course
of the next ten years, bought equipment
and opened their current tasting room in
Templeton in 1993. The winery is located
“off the beaten path” in San Miguel and
provides the space desired for Castoro’s
production facilities.
Castoro Cellars prides itself on its
sustainable growing practices. More than
75 acres on the Westside were “Certified
Organic” in compliance with USDA stan-
dards in September 2007.

original team of winemakers. Owner Niels
Udsen, veteran Winemaker/Enologist Tom

Olsten, have worked together for 25 years,

managing partner of Tablas Creek Vineyard as the 2007 Wine Industry
Person of the Year during the organization’s 16th annual Wine
Country Gala held February 1. Haas has played a leading role in the
American wine industry for more than half a century. From working
alongside his father in his Manhattan retail business, to creating one of
the nation’s largest wine importing companies, to entering the Cali-
fornia wine community with the creation of Tablas Creek Vineyard,
Haas has experienced all facets of the wine industry.

W
hen the Donati Family purchased
the Mastantuano Winery in Paso
Robles exactly one year ago, they
knew the 25-year-old facility needed a lot of
work. Today, the new Donati Hospitality
Center is a bright, open and inviting tasting
room, with high-beamed ceilings and
displays of new and unique merchandise.
Located at the corner of Highway 46 West
and Vineyard Drive, the Old-World style
chateau hasn’t changed much from the
outside, but the inside of the tasting room
and the winery have undergone significant
changes.
In the tasting room, new merchandise
includes one-of-a-kind artistic glass, Italian
hand-painted pottery, Riedel stemware and
decanters, and even special wine holders that
allow customers to pack their new wine
purchases in their checked airline bags. A
new deli case offers artisan cheeses from
Cowgirl Creamery and Cal Poly Creamery,
along with other wine-compatible cheeses
supplied by Vivant Cheese in Paso Robles.

There are also hand-made sandwiches and
salads from Dining with Andre, a favorite
local caterer.
All these savory items are perfect to enjoy
out in one of the picturesque gazebos on the
property. And for fun, there are two bocce
ball courts next to the gazebos. Babbette
Miller – who had been with Mastantuano
Winery for years before the sale to Donati –
will even supply bocce balls and equipment.
And, of course, there is the wine. Under
the direction of winemaker Dan Kleck since
1998, the winery specializes in award-
winning Bordeaux blends, along with
Chardonnay, Merlot, Pinot Blanc and Syrah.

Kleck has had more than 29 years of wine-
making experience in Long Island, Monterey
and Paso Robles. He currently is consulting
winemaker for about half a dozen small local
wineries, as well as his own award-winning
label, Silver Stone.
The Donati vineyards are in the Paicines
appellation, a growing region about an hour
and a half north of Paso Robles. Although it’s
a bit cooler, the area shares some of the same
climactic features as Paso Robles, including
long, hot days, and cool nights. Only 400
acres of the 1,000-acre ranch is planted in
vines. Kleck has his choice of fruit and uses
about 10% of the harvest for Donati Family
wines.
The Donati Vineyard Hospitality Center is
located at the intersection of Highway 46
West and Vineyard Drive in Templeton. A
tasting fee of $5 includes four different wines,
and a $10 fee includes four reserve selections.
The tasting fee is waived with the purchase of
any wine. Tours of the winery are available by
appointment.

Arroyo Robles – A True ‘Family-Run’ Winery

Arroyo Robles is certainly a family-run
enterprise. Bob and Tanis Shore, along with
their children, Brianna and Jason, started
making wine in 1998, sharing equipment
with three other wineries in a converted
apple barn in See Canyon near Avila Beach.
Bob is the winemaker, with help from
assistant winemaker Mauricio Marchant,
while Brianna handles the tasting room and
marketing, and Jason oversees the wine
club and technical support.
Bob Shore spent 30 years as a petroleum
engineer after graduating from Stanford
University, then decided he wanted to be a
farmer. The family initially grew stone fruit,
table grapes and cotton and wheat in the
San Joaquin Valley, said Brianna. Ulti-
mately, the family decided to get into the
wine making business.
Their wine press has moved three times,
but they’ve settled successfully in Paso
Robles, where they are planning to open a
winery sometime in 2008 on the 60-acre
vineyard the Shores own off of San Marcos
Road. Twenty-four acres of the vineyard are
planted, much of it to Syrah, which is the
heart of the Arroyo Robles’ Rhône-oriented
program.
Not that the winery is a one-note oper-
ation. Arroyo Robles produces an impres-
sive array of varietals, including
Chardonnay, Viognier, Cabernet Sauvi-
gnon, Zinfandel, Grenache, Petite Sirah
and Tempranillo. Additionally, they
produce a Mourvedre Rose and a Syrah
Rose, along with a pair of sparkling wines
and a trio of varietal Ports.
The Arroyo Robles 2005 Chardonnay,
using fruit from Monterey County,
captured a gold medal at the 2006 Mid-
State Fair.
With the opening of their handsome
downtown tasting room in March 2006
across from Paso Robles’ historic City Park,
said Brianna Shore, the winery is becoming
a well-known piece of the region’s booming
reputation.
“With this location,” she said, “things
have just skyrocketed.”
Arroyo Robles currently produces about
3,500 cases annually, said Shore, but plans
are to increase that number to 5,000.
Shore also said distribution soon will
become more widespread. Up to now,
however, demand through Arroyo Robles’
wine club and at the tasting room is often
threatening to overwhelm supply.
The Arroyo Robles tasting room is at
739 12th St., at the corner of 12th and Park
streets in the historic Mastagni Building,
and is open daily from 11 a.m. to 7 p.m.

Falcon Nest Winery – Just Like a Trip to Tuscany

If you’ve ever had the good fortune to visit a winery in Italy, you
know what it’s like to enjoy the combination of great wine, beautiful
scenery and most of all, warm and welcoming people. Now you don’t
have to endure a 12-hour plane flight to experience the delights of
Italy. Falcon Nest Winery is the creation of Francesco Grande and his
lovely wife, Carolynn. Francesco was born in Calabria and grew up in
the Tuscany region of Italy. Like so many of his fellow countrymen, his
passion for food and wine has been the focus of his life.
For twenty-eight years he ran a successful and very, very busy
restaurant in Los Angeles. It took a long-time friend and customer to
convince him that he needed a little vacation. A trip up to the Paso
Robles wine-growing region was just supposed to provide a little rest
and relaxation. But with only one look at the stunningly beautiful
rolling hills of Central California, Francesco knew that it was time for
a new challenge. It was time to return to his roots.
“Wine has been in my family for centuries. My father was a wine-
maker, my grandfather was a winemaker as was his father before him
and his father before him! In Italy, it is a way of life,” says Francesco.
With the gusto he gave to his cooking, Francesco has turned his
land into some of the finest vineyards in the area. His picturesque little
winery on the top of the hill looks over a seemingly endless sea of Carol and Francesco Grande
vines. He now has fifty-five acres planted in Cabernet, Merlot, Syrah,
Petite Verdot and Zinfandel.
