CLEANING OF ROOMS
The room door is to be opened after knocking.
Draw back the curtains.
First the most dirty items should be cleared so that the smell gets submerged before that

guests arrival, clean the dustbin and damp-wipe then dry the ashtray.
Proceed to clean the room further.
General dusting of the room is done.
The water thermos or jug is washed, dried and covered with glass cover (polythene).
Water jugs, which have become dirty are cleared in the following way fill some tissue
paper in the jug, then fill it with hot water, cover the jug and shake it. The jug becomes
spotlessly clean form the inside.
Then make the beds as follows fist strip the bed. Then beck up the bed sheet, blanket, top
sheet and mattress protector. Dust the bed. Then lay the bed sheet and tuck form the head
side making envelopes on both sides. Then lay the top cover, blanket protector and fold
them together making envelopes on the sides. Finally place he pillows and bed cover on
top.

Cleans the mirrors with Colins glass cleaner.


Removes all dirty linen.
Damp-wipes the tub and soap case and cleans the shower curtains.
Opens the cover of the bath closet, cleans it, flushes it wipes the sides.
Cleans the bathroom tumbler near the basin and the area around the
vanitary unit.
Replenishes the bathroom supplies
2 bath towels, 2 hand towels, 2 face towels, 1 large soap near the tub,
2 small soaps near the basin, 2 toilet rolls, 1 bath mat, 2 disposal bags, 2
shampoo, 2 foam bath, 1 moisturizing lotion, one health club ten card, 2
tumbler glasses, 1 shower cap, 1 packet of tissue paper, 1 ash tray and a
match box.
In suite, which have an extra shower, area in addition to the abovementioned supplies 2 bath towels and 1 large soap is also provided.

KEYS AND KEY CONTROL

LINEN ROOM
It is here that all the linen forms all the floors and F&B outlets are

exchanged for fresh ones. It is also here, where all he linen form the
various areas of the hotel is stored.

Checks the attendance of the linen room attendants.
Maintains various records used for control of stock.
Take inventory.
Estimate the cost of new stock of linen required. This information is
conveyed to the executive Housekeeper for his approval.

The laundry in Crowne Plaza is a huge, catering to the

guests in house as well as the hotel staff.


Here all the linen is washed and then dry-cleaned according
to the guests request. The wash loads are divided according
to these three categories, which decide the amount of water,
detergent, bleach, and the temperature of the water is
decided

AREA: The laundry is located in the basement level B2 in
between linen and laundry room.

INDIAN KITCHEN
This section is the main kitchen which is responsible for the preparation of all

Indian dishes. It caters to the requirements of Coffee Shop, La Rochelle, Room


Service and Banquets. The kitchen is divided into 3 parts,

A la carte section: this section responsible for the preparation of the dishes
on the menu of coffee shop and room service and is also responsible for the
preparation of the lunch buffet for La Rochelle. The section is further divided
into south Indian section and Indian section .

Tandoor section: This section is responsible for the preparation of the all

Tandoor items. Its basic function of the morning includes supply of breads to
La Rochelle.

TANDOOR:
Tandoor is a very important and busy section as it provides the

Indian breads and the tandoori in this section two tandoor are
fixed which are made of clay, one service counter and one in
table is provided. The various types of Indian breads are;

BAKERY
The bakery consists of a twin room enclosure called the confectionery

and the bakery (The place where all the baking is done) with its own
walk-in and deep freeze. It is the place where the preparation of Cakes,
Breads, Pastries, and Tarts etc takes place. It provides a large variety of
desserts and beverages for the benefit of the guest. Its sales are done
through its outlet christened 'THE GOURMET SHOP'. It is a guests
delight to be in the outlet which brings into combination one of the best
products with the hospitality of the staff at work. The bakery provides
service to Coffee shop, Room service, La Rochelle, Butler pantry,
Banquets, Pastry shop & all specialty kitchens.

COLD SALED SECTION

CONTINENTAL KITCHEN
As the name clearly indicates, it is responsible for the preparation of all

continental dishes and their service to outlets such as La Rochelle,


Room service and the banquets. This section is divided into 2 parts.

Hot Range.
1. Soup Section: This is the section preparing all types of soups for all
banquet functions and restaurants. The section has one chef working,
who prepares all the soups. Everyday about 7-8 soups are prepared
excluding the party soups and the quantity produced is 150 cups of each
soup daily. This section also prepares stocks of different type for use in
soup section as well in any other part of kitchen as required. The
section gets the raw materials en daily requisition basis to stores and
butchery. The soup prepared everyday includes.

RECEPTION

This is the first section where the guest comes in contact with the hotel
employee. It is also located in the Front Office and it deals with some functions,
the main one being checking in or allotting rooms for individuals or groups.

When the guest arrives at the hotel, he first approaches the Reception
counter to give in his name if he has a reservation. If the guest has booked a
card is printed and kept ready, with all the details.

In the case of a walk-in, the receptionist fills out the registration card and
checks the computer for vacant rooms. The receptionist checks up with the
assigned rooms report also to ensure that the room allotted is vacant. The keycard is filled up and the appropriate key is placed in the card and handed over
to the hotel. For registration, everything is done on the computer. Hence,
manual labour is saved an as the guests check-in and are billed directly through
the computer as the entire hotel operations runs on computers.
