BREAKFAST
Apple Crumble


Ingredients
900g (2lb) Bramley apples, peeled, cored
and sliced
75g (3oz) caster sugar
1 tsp ground cinnamon
For the apple crumble:
175g (6oz) butter
225g (8oz) plain flour
100g (4oz) demarara sugar
175g (6oz) jumbo oats
Method
Preheat the oven to 200C (400F,
gas mark 6).
Place the apple slices, caster sugar
and cinnamon into a large ovenproof
dish.
Rub the butter into the plain flour,
sugar and oats.
Scatter the crumble over the apple
mixture in an even layer.
Bake for 30-35 mins or until golden
and the apples are tender.
Serve your warm apple crumble
with cream or ice-cream for a treat.


STRAWBERRY
CHEESECAKE

UNITED KINGDOM
250g digestive biscuits
100g butter , melted
1 vanilla pod
600g soft cheese
100g icing sugar
284ml pot double cream
EQUIPMENT: 23cm loose-bottomed tin, baking parchment, plastic food bag, rolling pin, large bowl, dessert spoon, chopping board, kitchen
knife, electric mixer, spatula, serving plate, blender or food processor, sieve
1. Make the base: Butter and line a 23cm loose-bottomed tin with baking parchment. Put the biscuits in a plastic food bag and
crush to crumbs using a rolling pin. Transfer the crumbs to a bowl, then pour over the melted butter. Mix thoroughly until the crumbs are
completely coated. Tip them into the prepared tin and press firmly down into the base to create an even layer. Chill in the fridge for 1 hr to set
firmly.
2. Remove the vanilla seeds: Slice the vanilla pod in half lengthways, leaving the tip intact, so that the two halves are still joined.
Holding onto the tip of the pod, scrape out the seeds using the back of a kitchen knife.
3. Make the filling: Place the soft cheese, icing sugar and vanilla seeds in a bowl, then beat with an electric mixer until smooth.
Tip in the cream and continue beating until the mixture is completely combined. Now spoon the cream mixture onto the biscuit base, working
from the edges inwards and making sure that there are no air bubbles. Smooth the top of the cheesecake down with the back of a dessert
spoon or spatula. Leave to set in the fridge overnight.
4. Un-moulding and topping: Bring the cheesecake to room temperature, about 30 mins before serving. To un-mould, place the
base on top of a can, then gradually pull the sides of the tin down. Slip the cake onto a serving plate, removing the lining paper and base.
Pure half the strawberries in a blender or food processor with 25g icing sugar and 1 tsp water, then sieve. Pile the remaining strawberries
onto the cake, then pour over pure.

LUNCH
Cottage Pie

Ingredients
1 tbsp oil
1 large onion chopped
2 medium carrots, chopped
560g/1 lb beef mince
400g/14oz can tomatoes
290ml/10fl oz beef stock
1 bay leaf
fresh thyme leaves from 1 sprig
2 tbsp tomato pure
salt and freshly ground black pepper
For the topping
750g/1 lb potatoes, peeled and chopped
225g/8oz parsnips, peeled and chopped
2 tsp creamed horseradish
75g/2oz butter
55ml/2fl oz milk


Preparation method
1. Preheat the oven to 190C/375F/Gas 5.
2. Heat the oil in a large pan. Add the
onion and carrot and cook over a
medium heat for 5 minutes until soft.
3. Add the minced beef and cook for 3
minutes to brown.
4. Add the tomatoes, pure, beef stock, bay
leaf and thyme.
5. Cover and simmer for 30 minutes. Season.
6. Meanwhile, to make the topping, boil the
potatoes and parsnips in water until soft.
Drain and mash with the butter and
milk. Stir in the horseradish and season
with salt and pepper.
7. Spoon the meat into an ovenproof dish.
Top with the mash and bake for 30
minutes until golden brown.


Ingredients

1 kg (2 lb) mixed root vegetables: carrots, celery, leeks, onions, parsnips, potatoes, swedes, turnips,
etc.
75 g (3 oz) butter or margarine
2 cloves garlic, sliced
bay leaf
salt and pepper to taste
300 ml (1/2 pt) good chicken or vegetable stock
a little grated cheese to garnish (optional)
Method

1. Wash and prepare the vegetables, trimming and peeling where necessary, and slice them.

2. Heat the butter or margarine in a large pan and add the vegetables, garlic, bay leaf, and a little
salt and pepper.

3. Stir well, then cover and cook slowly for 15 minutes, stirring occasionally.

4. Add the stock, bring to the boil, then cover and simmer gently for 30 minutes or until the
vegetables are tender.

5. Remove the bay leaf. Strain the soup, reserving the liquid.

6. Coarsely mash or blend half the vegetables. Add to the liquid.

7. Sieve or liquidize the remaining vegetables until they form a thick puree.

8. Add to the soup, reheat and taste for seasoning.

9. Spoon into individual bowls and serve sprinkled with grated cheese, if wished
Country Vegetable Soup

Prawn Cocktail


Ingredients:

400g cooked atlantic shell-on prawns
4 Little Gem lettuces , washed and trimmed
5 heaped tbsp mayonnaise
5 tbsp tomato chutney
2 tsp Worcestershire sauce
2 tsp creamed horseradish
tiny splash Tabasco sauce
squeeze lemon juice
paprika , for dusting
4 tsp snipped chives


Method:

1. Peel all but 4 of the prawns (reserve these for
the tops). Break the lettuces into individual
leaves, then divide the leaves evenly between
4 small glass bowls.
2. Sprinkle the prawns over the lettuce and
season with black pepper.
3. Mix the mayonnaise, tomato chutney,
Worcestershire sauce, horseradish and
Tabasco together. Season to taste with lemon
juice and salt and pepper, then spoon
sparingly over the prawns. Dust the top with
a little paprika and sprinkle with chives. Top
with the remaining prawns and serve.

Sausage and Mash


Ingredients:
Potatoes,
Butter,
Milk,
Sausages,
Onions,
Stock





Method
1. Boil the potatoes until tender. Meanwhile, grill the sausages for about 10-15 minutes. Put the
onions and stock in a pan and bring to a simmer.
2. Mash the potatoes with a little butter and milk. Season and serve with the sausages and
onion gravy.

MILK RECIPES
Raspberry Trifle

Ingredients
300g can raspberries, drained (reserving
syrup)
425g can custard
300ml whipping cream
60g trifle sponges
1tbsp flaked/grated chocolate to decorate
Method
1. Place raspberries in the base of a trifle
dish.
2. Arrange the trifle sponges around the
edge of the dish.
3. Drizzle 2tbsp of the reserved raspberry
syrup over the sponge.
4. Pour the custard into the trifle dish and
level the surface.
5. Whip the cream until thick and then
spoon over custard.
6. Sprinkle with the flaked or grated
chocolate.
7. Chill for 30 mins and serve.



Making Ice Cream without a Freezer


You need
- Half a cup of flavoured
milkshake
- A large ziplock bag
- A small ziplock bag
- 6 tbsp salt
- Ice
Instructions
- Pour the milkshake in the
small ziplock bag and seal
- Put the ice and salt in the
large ziplock bag
- Put the small ziplock bag into
the large one and seal
- Shake the bags for about 5
minutes
- The milkshake will freeze and
you have ice cream!

Pumpkin pancakes


Ingredients:

pumpkin
mayonnaise, cream
onion, flour
eggs, carrots

Preparation:

Pumkin and carrots are grated both are
then put in the bowl. Add eggs, flour (not
much, to not overwhelm the special taste
of vegetables), onions. Bake the pancakes
that taste perfectly togeather with
cream-mayonnaise sauce.

Fruit juice jelly with cottage cheese cream


Ingredients for the jelly :
300 g cranberry
200 g sugar
3 l water
3 tablespoons of potato starch
Ingredients for the cream:
200g sweet cream
400 g cottage cheese
150 g sugar
Vanilla sugar, lemon bark
Cooking process:
Cranberries are mashed togeather and boiled,
then strained. The produced juice are then
put back in the pot and combined with sugar.
When the liquid is boiling, starch combined
with water is added to the pot.
Sweet cream is mixed with sugar, a pinch of
sugar, a pinch of vanilla sugar and grinded
lemon bark, then it is all mixed togeather.
Wipped cream is then mixed with cottage
cheese.
Bon apetit!

Sorrel soup



Ingredients

Smoked meat
Sorrel leaves
Carrots
Grits
Sour cream
Onion
Potatoes
Eggs
Spices salt, pepper,
bay-leaves



Preparation
Prepare bouillon, add grated and baked
carrots and onions, grits, spices and
boil for one and half hour on low
temperature
Take out the pieces of meat from the
bouillon, take the meat off the bones
and cut the meat in tiny pieces, then
put the meat back into the bouillon.
Add potatoes that are cut in straw form
to the bouillon.
After 15 minutes add cut sorrel leaves
and pepper to the bouillon. Now boil
everything for another 20 minutes.
Finally add cut boiled eggs.
The soup is served with sour cream.

Red beet soup


Ingredients
2-3 boiled red beets
Potatoes, onions, carrots
Meat bouillon, vegetables

Preparation

Add strips of potatoes and baked carrots and
onions to the meat bouillon. Boil for 10
minutes, then add grated beets and boil for
another 15 minutes. The soup is now read. At
serving add sour cream and greeneries. If
needed add salt sugar or viniger.

Sastvdaas:

2 -3 novrtas sarkans bietes
Kartupei, spoli, burkni
Gaas buljons, zuumi


Pagatavoana:

1. Izvrt gaas buljon liek strmelts sagrieztus
kartupeus, olve apceptus burknus un spolus.
2. Visu vra 10 min, tad pievieno sarvtas vrtas
bietes un vra vl 5 min.
3. Zupa gatava. Pasniedzot pievieno krjumu un
zaumus. Pc garas pievieno sli, cukuru, etii.

Potato Pancakes

Ingredients:

Kartupei,
Olas, milti,
Piens,
Sls,
Krjums, ievrjums

Preparation:

1. Peel potatoes. Grate potatoes into a large bowl. Drain off any excess
liquid.
2. Mix in eggs, hot milk and salt. Add enough flour to make mixture thick.
Fry pancakes in the oil. Fry, turning once, until golden brown.
3. Eat with sour cream or red bilbery jam.

Mashed potatoes with sausage. souce


Ingredients

Potatoes,
milk,
butter,
onion,
sausages,
flour, salt, pepper.

Preparation:

1. Peel and cube potatoes . While they are
cooking, chop one small onion and
sausages.
2. Once the potatoes get soft, strain most of
the liquid, add hot milk and butter and
mash everything together. Also
add salt to taste.
3. At the same time, fry the onion and
sausages on small heat. Add flour and
milk. Finally add spices. Sauce is ready!

Potatoes with cottage cheese and herring

Ingredients:
potatoes
Milk, butter
cottage cheese
herring
sour cream
salt, pepper, dill

1. Boil peeled potatoes . While they are
cooking, mix cottage cheese and sour
creame in a bowl, add salt and dill.
2. Once the potatoes get soft, strain most
of the liquid, add hot milk and
butter and mash everything together.
Also add salt and pepper to taste.
3. Serve on the plate mashed potatoes,
choped herring pieces and cottage
cheese. Garnish with herbs.

Milk soup with vegetables

Ingredients

Carrots
Cauliflower
Cabbage
Potatoes
Green peas
Butter
Milk
Spices salt, pepper


Clean and chop potatoes and carrots. Then clean
and cut cauliflower heads into bite-sized pieces
and chop cabbage. Put in the following order
potatoes and carrots , cauliflowers and cabbage
into a pot filled with water. Boil. Add green peas.
Boil and then add milk. Bring to boil again. Add
butter. Let the tastes blend a few minutes. Add
pepper and then salt. Simmer no more than 15
minutes.

GREY PEASE WITH BACON

Ingredients:

Grey peas
300 g of bacon
2 onions
Salt, pepper,
Kefir.


Preparation:
Boil peas until they are soft.
Stir and skim foam from time to
time.
Fine chopped onion and chopped
bacon cubes bake in a pan,
adding salt and pepper.
When the peas are ready, filter in
the sieve and allow to drain the
excess water. Then mix with the
prepared mixture of bacon and
onion.
Serve kefir together with the dish.

GINGERBREAD

Ingredients:

500 g rose hip syrup
200 g butter or shortening
300 g sugar
2 eggs
1 kg flour
spoon soda
1 tablespoon spices (cinnamon,
ginger, cardamon, coriander,
clove)
Preparation: 30 minutes

1. Rose hip syrup, sugar and
butter (or shortening) boil
on low fire.
2. To hot mix add spices, mix
in a half of flour and cool
that.
3. Then add eggs and mix in
other flour, who are mixed
with soda.
4. Gingerbread put into fridge
and let to stay for 1 night.
5. Next day gingerbread roll
up and make different
cookies.
6. Put them into cooker 180C.

PIPARKUKAS

Sastavdalas:

500 g iesala ekstrakta
200 g sviesta vai margarina
300 g cukura
2 olas
1 kg miltu
Nepilna tejk. Sodas
1 edamk.garsvielu (kanelis,
kardamons, koriandrs,
krustnaglinas)

Pagatavosana:30 min.

1. Iesala ekstraktu cukuru un
sviestu (vai margarinu) uz
lenas uguns uzvara.
2. Karstajam maisijumam
pievieno garsvielas, iemaisa
pusi miltuun atdzese.
3. Tad pievieno olas un piemica
parejos miltus, kas samaisiti ar
sodu.
4. Pec tam miklu ievieto
ledusskapi uz vienu diennakti.
5. Nakosaja diena miklu rulle un
veido dazadas formas cepumus.
6. Cep cepeskrasni 180C.

BISCUIT CAKE

Ingredients:

Biscuits
Cottage cheese
Sweet cream
Yoghurt or jam
Fruit, berrries
Jelly candiens
Preparation:
Place the first layer of biscuits on
the plate.
On top of them make a layer of
sweet cottage cheese, that is
mixed together with whipped
cream, them place the next
layer of biscuits.
Between the next layer of biscuits
put fruit yoghurt or jam
followed by another layer of
biscuits, after which the sweet
cottage cheese whip is aded
again, but this time combined
with jelly sweets.
The last layer of biscuits is
decorated with fruit and
berries.
Put the cake in the fridge for 24
hours

Ingredients:

Boiled potatoes
Sausage or boiled meet
bolied carrots
Canned green peas
Pickled cucumbers
Har- boiled eggs
Apple
Sour creame
Mayonnaise
Salt and pepper
mustard



Preparation:

Chop everything in tiny pieces and
mix all ingredients in big bowl.

Add sour cream and mayonnaise
till all the chunks are lightly
covered with it, then add salt,
pepper and mustard to taste.

CHRISTMAS RECIPES
Buccellato from Sicily Christmas sweet
Ingredients:

The dough: 500g flour- 150g butter- 2
eggs-150g sugar- a lump of milk.
Inside: figs jam- nuts- chocolate- raisins-
cinnamon.
Outside: 1 albumen- 100g sugar powder.

Process:


1. Mix all the ingredients how to have a
soft dough. Live it for 30 minutes.
2. Roll out the dough and place the filling.
3. Cook in a hot oven ( 180) for 30
minutes
4. Put on the top the sugar mix at the
albumen and live in the hot oven but
switched off.

Buccellato siciliano

Ingredienti per la frolla:
500g farina 00, 150g burro, 2 uova, 150g
zucchero, poco latte tiepido;

ripieno: marmellata di fichi, noci ,
cioccolato a scaglie, uvette, pinoli,
cannella;

glassa: 1 chiara duovo, 100g zucchero
impalpabile.

Preparazione:
impastare rapidamente tutti gli
ingredienti della frolla. Lasciare riposare
limpasto per 30 minuti. Stendere la
sfoglia, adagiarvi il ripieno e arrotolarla
su se stessa per chiuderla. Tagliare il
rotolo in pezzetti di circa 5 cm. Cuocere
per 20-30 minuti a 180 gradi. Quando
sono ancora caldi distribuire sopra la
glassa preparata precedentemente
montando la chiara con lo zucchero
impalpabile e fare asciugare nel forno
spento.


Recipe of Torrone CHRISTMAS SWEET

Ingredients:
200 gr. toasted blanched almonds t-230
gr. Sugar -2 lemons- olive oil.
Process:
1. Put on the stove over medium
heat in a saucepan with the sugar
to slowly dissolve the sugar.
2. Squeeze in the pan a few drops
of lemon juice and mix well.
3.
Slowly pour the almonds and mix
well.
4. Remove from heat and while still
hot pour the mixture onto a
cutting board with a well-oiled
baking sheet, while the mixture is
still hot with a lemon flatten the
surface (not copper or wooden
spoons since sugar tends to stick
.
Wait until the torrone is cool, cut
in small pieces and Enjoy!

Torrone
Ingrdienti:
200 gr mandorle pelate e tostate -
230 gr. Zucchero -2 limoni olio di
oliva
Procedimento:
Mettere sul fornello a fuoco
moderato una pentola con dentro lo
zucchero, far sciogliere lentamente
lo zucchero
Spremere dentro la pentola poche
gocce di limone e mescolare bene.
Versare lentamente le mandorle ed
amalgamare il tutto.
Togliere dal fuoco e mentre ancora
caldo versare il composto su un
tagliere con la carta da forno ben
oleata, intanto che il composto
rimane caldo con un limone
appiattirne la superficie (non con
mestoli di rame o di legno poich lo
zucchero tende ad attaccarsi.

Christmas Borsch


Stuffing for dumplings;
10 dag dried mushrooms, 3 onions, 5 spoonfuls of oil,
salt, pepper

Dough for dumplings;
50 dag wheat flour, one egg, 3 spoonfuls of olive oil,
one glass of boiling water

Beetroot borsch;
0.5 kg beetroots, 1 medium carrot, 1 medium
parsnip, a piece of celery, 1 medium onion, 3
cloves of garlic, 2.5 l of cold water, 0.5
teaspoonful of citric acid, 2 bay leaves, 6
grains of allspice, 10 grains of pepper, Maggi
seasoning

Preparation
Rinse the dried mushrooms and then soak them
in cold water for one night. Cook the mushroom
in the water for about one hour and a half .
Drain them in a colander and cool them. The
water may be added to cook borsch or to
cabbage with the mushrooms. Peel the onions,
rinse them and chop into thick cubes. Put them
on a heated frying pan until they get light
brown and cool them down. Put them through
the mincer with the mushrooms. If the stuffing
is too watery add some breadcrumbs. Season
the stuffing with salt and pepper to the taste; it
should be spicy.
Sieve the flour and add to it the egg and the
olive oil. Gradually, pour in boiling water
mixing everything with a wooden spoon.
Knead the dough and put it into the fridge for
about one hour. Next roll it out till it is about 3
mm thick. Cut out circles (using a glass) with a
diameter about 5 cm each. Put some stuffing
(about a tablespoon)on each dough round and
fold the dough over, forming a semi-circle.
Press the edges together.
Put the dumplings into boiling and salted
water. When they float to the top keep boiling
for another two minutes Now they are ready
to be taken out. Place them on dishes and pour
in hot borsch.
Peel the celery, beetroots, carrots and parsnip.
Rinse them and chop into cubes. Peel and rinse
the onion and garlic. Add some citric acid to
the cold water and mix it. Next, put the
vegetables into the with salt, pepper and Maggi
seasoning.
The amount of ingredients above will do for
about 10 helpings and about 100 dumplings.

Dumpling soup


Ingredients :
1 chicken about 2 kilos
- 300 g celery root
- 100 g parsley root
- 2 big carrots
- Salt, pepper
- Fresh chopped parsley
Dumplings: 2 eggs, salt, 7-8 spoons of semolina


Way of preparing:

1. Clean the chicken in cold water. Put
it into a large pot and add cold water
(about 4-5 l). Simmer it. Rinse the
vegetables and cut them into big pieces.
Bring to boil. Add 2 teaspoons salt.
Simmer it. Remove the soup foam with a
strainer.
2. Whisk the eggs, add salt and
semolina. Drop the dumpling mixture
into boiling broth. Add fresh parsley and
pepper.

Sup cu glute

Ingrediente: - 1 pui de aproximativ 2 kg
- 300 g elin rdcin
- 100 g ptrunjel rdcin
- 2 morcovi mari
- sare, piper
Pentru glute: - 2 ou, 7-8 linguri de gri.

Preparare:

Puiul curat bine se spal n ap rece. Se
pune intr-o oal mare i se acoper cu ap
rece (cam 4-5 l ap). Se pune la fiert la
foc mic. Se cur i se spal
zarzavaturile, apoi le tiem n buci
mari. Le punem la fiert n sup i
adugm 2 lingurie sare. Supa se
spumeaz cu o lingur cu guri pn nu
mai face spum deasupra.
Se prepar glutele. Se bat bine oule, se
adaug sarea i griul (n ploaie). Se fierb
glutele n supa obinut i strecurat.

Stuffed cabbage rolls

Ingredients: - 500 g minced pork and beef
meat
- 200 g rice
- 1 large onion minced , salt, pepper
- 1 tablespoon paprika
- 1 tablespoon fresh dill
- 2-3 bay leaves
- 1 teaspoon thyme
- smoked bacon
- olive oil
- sour cabbage

Sautee the minced onion with 2 spoons
olive oil. Take off the heat and add
paprika. Add it to a large mixing bowl
together with the meat, rice (previously
rinsed), salt, ground pepper, 1 spoon fresh
dill chopped and mix well. Rinse the
cabbage leaves into cold water and place
the mixture in them and roll. Lay a bed
of sour cabbage and then the stuffed
cabbage rolls and the smoked bacon.
Cover everything with the remaining
sour cabbage. Sprinkle about 1 teaspoon
thyme. Add tomato sauce and hot water
to cover the cabbage. Bring it to boil and
cover it. Serve them with sour cream.

Ingrediente
- 500 g carne tocat amestec porc i vit
- 200 g orez
- 1 ceap
- sare, ulei
- piper dup gust
- 1 lingur boia dulce
- 1 lingur mrar verde
- 2-3 foi de dafin
- 1 linguri cimbru
- costie afumate
- foi de varz murat, varz murat
mrunt.

Mod de preparare:

Ceapa se taie mrunt i se clete n 2
linguri de ulei de msline. Se trage de pe
foc i se adaug o lingur boia dulce. Se
adaug orezul splat i scurs bine de ap.
Se amestec apoi cu carnea tocat i se
condimenteaz dup gust cu sare i piper
mcinat. Adugm dup preferin 1
lingur mrar verde tocat (fiecare poate
aduga dup gust mai mult sau mai putin
mrar). Amestecm componentele pn se
omogenizeaz i eventual mai
condimentm dac e necesar cu sare i
piper.
Varza o desfacem i frunzele le splm n
apa rece. Le rupem pe jumtate i punem
o lingur de umplutur, dup care le
nvelim. In oal aezm un strat de varz
murat splat n apa rece i bine stoars,
aezm srmuele i printre ele buci de
costie afumate. Acoperim totul cu varz
mrunt i deasupra presrm 1 linguri
de cimbru. Adugm bulion i ap cald
ct s acopere puin varza mrunt.
Acoperim oala cu capac. Se d la cuptor
sau se fierb pe ochiul de aragaz. Se
servesc cu smntn.


Pancakes with jam

Ingredients:
- 3 eggs
- vanilla sugar
- 300 g flour
- 200 ml milk
- grated lemon peel
- jam.

Whisk the eggs with sugar. Then add the
flour. Mix with a spoon until the
composition is homogeneous. Add the
vanilla sugar and the grated lemon peel.
Add the milk and mix until the
composition is homogeneous again. Put a
bit of oil in the pan. Pour a ladle of dough

Vegetable soup

Ingredients:

1 onion
3-4 onion threads
of red pepper
of green pepper
1/3 of celery and a few celery leaves
1 little parsnip
2 medium-sized carrots
1-2 vegetable marrows
- 3 potatoes
2-3 fresh tomatoes
- a handful of frozen peas
2-3 fresh tomatoes
- 2 eggs for dressing
Parsley
- sour cream or yoghurt for serving

Way of preparing:


Wash the vegetables and cut them into
small cubes. Heat some oil in a frying
pan. Add the onion, carrots, the celery
and the pepper. Stir them fried for a few
minutes. Add 2 liters of water. Add
salt according to taste. Let the soup boil
over medium heat. When the vegetables
are half-boiled add the potatoes and the
tomatoes cut in small cubes. Towards the
end add the vegetable marrows, the peas
and a few chopped celery leaves (the
celery will give the soup a special
flavour). After removing the soup from
the heat, beat 2 eggs in a bowl. Slowly
pour a ladleful of soup over the eggs
beating continuously. Pour the mixing in
the pot stirring all the time.

Ingredients:
4 thin fillets of chicken breast
3 big eggs
of packet of bread crumbs
6 spoonfuls of flour for dusting

Vegetable oil for frying


Way of preparing:

Ingredients:
2-3 oranges
1 grapefruit
1 lemon

Nuts
Stewed bitter cherries
35 g of whipped cream
Vanilla sugar

Way of preparing:
Peel the fruits and cut them in small cubes. Separately soak the currants in a
little stewed fruit syrup. Cut the nuts into small slices. Gently combine the fruits.
Sprinkle with sugar and 2 spoonfuls of stewed fruit syrup. Cover and chill the fruit
thoroughly before serving.

Ingredients:
1 liter of water
Corn flour (we cannot mention a certain amount of corn flour, it depends

Way of preparing:
Boil the water, adding salt according to taste. When the water boils,
sprinkle the corn flour. Stir continuously until you get the wanted
consistency. Place a layer of mmlig and add cheese. Add sour cream
and then another layer of mmlig. Add cheese again, sour cream and
another lasyer of mmlig.

BOEUF SALAD

Ingredients:


- 2 carrots
- 1-2 roots of parsnip
- 1-2 roots of parsley
- 1 celery
- 3-4 potatoes
- kg beef
- 400 g peas
- 3 sour cucumbers
- 2 bell peppers
- 4 eggs ( for the mayonnaise)
- 200 ml oil
- lemon and salt
Way of preparation:
Cut the vegetables into small cubes. Cut
the meat into small pieces. Put them into
a bowl and add the mayonnaise. Save
some mayonnaise, 1 carrot to garnish the
salad. You may also use a few parsley
leaves for decoration. Keep the salad in a
cool place.
SALAT DE BOEUF

Ingrediente:
- 2 morcovi
- 1-2 rdcini de pstrnac
- 1-2 rdcini de ptrunjel
- 1 elin
- 3-4 cartofi
- kg carne de vit
- 400 g mazre boabe
- 3 castravei acri
- 2 boabe de piper
- 4 ou, 200 ml ulei (pentru maionez)
- lmie, sare.

Mod de preparare:

Se fierbe carnea mpreun cu morcovii,
ptrunjelul, elina, boabele de piper.
Separat se fierb i cartofii. Se taie carnea
i legumele n bucele mici. Se pun ntr-
un bol i se adaug maioneza. Se pstreaz
puin maionez i cteva bucele de
legume pentru decorat. Se poate decora,
de asemenea, cu cteva frunze de
ptrunjel. Salata se ine ntr-un loc
rcoros.
COZONAC

Ingredients:
4 kg of flour
2 l of milk
16 eggs, nuts
1,5 kg of sugar
200 g of fresh yeast
6 spoonfuls of cocoa
Spice (e.g. rummy)
Scraped lemon peel

Cooking:
Leaven 700 ml of milk with the yeast and handful
of sugar. After it rises (yeasts), put the flour
into a large bowl, then add the rest of the hot
milk.
Add the spices. After kneading it, mix it with
the leaven. Mix the yolks with a little salt, so
that they change colour and then incorporate
them easily into the composition.
Whisk the white off eggs together with the
sugar, until it melts. Add the oil little by little.
The better you knead it, the downiest it gets.
Divide the dough in 2 parts. Take a piece out
of each part and spread 2 puff pastes: the one
with the combination of nuts, cocoa, rummy,
vanilla, scraped lemon peel will be rolled over
and then knitted with a simple one. On them
put nuts or Turkish delight and smear with
yolk.
Let them in the tray till they grow and then put
them in the oven (on a low fire at the
beginning) and let there for 1 hour.

Ingrediente:
4 kg fin

Mod de preparare:
Se pun la dospit 700 ml lapte cu drojdie i o
mn de zahr. Dup ce se ridic, se pune
fina ntr-un castron mare, apoi se adaug
restul de lapte cald. Se adaug esena de
vanilie i zahrul vanilinat. Se amestec
glbenuurile cu puin sare, astfel nct
acestea s i schimbe culoarea i apoi se
ncorporeaz uor n compoziie. Se bat
albuurile, mpreun cu zahr, pn cnd se
topete. Se adaug uleiul puin cte puin.
Se mparte aluatul n 2 pri. Se adaug
umplutura fcut din nuci, cacao, rom,
vanilie, coaja de lmie rzuit pe prima
parte.Aceasta parte se impleteste cu una
simpla. Se pun nuci sau rahat pe ele i se ung
cu glbenu. Se las n tav pn cnd crete
i apoi se d la cuptor (la foc mic la nceput).

Chocolate cake
Ingredients: THE DOUGH: - 5 eggs THE CREAM: - 500 ml whipped
cream
- 5 spoons of sugar -3 bars of
dark chocolate
- 4 spoons of flour
- 1 spoon of cocoa THE SYRUP: - 1 cup of
water
- 5 spoons of oil - 1/2 cup of sugar
- rum essence, vanilla extract, lemon
Direction: THE DOUGH: Separate the white of eggs and the yolks. Whisk the white of
eggs with salt, then add the sugar gradually until all the ingredients are blended and
smooth. Add the yolks one by one and mix them very well. Add the oil, the essences
and mix well. Sieve the flour and cocoa. Mix the whole composition with spoon
upwards. Pour it into greased and floured baking dish. Bake it until it makes nice
and brown. Take it out of the oven and let it rest.
THE CREAM: Cut the chocolate to pieces. Put the whipped cream in a thicker
saucepan over low heat so that it does not burn. Add the chocolate and mix with a
wooden spoon until the chocolate melts. Put it in the fridge until it becomes solid.
When it is solid enough beat it with the mixer until it grows and becomes soft. Add
the essences. Make the syrup and let it rest. Cut the baked dough into 3 parts. Put the
syrup on the first dough and then add the cream and dough in layers. Decorate the
cake with colourful whipped cream toppings or as desired.

Ingrediente: BLATUL: - 5 ou CREMA: - 500 ml
fric
- 5 linguri de zahr - 3
ciocolate amrui
- 4 linguri de fin - esene
- 1 lingur cacao SIROPUL: - 1 can ap
- un praf de sare - 1/2 can zahr
- 5 linguri ulei
- esen rom, vanilie, lmie
Preparare: BLATUL: Se separ albuurile de glbenuuri. Albuurile se bat bine cu
un praf de sare, apoi se adaug cte puin zahrul, pn se ncorporeaz tot. Se
adaug glbenuurile pe rnd, amestecnd bine dup fiecare. Se adaug uleiul,
esenele i se amestec bine. Se adaug fina cernut cu cacaoa. Se amestec cu o
lingur de jos n sus. Se tapeteaz o form de tort i se pune compoziia n ea. Se d la
cuptor pn se rumenete uor. Se scoate i se las la rcit. .
CREMA: Se rupe ciocolata bucele. Frica se pune la fiert la foc mic ntr-
un vas cu fundul mai gros s nu se afume. Se adaug ciocolata i se amestec cu o
lingur de lemn pn se topete bine ciocolata. Se d la frigider pn se ntrete. Cnd
este tare se bate cu mixerul pn se umfl i capt o textur de crem fin.Se adaug
esenele. Se face un sirop care se las la rcit. Se taie blatul n 3 pri. Se nsiropeaz
primul blat, se adaug crem, blat, crem, blat i crem. Se orneaz cu fric.
SALTY STICKS

INGREDIENTS:
300 g cottage cheese
2 tablespoons of cumin
900 g white flour
250 g sour cream
250 g of butter
3 eggs
10 g dry yeast

WAY OF PREPARING:
Dissolve the yeast in lukewarm water in a large bowl. Add sugar, flour, sour cream,
2 eggs and stir. Add cheese, cumin and salt. Continue to add flour to make a soft
dough. Knead the composition with your hands on a a lightly floured board for 10
minutes. The dough must no longer stick to your hands.
Put the dough in a bowl. Cover the bowl.. Let rise for one hour in a warm place. Pat
out dough until you get a sheet as thick as a finger. Brush the sheet with egg white.
Cut the sheet in tiny strips and put them in the tray. Bake for 15 minutes.

INGREDIENTE: - 300 g brnz de vaci
- semine de chimen
900 g fin
3 ou
10 g drojdie
250 g smntn
250 g unt.


PREPARARE: Se dizolv drojdia n ap cldu. Se adaug fina, smntna, oule,
brnza, sarea i chimenul. Se amestec pn se obine un aluat moale care nu se mai
lipete de mini.
Se las aluatul s se ,,odihneasc o or. Se ntinde aluatul pn se obine o foaie
de grosimea unui deget. Se unge foaia cu albu de ou. Se taie n fii i se aaz n
tav. Se coc aproximativ 15 minute.

Fruit yoghurt



Ingredients:
250 g plain yoghurt
100 g sour cream
1-2 teaspoonful of honey ( depending
on the sweetness of the fruit )
3-4 ripe apricots
or a handful of bilberries
or any other fruit
Way of preparing
Mash the apricots with the fork
and peel them. Mix the yoghurt with
the sour cream and the honey, then
add the fruit. Pour the whole
composition into a container and
decorate it with fruit.


Iaurt cu fructe



Ingrediente:
250 g iaurt simplu
100 g smntn
1-2 lingurie de miere de albine(in funcie de
dulcea fructului)
3-4 caise coapte
sau o mn de afine
sau orice alt fruct.

Mod de preparare:

Se paseaz caisele cu o furculi i se
indeparteaza coaja. Se amestec iaurtul cu
smntna i cu mierea de albine, apoi se
adaug fructele. Se toarn ntr-un recipient i
se decoreaz cu fructe.

120 g sugar
250-300 g flour
lemon extract
2 packets of vanilla sugar

Way of preparing

Mix the cottage cheese, the eggs, the
sugar, the salt, the lemon extract and the
vanilla sugar until the composition is
smooth. Add the flour gradually. Give a
ball shape to the cheese pancakes and
make a hole in the middle of them. Use a
smaller ball of dough for the top. Fry
them in hot oil. Decorate them with sour
cream and jam.

STUFFED TUNA

Ingredients :

1 Fin beef 1 kilo
4 slices of ham
250 grams of minced meat
2 egg omelette
6 strips of roasted peppers
2 leeks
1 onion
2 cups beef broth
1 glass of brandy
olive oils
salt



preparation :

1. Fill the flap with the slices of ham,
ground beef, and peppers omelet.
2. Roll the piece of meat and tie well with
thread flange to enclose the filling.
3. Fry in pan with a little oil the meat on
both sides. When it begins to brown add
the chopped onion, carrot, leeks, brandy,
beef broth and a little salt.

Aleta rellena


Ingredientes
(Para 4 personas)

1 aleta de carne de ternera (aleta
2 puerros
abierta) de 1Kg. aprox. 1 cebolla
4 lonchas de jamn serrano 2 vasos
de caldo carne
250gr de carne picada de ternera
1 copa de brandy
2 huevos en torrilla francesa aceite de
oliva
6 tiras de pimiento asado sal
1 zanahoria



Preparacin

1. Rellena la aleta con las lonchas de jamn,
carne picada, la tortilla francesa y los
pimientos.
2. Enrolla la pieza de carne y tala muy bien
con hilo de bridar para que no se salga el
relleno.
3. Dora en la cazuela, con un poco de aceite,
la carne por todos los lados. Cuando
empiece a coger color, aade la cebolla
troceada, la zanahoria troceada, los
puerros troceados, la copa de coac, el
caldo de carne y un poco de sal
4. Tapa la cazuela y djalo cocer
aproximadamente 1 hora.
5. Saca el rollo de carne, destalo y djalo
enfriar un poco antes de cortarlo en
rodajas.
6. La salsa resultante se tritura y se sirve con
la carne.

(CODFISHs CAKE)


- Ingedients for 4 peoples:
2water glasses of rice; 250 gr of desalated
codfish and shered; to cut in juliana
red pepper; to cut in juliana onion; to
cut 2 cloves of garlic into sheels; cut 2
potatoes into pieces; litre of water; 2
tablespoonfuls of olive oil; salt and
saffron.
Typical dish in the Extremadura region of
Spain, for Lent.

- Preparation:
To saut red pepper and onion for 4-5
minutes. Add garlic and sout the mix
until the vegetables are poached. Add
potatoes pieces, salt and saffron and
sout 3 minutes. Add litre of water. To
cook on low flame for 5 minutes.
Next, add codfish and rice, to mixture,
and to cook on low flame for 15 minutes.
Let the rice sit for 5 minutes. The rice
may be soggy.

ARROZ CON PATATAS Y BACALAO
(PASTEL)

- Ingredientes para 4 personas:
2 vasos de arroz; 250 gr de de bacalao
desmenuzado, desalado; pimiento rojo
picado en juliana; cebolla picada en
juliana; 2 dientes de ajo en lminas; 2
patatas troceadas; litro de agua; 2
cucharadas soperas de aceite de oliva; sal
y azafrn.
Este plato es tpico en Extremadura en
Cuaresma.


- Preparacin:
Sofrer el pimiento rojo, la cebolla y el
ajo. Una vez pochadas las verduras, se
aaden las patatas troceadas y una
pizca de azafrn, se sofre todo durante 3
minutos y se aade el medio litro de
agua. Cocer durante unos 5 minutos, a
fuego lento.
A continuacin se aade el bacalao en
trocitos, el arroz y se sala al gusto.
Cocinar durante 15 minutos, y se deja
reposar. El arroz debe estar caldoso.

Ingredients :

1 kilo of potatoes
1 egg
50 grams of flour
10 grams of parsley

PATATAS A LA IMPORTANCIA CON
JAMON SERRANO


Ingredientes:
1 Kilo de patatas
1 huevo
50 gramos de harina
10 gramos de perejil
200 gramos de jamn serrano
de cebolla
de pimiento rojo
1 diente de ajo
1 vaso de agua
1 vaso pequeo de vino blanco, o
coac
4 cucharadas de aceite de oliva
Sal al gusto

Modo de preparacin:
Se pelan las patatas y se lavan, se
cortan en rodajas ms o menos de 1
cm, se rebozan en harina y huevo, se
fren en aceite en una sartn a fuego
lento. A continuacin cuando estn
fritas se aaden a una cazuela. En el
mismo aceite de frer se fre la cebolla
,el ajo, el jamn serrano y el pimiento
rojo ,se aade un poco de harina para
espesar, una vez espesado se aade el
vaso de vino y el vaso de agua. A
continuacin se echa el sofrito a la
cazuela de las patatas y se cuecen
durante treinta minutos, para
terminar se espolvorea por encima de
las patatas un poco de perejil y listo.

BAKED SEA BASS



Ingredients :

2 SEA BASS
4 Garlic
2 Potatoes
1 onion
1 Chilli
salt
vinegar
Olive oil

preparation :

Ingredientes:
2 lubinas
4 ajos.
2 patatas

horno a 180 (5 o 10 minutos).
En una bandeja trocear cebolla y patata
en rodajas, poner encima el pescado y
meter lo al horno durante media hora
con un chorrito de aceite.
En una sartn, poner el ajo laminado,
una guindilla y cuando el ajo este dorado
un chorro de vinagre.
Sacar las lubinas del horno, abrirlas por
la mitad, quitar la espina, echar el sofrito
por encima y meter al horno 10 minutos
para calentar.

dejndolo hasta que se evapore
