Important Notes
G Use in Accordance with Regulations This machine is exclusively to be used to wash ware such as plates, cups, glasses, cutlery, trays etc. Do not use for electrically heated cooking and heat conservation appliances. G Safety Never hose down the exterior of the machine. The "Attention" symbol is shown beside instructions that are essential for the safe operation of the machine. Please read these passages very thoroughly. G Liability Installations and repairs which are not carried out by authorized technicians or the use of other than original spare parts, and any technical alterations to the machine, may affect the warranty set out in the standard conditions of sale. G Important: This Instruction manual is written for machines with an operating direction from left to right. For machines with an operating direction of right to left, the same information applies but with opposite handling directions.

1.1

Assembly
Should be carried out by a HOBART technician.

Transport to installation location


If possible in its packing and on skid. Push on rollers . Avoid damage to floor and doors.

1.2

Remove packing
Cut steel bands. Remove carton. Remove wooden skid. Remove inside packing material and accessories.

1.3

Locating
According to installation plan.

Consider wall clearance (normally 39 mm). Consider length of tabling, conveyors etc.

1.4

Adjusting machine height


Level machine to compensate for floor unevenness. Distribute machine weight equally onto all feets.

1.7

Attach dish rack tables and accessories


See separate instructions. Seal screw holes.

Allow a slight inclination to the machine (if needed, adjust level by turning the feet). Pay attention that the rack track level of the machine is the same as the table or roller conveyor level. (This means that the "dogs" on the rack transportation must extend above the table level by more than 12 mm.)

Table end switch: Wiring to control box must be protected.

Tables on rollers including end switch: Close the connector of the cable and lock it.

Electrical connection
Must be carried out by a qualified technician according to the national and local codes.

2.1

Check
Open the lower right door (with screw-driver) and take out wiring diagram from the inside of the door. Check machine specifications to make sure they correspond to those of the site supply and the wiring diagram. Check site fuse rating.

2.2

Connection
The appliance is intended for a fixed electrical connection. Draw cable (H07-RN-F) through cable gland in the side panel at the exit end of the machine. Connect wires to main switch. Tighten all terminal screws (may be loosened during transport). Tighten the cable gland.

According to EN 60 335 the appliance must be connected to an equipotential conductor. The connecting screw "A" is located beside the cable inlet.

Water connection
Must be carried out by a qualified technician according to the national and local codes. The machine must be operated with water of drinking quality. For water with an extremely high mineral content, water treatment is recommended.

3.1

Check
Make sure that site water supply and drain pipes correspond to installation plan of machine. Identify which pipes are to be connected to corresponding connections of machine. Check correct size of pipe inside diameters.

3.2

Fresh water supply (G 3/4")


Should be soft (2 to 5 Clark, resp. 1,08 mval/l). Flow pressure 1.5 - 6 bar. Must be cold if condenser is fitted. A double remote controlled non return valve ED type is fitted to machine as standard. Provide shut-off valve and line strainer at site.

3.3

Fresh water supply for fill (G 3/4" Option)


Should be soft (2 to 10 Clark, resp. 2,52 mval/l) and warm (60C). Flow pressure 1.5 - 6 bar. Provide shut-off valve and line strainer at site.

3.4

Drain connection
To be connected to site drain: Tank drains DN 50 (HT Pipe) Drip water drains off tabling, sink and other elements. All drains must be connected to goose neck (individually or single point).

Steam or high pressure hot water connection


Must be carried out by a qualified technician according to the national and local codes. NOTE FOR INSTALLATION Make sure that pressure and temperature of the heating medium do not exceed values indicated on the installation plan.

4.1

Check
Make sure that site supply corresponds to installation plan of machine concerning temperature, pressure and energy consumption. Identify which conduits are to be connected to corresponding connections of machine. All connections are equipped with necessary fittings and valves as standard.

4.2

Connection
Following units must be connected to supply and return pipes: rinse booster heater tank heating drier (if installed).

4.3

Insulation
All pipes should be insulated. Insulating material should be water, heat and shock proofed.

Exhaust connection
Connection must be carried out in conjunction with competent ventilation engineer. Compare installation plan to site conditions.

5.1

Exhaust into the kitchen


(only possible in connection with PROVENT-Heat Pump System and sufficient room ventilation) Avoid condensate damage by mixing exhausts from vent outlet of the machine, directly with room air (air distributor).

5.2

Exhaust pipework
Leave a distance (approx. 10 cm) between machine exhaust and site channel or connect special exhaust stack (option). Use additional ventilation fan, as the built-in ventilator has no compression. The volume of air to be evacuated from site has to be larger than the volume of air of the machine (see installation plan). To prevent corrosion damage, provide exhaust channel in stainless steel or synthetic material. In case of extremely low temperatures: provide insulation and anti-freeze shutter.

Dispensers
of detergent and rinse agent Normally, dispensers and controls are delivered and installed by the detergent and rinse agent suppliers. Install dispensers, controls and containers such that they are easy to handle and do not disturb machine operation. Rinse agent connection is provided after the rinse booster heater. Terminals are provided on the rear of the right lower front panel (see wiring diagram).

It is recommended that dispensers and their controls are not fitted directly onto machines! (Thermal insulation panels.) The injection of detergent should be effected from the side. Use only commercial detergent and rinse agent (suitable for professional and industrial operations). Please pay attention to the manufacturers safety rules and instructions.

Selection of Language:

The language set-up can be called by pressing the Information ? and Return button simultaneously (for approx. 2 sec). Each time the Information button is pressed, the available languages will be displayed and can be selected by pressing the Return button.

The selection is also possible if the control is switched off.

First run
Must be carried out to adjust and check machine functions. Must be carried out by a qualified technician.

8.1

Preparation
Set main switch to "0. Check if detergent and rinse agent containers are filled. The adjustment of detergent and rinse agent concentration should be carried out by the chemical supplier. Open shut-off valves. Switch on all relays at the control box. Switch on the main switch. Switch on site exhaust extraction (if fitted). Close inspection doors.

8.2

Fill rinse booster heater


By pressing the ON / OFF button automatically fill. the machine will

Steam / high pressure hot water heated machine: Open heating valves. After filling the machine will automatically heat the booster and tank water to the set temperatures.

8.3

Check
Direction of rotation of motors (see direction sign): - pumps - drier (if fitted) If motor runs against the indicated direction, interchange 2 phases at terminal. Check and eliminate possible leakages on: - drain - heating pipework and water supply pipework - machine housing, bottom of tanks, exhaust system

8.4

Autotimer
Wash, rinse and drier (if fitted) operate only if racks are passing through the machine. These functions switch off automatically if no further racks follows. The drier may also run continuously, adjustment must be done by a Service Technician. The delay times can be adjusted by authorized Service Technicians.

9.1

Operation
Preparation

Place pump intake strainers in position at the bottom of the wash tank.

Put the flat strainers in place.

Put the Strainer basket in place

Put the rinse strainer in place.

Set the wash arms in place and lock them.

Set the rinse arms in place and lock them.

Put curtains in place (see page 18).

Close inspection doors. Ensure sufficient detergent and rinse agent is available in the right containers.

Switch on main switch. Open shut-off valves at site.

After filling the machine will automatically heat the booster and tank water to the set temperatures. When temperatures have been reached the green OK light illuminates.

9.2

Racking

When loading plates consider the machine direction.

Gastronorm pans and other large containers or boards should ideally be washed in a separate Utensil Washer. In a CR these items may cause problems such as splash-over leading to low water levels in the tank/s and poor rinsing. On the occasions when these items are to be washed, they should be loaded sloping towards the direction of machine operation as shown in the picture. This will reduce the problems described above.

9.3

Washing

By loading racks into the machine the Autotimer is activated and the prewash, wash and drier systems are started. The rinse system will only be activated when a rack enters the rinse zone. The washing of Gastronorm pans and other large containers may cause problems such as splash-over leading to low water levels in the tanks and poor rinsing. By deactivating the dual rinse the final result will be better due to a greater separation of the wash and rinse zones.

Stand-By
When no further racks enter the machine, after a pre-adjusted time the autotimer switches off all functions except the conveyor drive and heaters. If a pre-adjusted time (adjusted at the factory to 5 min.) is exceeded, the conveyor switches off (autotimer) until the next rack enters the machine. The LED of the pre-selected conveyor starts blinking. speed-button The switch off time of the transportation (0-30 min.), can be adjusted by an authorized technician. I.e. 0 min. = continuous operation; 30 min. = the transportation switches off after 30 minutes. The transportation can also be started manually by pressing the . conveyor speed-button

To guarantee a constant drying temperature the drier (option) can be programmed for continuous operation by a service technician.

Drain Prewash
By a short press of the Drain button only the prewash tank will be drained and refilled automatically. This should be done if the prewash tank becomes heavily soiled.

9.7

Machine ON / OFF
In case of emergency, the machine can be switched off by pressing the Machine ON / OFF button without previous draining of the tanks.

General Information
When the End Stop Switch is activated, the conveyor will stop directly. Wash, rinse and drier system will stop after few seconds. When a door is opened during the wash process, conveyor, wash, rinse and drier system will stop. After closing the door, the machine has to be re-started by pressing the Conveyor Speed button .

Push the Conveyor OFF-button, Conveyor and wash stop.

Push the Drain-button to empty the machine. Exhaust and heating will stop automatically.

Push the ON / OFF-button.

Switch off main switch!

Open the inspection doors.

Take out and clean strainers.

Unlock and pull out the wash arms. Clean them thoroughly.

Remove the strainer baskets.

Remove the flat strainers.

Remove the pump intake strainers.

Remove the rinse strainer

Unlock and pull out rinse arms. Clean them thoroughly (clean rinse nozzles with a plastic brush).

Hose down and brush the strainers do not knock them to dislodge food soil! They could be damaged. Never hose down the exterior of the machine. To clean the machine do not use any chloric, acidic or abrasive products or metallic brushs.

Hose down and clean the interior of the machine (particulary the bottom of wash and prewash tank) to avoid any wastew remaining.

Clean once a month: Remove the cover at the top of the condensers and slide away the exhaust housing.

To empty the tanks, switch on main switch and press the ON / OFF button.

Press the Drain button. The drain valves will be opened again. Wait until the tanks are completely emptied, than:

Maintenance
After a programmed period of operation the machine will inform when a service must be carried out by a HOBART qualified technician.

The service interval is set by the service technician according to the use of the machine.
For trouble free operation we recommend you enter into a service contract with your local HOBART Service Office.

Frost prevention
Must be carried out by a qualified technician. Drain machine by starting the drain cycle. Set main switch to "0". The contactors of the heating elements for the booster should be disconnected. All tanks, water pipework and armatures must be totally drained. Turn out plug for the drain fitting of rinse booster heater. Loosen unions next to fill valve. Drain site water pipework. Drain traps of drain system. Steam / hot water heated machines: drain all heating coils and pipes. The Condenser if fitted must be blown out with compressed air.

Reset for operation according to chapter 8.

Faults
Faults will be indicated by the blinking of the warning light and a message on the display. If several faults occur, they will be displayed alternatively. The indication may be acknowledged by pressing the Return button . The display returns to the machine status but the warning light remains on without blinking. In the case of mechanical and electrical faults the indication of the fault remains on the display and alternates with the machine status.

If temperatures fall below certain limits for longer than the defined period of time, these will be indicated on the display.

Other faults
Exceeded fill time: The machine does not get sufficient water to fill boiler or tank. Check if the water supply is O.k. and start again. Electrical supply fault: If the machines stops due to a fault in the electrical supply, this will be indicated on the display after restart. After pressing the Return button the display returns to the status. Conveyor jambed: If the overload protection of the conveyor stops the machine because the conveyor is jambed, this will be indicated on the display. Remove the obstruction and press the Return button to acknowledge the fault. To start the conveyor again press the Conveyor Speed button .

Temperature information
The PROTRONIC permanently shows the most relevant temperatures (wash and rinse). Temperature faults of the current operating period already acknowledged by pressing the Return button, as well as the actual temperatures of the prewash and drier (option) may be indicated on the display by pressing the Info button.

If there are acknowledged temperature faults this message will be indicated on the display after pressing the Info button once. If this is confirmed by pressing the Return button, all temperature faults will be displayed one after the other by continued pressing of the Info button. 10 seconds after pressing the button the display will automatically return to the status.

If there are no acknowledged temperature faults or the first message is not confirmed by pressing the Return button, pressing of the Info button leads to the indication of prewash and drier temperatures.

Further information displays


Further information on machine data is available and described below. With the main switch on the machine can be interrogated for further operating data. Access to all kinds of information is achieved by pressing the Info button ? . By pressing this button for 1 sec temperatures will be displayed. By pressing for longer than 2 seconds, you can access further selections. Selections are made by the use of the Info button ? and can be confirmed by pressing the Return button . If the buttons are not pressed for 10 sec the display automatically returns to the standard setting. This also occurs after 1 min, when a sub menu has been entered. You can also return to the main setting by pressing the Info button for longer than 2 seconds.

Consumptions (option)
When this selection is made the following information is provided in steps by pressing the Info button. Information regarding consumption of water, electricity and chemicals is only available if the machine is fitted with the relevant optional sensors.

Chemical consumption is a calculation of dosing strengths and water consumption.

All consumption data refers to the time since the machine was last switched on.

Operating time refers to the time since the machine was turned on.

Operating efficiency is shown as a percentage of racks washed, in relation to the maximum achievable Shows percentage of operating time with the end stop switch activated.

The year flashes and may be altered by pressing the Info button and set by pressing the Return button. The month flashes and may be altered by pressing the Info button and set by pressing the Return button. The day flashes and may be altered by pressing the Info button and set by pressing the Return button. The minutes flash and may be altered by pressing the Info button and set by pressing the Return button. The hours flash and may be altered by pressing the Info button and set by pressing the Return button. Automatic Start (option)


If this sub-menu has been chosen, it is first necessary to select automatic start. By pressing the Info button the choice is switched between "yes" and "no". If you select "no" by pressing the Return button you will return automatically to the main menu. If you select "yes" by Return button you have to set the starting time. First the hours flashes and may be set by Info button and Return. Next step is to set the minutes. After setting the starting time the days of the week are displayed and can be chosen by selecting "y" (= yes) or "n" (= no). Any previous settings will be displayed and can be changed if necessary by pressing the Info and Return buttons. When Sunday has been set the complete settings will be shown again and after a further pressing of the Return button it automatically return to the main menu.

16.2.6

Dealing With Faults (option)


With this sub-menu you may define if certain faults should stop the machine or reduce the conveyor to the low speed. The choice can be made by pressing the Info button ? and confirmed by pressing the Return button . Then the display returns automatically to the main menu.

This will be indicated when the sub menu has been chosen. Depending on the previous setting the lower line of the display will show yes or no. You may change by pressing info button. Confirm with return. Only when no has been confirmed will this choice be indicated. You may change this by pressing the Info button. Confirm with Return button. The same setting can be given for low detergent concentration and mechanical faults. This is only possible if the machine is fitted with the relevant sensors. For some mechanical failures (e.g. drier fan) the machine can still be operated on the lower speed.

Setting of chemical concentration


(Option) Chemical consumption is a calculation of dosing strengths and actual water consumption. The concentrations have to be preset according to the suppliers guidelines. Switch off machine. Enter the main menu by pressing the Info button ? for longer than 2 secondes.

Select the sub-menu "consumption" by pressing the Info button and confirm by Return buttom . Press the Info button several times until the detergent concentration in g/l is displayed. Press Service button 7. The first digit blinks. Set by using the Info button. Confirm with Return button. The next digit blinks. Set by using the Info button. Confirm with Return button. The preset concentration will be shown.

Press the Info button several times until the rinse concentration in g/l is displayed. Press Service button. The first digit blinks. Set by using the Info button. Confirm with Return button. Set the next two digits in the same way. The preset concentration will be shown.

1.1

Assembly
Should be carried out by a HOBART technician.

Transport to installation location


If possible in its packing and on skid. Push on rollers . Avoid damage to floor and doors.

1.2

Remove packing
Cut steel bands. Remove carton. Remove wooden skid. Remove inside packing material and accessories.

1.3

Locating
According to installation plan.

Consider wall clearance (normally 39 mm). Consider length of tabling, conveyors etc.

1.4

Adjusting machine height


Level machine to compensate for floor unevenness. Distribute machine weight equally onto all feets.

1.7

Attach dish rack tables and accessories


See separate instructions. Seal screw holes.

Allow a slight inclination to the machine (if needed, adjust level by turning the feet). Pay attention that the rack track level of the machine is the same as the table or roller conveyor level. (This means that the "dogs" on the rack transportation must extend above the table level by more than 12 mm.)

Electrical connection
Must be carried out by a qualified technician according to the national and local codes.

2.1

Check
Open the lower right door (with screw-driver) and take out wiring diagram from the inside of the door. The electrical supply shall comply with the name-plate data and the wiring diagram. Line fuses and cable cross section shall comply with the requirements.

2.2

Connection
The appliance is intended for a fixed electrical connection. Draw cable (H07-RN-F) through cable gland in the side panel at the exit end of the machine. Connect wires to main switch. Tighten all terminal screws (may be loosened during transport). Tighten the cable gland.

According to EN 60 335 the appliance must be connected to an equipotential conductor. The connecting screw "A" ( ) is located beside the cable inlet.

Water connection
Must be carried out by a qualified technician according to the national and local codes. The machine must be operated with water of drinking quality. For water with an extremely high mineral content, water treatment is recommended.

3.1

General
Connect water supply and drain pipes according to installation plan. A double remote controlled non return valve ED type is fitted to machine as standard.

3.2

Fresh water supply (G 3/4")


Should be soft (up to 8 Clark, resp. 1.1 mmol/l). Must be cold if condenser is fitted. Line flow pressure 1.5 - 6 bar at ~ 500 l/hr. Provide shut-off valve and line strainer at site.

3.3

Fresh water supply for fill (G 3/4" Option)


Should be soft (up to 8 Clark, resp. 1.1 mmol/l) and warm (50 - 60C). Line flow pressure 1.5 - 6 bar. Provide shut-off valve and line strainer at site.

3.4

Drain connection
To be connected to site drain: Tank drains DN 50 (HT Pipe) Drip water drains off tabling, sink and other elements. All drains must be connected to goose neck (individually or single point).

Steam or high pressure hot water connection


Must be carried out by a qualified technician according to the national and local codes. NOTE FOR INSTALLATION Make sure that pressure and temperature of the heating medium do not exceed values indicated on the installation plan.

4.1

General
Connect supply and return pipes according to installation plan. All connections are equipped with neccessary fittings and valves as standard.

4.2

Connection
Following units must be connected to supply and return pipes: rinse booster heater tank heating drier (if installed).

4.3

Insulation
All pipes should be insulated. Insulating material should be water, heat and shock proofed.

Exhaust connection
Connection must be carried out in conjunction with competent ventilation engineer. Please pay attention to notes on the service drawing.

5.1

Exhaust into the kitchen


(only possible in connection with PROVENT-Heat Pump System and sufficient room ventilation) Avoid condensate damage by mixing exhausts from vent outlet of the machine, directly with room air (air distributor).

5.2

Exhaust pipework
Leave a distance (approx. 10 cm) between machine exhaust and site channel or connect special exhaust stack (option). Use additional ventilation fan, as the built-in ventilator has no compression. The volume of air to be evacuated from site has to be larger than the volume of air of the machine (see installation plan). To prevent corrosion damage, provide exhaust channel in stainless steel or synthetic material. In case of extremely low temperatures: provide insulation and anti-freeze shutter.

Dispensers
of detergent and rinse agent Normally, dispensers and controls are delivered and installed by the detergent and rinse agent suppliers. Install dispensers, controls and containers such that they are easy to handle and do not disturb machine operation. Rinse agent connection is provided after the rinse booster heater. Terminals are provided on the rear of the right lower front panel (see wiring diagram).

It is recommended that dispensers and their controls are not fitted directly onto machines! (Thermal insulation panels.) The injection of detergent should be effected from the side. Use only commercial detergent and rinse agent (suitable for professional and industrial operations). Please pay attention to the manufacturers safety rules and instructions.

Autotimer
Wash, rinse and drier (if fitted) operate only if racks are passing through the machine. These functions switch off automatically if no further racks follows. The drier may also run continuously, adjustment must be done by a Service Technician. The delay times can be adjusted by authorized Service Technicians.

When loading plates consider the machine direction.

Gastronorm pans and other large containers or boards should ideally be washed in a separate Utensil Washer. In a CR these items may cause problems such as splash-over leading to low water levels in the tank/s and poor rinsing. On the occasions when these items are to be washed, they should be loaded sloping towards the direction of machine operation as shown in the picture. This will reduce the problems described above.

9.3

Washing
By pressing the Conveyor Speed button the conveyor starts to operate and the machine is ready for use. This should only be done after the set temperatures have been reached and the green OK light illuminates.

By loading racks into the machine the Autotimer is activated and the prewash, wash and drier systems are started. The rinse system will only be activated when a rack enters the rinse zone. The washing of Gastronorm pans and other large containers may cause problems such as splash-over leading to low water levels in the tanks and poor rinsing. By deactivating the dual rinse the final result will be better due to a greater separation of the wash and rinse zones.

Stand-By
When no further racks enter the machine, after a pre-adjusted time the autotimer switches off all functions except the conveyor drive and heaters. If a pre-adjusted time (adjusted at the factory to 5 min.) is exceeded, the conveyor switches off (autotimer) until the next rack enters the machine. The LED of the pre-selected conveyor speed-button starts blinking. The switch off time of the transportation (0-30 min.), can be adjusted by an authorized technician. I.e. 0 min. = continuous operation; 30 min. = the transportation switches off after 30 minutes. The transportation can also be started manually by pressing the . conveyor speed-button

General Information
When the End Stop Switch is activated, the conveyor will stop directly. Wash, rinse and drier system will stop after few seconds. When a door is opened during the wash process, conveyor, wash, rinse and drier system will stop. After closing the door, the machine has to be re-started by pressing the Conveyor Speed button .

Hose down and brush the strainers do not knock them to dislodge food soil! They could be damaged.

Remove rinse arms: Upper: pull spring towards front and remove rinse arm. Lower: lift rinse arm and pull out. Control nozzle openings and clean if necessary.

Never hose down the exterior of the machine. To clean the machine do not use any chloric, acidic or abrasive products or metallic brushs.

Hose down and clean the interior of the machine (particulary the bottom of wash and prewash tank) to avoid any wastew remaining.

Clean once a month: Remove the cover at the top of the condensers and slide away the exhaust housing.

Maintenance
After a programmed period of operation the machine will inform when a service must be carried out by a HOBART qualified technician.

The service interval is set by the service technician according to the use of the machine.
For trouble free operation we recommend an inspection or maintenance contract by qualified Service technicians.

Frost prevention
Must be carried out by a qualified technician. Drain machine by starting the drain cycle. Set main switch to "0". The contactors of the heating elements for the booster should be disconnected. All tanks, water pipework and armatures must be totally drained. Turn out plug for the drain fitting of rinse booster heater. Loosen unions next to fill valve. Drain site water pipework. Drain traps of drain system.

Steam / hot water heated machines: drain all heating coils and pipes. The Condenser if fitted must be blown out with compressed air.

Reset for operation according to chapter 8.

Faults
Faults will be indicated by the blinking of the warning light and a message on the display. If several faults occur, they will be displayed alternatively. The indication may be acknowledged by pressing the Return button . The display returns to the machine status but the warning light remains on without blinking. In the case of mechanical and electrical faults the indication of the fault remains on the display and alternates with the machine status.

Other faults
Exceeded fill time: The machine does not get sufficient water to fill boiler or tank. Check if the water supply is O.k. and start again. Electrical supply fault: If the machines stops due to a fault in the electrical supply, this will be indicated on the display after restart. After pressing the Return button the display returns to the status. Conveyor jambed: If the overload protection of the conveyor stops the machine because the conveyor is jambed, this will be indicated on the display. Remove the obstruction and press the Return button to acknowledge the fault. To start the conveyor again press the Conveyor Speed button .

Temperature information
The PROTRONIC permanently shows the most relevant temperatures (wash and rinse). Temperature faults of the current operating period already acknowledged by pressing the Return button, as well as the actual temperatures of the prewash and drier (option) may be indicated on the display by pressing the Info button.

Further information on machine data is available and described below. With the main switch on the machine can be interrogated for further operating data. Access to all kinds of information is achieved by pressing the Info button ? . By pressing this button for 1 sec temperatures will be displayed. By pressing for longer than 2 seconds, you can access further selections. Selections are made by the use of the Info button ? and can be confirmed by pressing the Return button . If the buttons are not pressed for 10 sec the display automatically returns to the standard setting. This also occurs after 1 min, when a sub menu has been entered. You can also return to the main setting by pressing the Info button for longer than 2 seconds.

If this sub-menu has been chosen, it is first necessary to select automatic start. By pressing the Info button the choice is switched between "yes" and "no". If you select "no" by pressing the Return button you will return automatically to the main menu. If you select "yes" by Return button you have to set the starting time. First the hours flashes and may be set by Info button and Return. Next step is to set the minutes. After setting the starting time the days of the week are displayed and can be chosen by selecting "y" (= yes) or "n" (= no). Any previous settings will be displayed and can be changed if necessary by pressing the Info and Return buttons. When Sunday has been set the complete settings will be shown again and after a further pressing of the Return button it automatically return to the main menu.

Dealing With Faults (option)


With this sub-menu you may define if certain faults should stop the machine or reduce the conveyor to the low speed. The choice can be made by pressing the Info button ? and confirmed by pressing the Return button . Then the display returns automatically to the main menu.

1.1

Assembly
Should be carried out by a HOBART technician.

Transport to installation location


If possible in its packing and on skid. Push on rollers . Avoid damage to floor and doors.

1.2

Remove packing
Cut steel bands. Remove carton. Remove wooden skid. Remove inside packing material and accessories.

1.3

Locating
According to installation plan.

Consider wall clearance (normally 39 mm). Consider length of tabling etc.

1.4

Adjusting machine height


Level machine to compensate for floor unevenness. Distribute machine weight equally onto all feets.

1.5

Attach dish rack tables and accessories


See separate instructions. Seal screw holes.

Allow a slight inclination to the machine (if needed, adjust level by turning the feet). Pay attention that the rack track level of the machine is the same as the table or roller conveyor level. (This means that the "dogs" on the rack transportation must extend above the table level by more than 12 mm.)

Table end switch: Wiring to control box must be protected.

Tables on rollers including end switch: Close the connector of the cable and lock it.

Electrical connection
Must be carried out by a qualified technician according to the national and local codes.

2.1

Check
Open the lower right door (with screw-driver) and take out wiring diagram from the inside of the door. The electrical supply shall comply with the name-plate data and the wiring diagram. Line fuses and cable cross section shall comply with the requirements.

2.2

Connection
The appliance is intended for a fixed electrical connection. Draw cable (H07-RN-F) through cable gland in the side panel at the exit end of the machine. Connect wires to main switch. Tighten all terminal screws (may be loosened during transport). Tighten the cable gland.

According to EN 60 335 the appliance must be connected to an equipotential conductor. The connecting screw "A" ( ) is located beside the cable inlet.

Water connection
Must be carried out by a qualified technician according to the national and local codes. The machine must be operated with water of drinking quality. For water with an extremely high mineral content, water treatment is recommended.

3.1

General
Connect water supply and drain pipes according to installation plan. A double remote controlled non return valve ED type is fitted to machine as standard.

3.2

Fresh water supply for rinse (G 3/4")


Should be soft (up to 8 Clark, resp. 1.1 mmol/l). Must be cold if condenser is fitted. Line flow pressure 1.5 - 6 bar at ~ 500 l/h. Provide shut-off valve and line strainer at site.

3.3

Fresh water supply for fill (G 3/4" Option)


Should be soft (up to 8 Clark, resp. 1.1 mmol/l) and warm (50 - 60C). Line flow pressure 1.5 - 6 bar. Provide shut-off valve and line strainer at site.

3.4

Drain connection
To be connected to site drain: Tank drains DN 50 (HT Pipe) Drip water drains off tabling, sink and other elements. All drains must be connected to goose neck (individually or single point).

Steam or high pressure hot water connection


Must be carried out by a qualified technician according to the national and local codes. NOTE FOR INSTALLATION Make sure that pressure and temperature of the heating medium do not exceed values indicated on the installation plan.

4.1

General
Connect supply and return pipes according to installation plan. All connections are equipped with neccessary fittings and valves as standard.

4.2

Connection
Following units must be connected to supply and return pipes: rinse booster heater tank heating dryer (if installed).

4.3

Insulation
All pipes should be insulated. Insulating material should be water, heat and shock proofed.

Exhaust connection
Connection must be carried out in conjunction with competent ventilation engineer. Please pay attention to notes on the service drawing.

5.1

Exhaust into the kitchen


(only possible in connection with PROVENT-Heat Pump System and sufficient room ventilation) Avoid condensate damage by mixing exhausts from vent outlet of the machine, directly with room air (air distributor).

5.2

Exhaust pipework
Leave a distance (approx. 10 cm) between machine exhaust and site channel or connect special exhaust stack (option). If exhaust stack is used the air baffles has to be removed. Use additional ventilation fan, as the built-in ventilator has no compression. The volume of air to be evacuated from site has to be larger than the volume of air of the machine (see installation plan). To prevent corrosion damage, provide exhaust channel in stainless steel or synthetic material. In case of extremely low temperatures: provide insulation and anti-freeze shutter.

Dispensers
of detergent and rinse agent Normally, dispensers and controls are delivered and installed by the detergent and rinse agent suppliers. Install dispensers, controls and containers in a way that they are easy to handle and do not disturb machine operation. Rinse agent connection is provided after the rinse booster heater. Terminals are provided on the rear of the right lower front panel (see wiring diagram).

See separate Notes: "Installation Recommendations for Dosing Equipment with conveyorised Rack Type and Flighttype dishwashers". Use only commercial detergent and rinse agent (suitable for professional and industrial operations). Please pay attention to the manufacturers safety rules and instructions.

Controls

EMERGENCY STOP

Machine ON / OFF (illuminates during operation) By pushing this button the machine will be switched on. It is possible to switch off the machine without drain cycle, by pushing this button again. Exhaust and dryer will stop with short delay. After switch off, the machine is not voltage free! At the temperature indicator Rinse appears a point.

Start / Stop button This button illuminates to indicate the mode of the machine. RED = machine fills and starts heating Maybe restricted operation possible (e.g. in case of failed tank heating). = selected program is running

GREEN = machine is ready for operation BLUE

When the button flashes:


RED = Fault: the temperature indicators display a code (possible types of fault see chapter 15). GREEN = machine refills and heats up BLUE = program started, but machine is not ready

Drain button (illuminates during operation) By short pushing (2 seconds) this button, only the prewash tank will be drained and refilled automatically. To drain the machine completely, push button for approx. 4 seconds. Conveyor speed button By short pushing this button, it is possible to select between two pre-set conveyor speeds. By pushing this button for approx. 4 seconds, temperature mode (see chapter 9.5) will be . Temperature indicator Wash (C): Temperature indicator Rinse (C): Indicates the current temperature of the wash tank. Indicates the current temperature of the final rinse water.

With a machine malfunction, the temperature indicators display a code. Conveyor speed indicator Indicates the selected speed. = slow = fast

When the conveyor speed indicator flashes, the table end switch is activated.

Emergency Stop button Switches the machine completely off. Must be unlocked for operation.

First run
Must be carried out to adjust and check machine functions. Must be carried out by a qualified technician.

8.1

Preparation
Set main switch to "0. Check if detergent and rinse agent containers are filled. The adjustment of detergent and rinse agent concentration should be carried out by the chemical supplier. Open shut-off valves at site. Open control box and switch on all circuit breakers and motor protection switches. Switch on main switch. Switch on site exhaust extraction (if fitted). Close inspection doors.

8.2

Fill rinse booster heater


Push the ON/OFF button, the button illuminates. At the temperature indicator Rinse appears "boF" and flashes. The rinse booster heater has to be filled as described in the following text. Push the ON/OFF button again, to switch off the machine. Open door, push Drain button and Conveyor speed button simultaneously until at the temperature indicator Rinse appears again "boF".

Push Start / Stop button. At the temperature indicator Wash appears "- - 1". Wait until the indicator displays "- - 0". Close door, the indicators go out. For machine operation see chapter 9.

8.3

Check
Direction of rotation of motors (see direction sign): - pumps - dryer (if fitted) If motor runs against the indicated direction, interchange 2 phases at terminal. Check and eliminate possible leakages on: - drain - heating pipework and water supply pipework - machine housing, bottom of tanks, exhaust system

8.4

Autotimer
Wash, rinse and dryer (if fitted) operate only if racks are passing through the machine. These functions switch off automatically if no further racks follow. Exhaust, dryer and conveyor switch off with delay. The delay times can be adjusted by authorized Service Technicians.

9.1

Operation
Preparation

Place pump intake strainers in position at the bottom of the wash tank.

Put the flat strainers in place.

Put the Strainer basket in place

Put the rinse strainer in place.

Set wash arms in place: Upper: set wash arm in side guides, move to end position and drop-in over stop unit. Lower: move wash arm in side guides to end position and click into place.

Set rinse arms in place. Upper: set rinse arm in back opening, move from below into guide and click into place. Lower: move rinse arm in guides to end position and click into place.

Put curtains in place (see page 18).

Close inspection doors. Ensure sufficient detergent and rinse agent is available in the right containers.

Switch on main switch. Open shut-off valves at site.

Push the ON / OFF button, tank will be filled. The Start / Stop button illuminates red during fill and heating cycle. This process can take several minutes. When the Start button changes to green light, machine is ready for operation.

9.2

Racking

When loading plates consider the machine direction.

Gastronorm pans and other large containers or boards should ideally be washed in a separate Utensil Washer. In a CNR these items may cause problems such as splashover leading to low water levels in the tank/s and poor rinsing. On the occasions when these items are to be washed, they should be loaded sloping towards the direction of machine operation as shown in the picture. This will reduce the problems described above.

9.3

Washing
Machines with Autotimer: By pushing the Start / Stop button (illuminates blue) the conveyor starts to operate. By loading racks into the machine the Autotimer is activated and the prewash, wash, rinse and dryer systems are started. Stand-By When no further racks enter the machine, after a pre-adjusted time the autotimer switches off all functions except the heaters.

Machines without Autotimer: By pushing the Start / Stop button (illuminates blue) all machine functions will be activated. When no further rack enters the machine, push the Start / Stop button. The button illuminates green, transportation and wash are switched off. Exhaust and dryer switch off with delay.

Give dishes enough time to dry after washing.

9.4

Conveyor Speed
By pushing the Conveyor speed button, it is possible to select between two pre-set conveyor speeds. The selected speed will be indicated. = slow = fast

9.5

Preview of temperatures
To check temperatures, press and hold (4 sec.) the Conveyor speed button until the indicators Wash and Rinse show the actual temperatures (C). "Ch0" = rinse / "Ch1" = wash / "Ch2" = prewash The temperatures will be displayed one after the other by repeated pushing of the Conveyor speed button. The indicators go out 10 seconds after releasing the button.

While temperatures are indicated, the conveyor speed cannot be changed.

9.6

Drain Prewash
By short pushing (2 sec.) the Drain button, only the prewash tank will be drained and refilled automatically. This should be done if the prewash tank becomes heavily soiled. During the drain cycle the Start / Stop button illuminates red and flashes green during refill. As soon as the button illuminates green, the machine is ready again for operation.

9.7

Machine ON / OFF
The machine can be switched off by pushing the machine ON / OFF button without previous draining of the tanks. Abluftventilator und Trocknungsgeblse knnen nachlaufen.

9.8

General Information
When the End Stop Switch is activated, the conveyor will stop directly. Wash, rinse and dryer system will stop after few seconds. The Conveyor speed indicator flashes.

When a door is opened during the wash process, conveyor, wash and rinse will stop directly. The dryer system will stop after few seconds. The Start / Stop button flashes red and the temperature indicator rinse displays "AL2". After closing the door, the machine has to be re-started by pushing the Start / Stop button.

9.9
EMERGENCY STOP

Emergency Stop
In case of emergency, the machine can be switched off completely by pushing the Emergency Stop button.

Machine shut down

Push the Start / Stop button, conveyor and wash stop. Exhaust and dryer switch off with delay.

Push the Drain button for minimum 4 sec. to empty the machine. Heating will stop automatically.

The drain valves close. At the temperature indicator Rinse appears a point. The machine is switched off but not voltage free!

Switch off main switch!

Open the inspection doors.

Take out an clean curtains.

Remove wash arms: Upper: press latch, lift wash arm over stop unit and pull out. Lower: lift wash arm to pull out. Pull out end caps and clean wash arms accurately.

Remove strainer baskets.

Remove flat strainers.

Remove pump intake strainers.

Remove rinse strainer.

Hose down and brush the strainers do not knock them to dislodge food soil! They could be damaged.

Remove rinse arms: Upper: pull spring towards front and remove rinse arm. Lower: lift rinse arm and pull out. Control nozzle openings and clean if necessary.

Hose down and clean the interior of the machine (particulary the bottom of wash and prewash tank) to avoid any waste remaining.

Clean once a month: Remove the cover at the top of the condensers and slide away the exhaust housing.

Hose down condensers.

Never hose down the exterior of the machine. To clean the machine do not use any chloric, acidic or abrasive products or metallic brushs. To empty the tanks, switch on main switch and push the Drain button for 4 seconds. The drain valves will be opened again. Wait until the tanks are completely emptied, than: Switch off the main switch and close the shut-off valves. Leave the inspection doors open for ventilation.

Switch off main switch !

Remove the upper housing panels of the machine and the covers of the heat pump. ATTENTION ! Parts of the heat pump can be hot!

Hose down condensers and evaporator! Do not use steam or high pressure cleaner. Avoid damages! Fins are sharp! Danger of injury use protection gloves!

After cleaning put covers and panels back into place.

Maintenance
For trouble free operation we recommend an inspection or maintenance contract by qualified Service technicians.

Frost prevention
Must be carried out by a qualified technician. Drain machine by pushing the Drain button. Set main switch to "0".

Set counter C28 to "0" and save. Alternative: disconnect the contactors of the heating elements for the el. rinse booster. All tanks, water pipework and armatures must be totally drained. Turn out plug for the drain fitting of rinse booster heater. Loosen unions next to fill valve. Drain site water pipework. Drain traps of drain system.

Steam / hot water heated machines: drain all heating coils and pipes. The Condenser if fitted must be blown out with compressed air.

Reset for operation:


Open shut-off valves at site. Switch on main switch. Open door, push Drain button and Conveyor speed button simultaneously until at the temperature indicators "boF" and "- - 0" appears.

Push Start / Stop button (at the temperature indicator Wash appears "- - 1") and hold until water sprays out of rinse arm nozzles. Close door. Set main switch to "0". Connect the contactors of the heating elements for the el. rinse booster.

Faults
The Start / Stop button lilluminates red and flashes. The temperature indicator Rinse displays a code: e.g. "AL" = drain fault. Possible types of fault as follows (report the code of fault to the service technician):
