Monocalcium phosphate, monohydrate was the first phosphate commercial leavening agent and has been in regular use for most of the 20th century, after Innophos introduced it to the baking industry. The speed of reaction of monocalcium phosphate, monohydrate usually limits its use to those applications requiring early fast release and a dormant holding period. Pancake mixes are a good example. Cookie mixes, angel food cakes and pizza doughs are other frequent applications. Monocalcium phosphate, monohydrate is sometimes used in the milling industry to make phosphated flour. In combination with slower-acting phosphates, monocalcium phosphate, monohydrate is used, often in small amounts, to expedite the initial reaction without impairment of bench and oven reaction. It has a particular value in pre-forming gas cells and then increasing their number during mixing of batters or doughs. With V-90 (coated anhydrous monocalcium phosphate), Regent 12XX (monocalcium monohydrate) is used in some pancake mixes to improve texture and tenderness. With sodium acid pyrophosphate, Regent 12XX is used in commercial baking to improve flavor and baking characteristics. In the prepared mix industry, it is used often with Levair or sodium acid pyrophosphates for institutional cake and pancake mixes. It yields early acidity, which firms and stabilizes the batter. This is especially desirable for mixing in large quantities which are to be held for some time before baking. Regent 12XX (monocalcium phosphate, monohydrate) has been used very successfully in combination with Levair (sodium aluminum phosphate) in a variety of leavening systems. This combination produces a certain amount of leavening action which supplements the air incorporated by beating the batter. Bench action is low.

Nutritional Benefits
With more emphasis on healthier diets and reducing dietary sodium, the move to reduce sodium in foods can be difficult. Both MCPs are calcium based (17% calcium) and contain no sodium. Thus, ideally suited for use in lower sodium baked goods.

A monocalcium phosphate, monohydrate with very fast action. About 60% of the available CO2 is reacted during the mixing period after liquid has been added. There is virtually no action during the bench period. The remainder of the reaction takes place during baking, Regent 12XX is used in pancake mixes (often combined with Victor Cream or Levair), cookie mixes and angel food cakes. It is also used with other acids in double-acting baking powders and as a bread improver in yeast raised doughs.

This is a coated anhydrous monocalcium phosphate. Each crystal has a slowly soluble phosphatic coating. Liquid added to make the dough or batter must first penetrate the coating and then hydrate the crystal before any reaction with the sodium bicarbonate commences. Thus, a delayed leavening action results. The initial reaction during mixing produces only about 20% of the available CO2. 40-50% more CO2 will be developed during a 10-15 minute bench period. V-90 is used in cake mixes, self-rising flour and self-rising corn meal, pancake and waffles mixes and baking powder.

DCP-D (Dicalcium Phosphate Dihydrate)


As part of the calcium family, DCP-D is a unique and specialized leavening acid. It is never used alone as a leavening acid and is not active during the mix or bench phases, but only when the temperature has reached 135 140 F during the baking cycle. It is used, therefore, to adjust the pH level and provide leavening during the late stages of baking. Its full value as a leavening agent is realized only in products requiring 20 30 minutes baking time. It has a neutralizing value of 33.
