Definition:
Hazard:
- A biological, chemical, or physical agent that is
reasonably likely to cause illness or injury in
the absence of its control
Definicin :
Peligro:
- Un agente biolgico, qumico o fsico que es
razonablemente probable que cause
enfermedad o lesin en ausencia de su control.
Food Safety Hazards
Food Safety Hazards can be categorized into the following
three types:
1. BIOLOGICAL Hazards:
bacteria, viruses, parasites
2. CHEMICAL Hazards:
pesticides, sanitizers, lubricants,
naturally-occurring toxins
3. PHYSICAL Hazards:
plastic, glass, metal
Riesgos de seguridad alimentaria
Los peligros de seguridad alimentaria pueden clasificarse
en los tres tipos siguientes:
- Foods can contain biological hazards. These hazards can come from
raw materials or from food-processing steps used to make the final
product.
Examples:
Salmonella, hepatitis A and trichinella
