FINAL PROJECT

DESIGN A SMALL BREWERY

Project Goals
Get a little experience doing a common
Engineering task: Laying out and sizing a new
production facility.
Make a plan view of the production facility
and arrange the equipment in a logical
fashion.
Locate and size commercial industrial
equipment.

Brewery Space Requirements:


Average production brewery with bottling=1.25-1.75
SF/BBL/Year
Minimum production brewery start-up size
requirements: 5,000 square feet industrial space with
20' ceilings, loading dock, good truck access, 3 phase
power, city gas main
Average pub brewery plant with in-house sales
only=.06-1.0 SF/BBL/Year (not including restaurant)
Minimum brewpub size requirements: 3,000 square
feet in retail area with ample parking and/or high foot
traffic

A few things to note:


1. The brewhouse, liquor tanks, fermentation
tanks, and bright tanks are all stainless steel for
easy cleaning (CIP & Washdown) and should be
separated from the rest of the equipment.
2. Packing machines also get washed down.
3. Mill is not washed down and needs fork truck
access.
4. Utility equipment should be isolated from the
rest of the line and away from the water.
5. You want good flow from the grain entering to
the packaged goods leaving.
