Definition:
Biological hazards pathogens
- Viruses do not need any food, water or air to survive. They cause
illness by infection. They can survive in contaminated water and
frozen foods at very low temperatures.

Fungal/Parasitic Hazards
- Parasites and fungi are organisms that need a host to survive.
- They are the least likely of the biological hazards to affect the
produce with a possibility of only 20% of the entire pathogenic
family found in food or water
- There are two types of parasites that can infect people through food
or water: parasitic worms and protozoa. Parasitic worms include
roundworms (nematodes), tapeworms (cestodes) and flukes
(trematodes). Protozoa are single-cell animals, and most cannot be
seen without a microscope and include cryptosporidium parvum,
toxoplasma gondii and giardia lamblia
