History
Ajinomoto was a member of the Lysine price fixing
cartel in the mid-1990s. Along with Kyowa Hakko Kogyo,
and Sewon America Inc., Ajinomoto settled with
the United States Department of Justice Antitrust
Division in September 1996..
You may remember when the MSG powder called
Accent first hit the U.S. market. Well, it was many
decades prior to this, in 1908, that monosodium
glutamate was invented. The inventor was Kikunae
Ikeda, a Japanese man who identified the natural flavor
enhancing substance of seaweed.

What is Ajinomoto?
is also known as monosodium glutamate,
commonly referred to as MSG, and it is a type of
sodium salt that has been linked to various
adverse reactions. This type of salt is commonly
used in Chinese food dishes and numerous other
applications, like barbecue sauces and various
frozen and canned foods.
Importance of Ajinomoto
M.S.G is also known as Ajinomoto or Mono
sodium glutamate. It is the salt version of glutamic
acid. Glutamic acid is one of the
most important type of amino acids that make up
a protein molecule. It is a non-essential amino
acid and the brain uses glutamic acid as a
neurotransmitter.
Benefits of ajinomoto
.After consumption of MSG, some symptoms
have noticed and they are headache,
Flushing, Sweating, Sense of facial pressure
or tightness Numbness, tingling or burning in
or around the mouth, Rapid fluttering
heartbeats (heart palpitations), Chest pain
Shortness of breath, Nausea, Weakness, etc.
More amount of MSG may cause arterial

dilation widening of arteries.


Uses
Ajinomoto has its own unique flavor, that brings
a savory kind of taste in the recipes.
MSG enhances the natural taste of any recipe

by developing a natural ripening process that


brings out its full flavor.
Various Chinese recipes such as fried rice,

Manchurian, chicken 65, etc are flavored with a


pinch of ajinomoto.
Storage
MSG must be stored at cool, dark
and dry place.
It has a very good shelf life and can

be stored for 4-6 months in air tight


container.
Process
Disadvantages

Headaches: Headaches
are a common side
effect of MSG. But this is
only a small issue. It can
also develop into a
migraine that can cause
severe problems. Not
only does the head ache
terribly, but this can also
become a repetitive
feature.
Affects Nerves
Nerves are also
affected with
repeated
consumption of
MSG. Health effects
of Ajinomoto go on to
cause numbness,
tingling or burning
sensations in the
face and neck.
People often feel
drowsiness and
weakness too.
Not good for women
and infant: Sterility in
women has also been
linked to the
consumption of
Ajinomoto. It has often
been said that a
pregnant lady should
avoid foods containing
MSG. Also, all food
items containing MSG
carry a warning that
they are unsuitable for
infants. A warning of this
nature would not be
issued without any
cause.
