INTRODUCTION TO GALLEYS

The galleys are the KITCHEN AREA of the aircraft. They are used to
prepare food and drink for consumption during flight. Galleys range from
simple FOOD DISPENSERS, which can store cold meals, to the FULLY
fitted galleys on large aircraft which incorporate OVENS and
REFRIGERATORS. The number of galleys and their positions will depend
on aircraft type and passenger capacity.

GALLEY CARTS or SERVICE CARTS are used to deliver


meals from the galleys to the passengers and to take away
the waste and empty food trays after meals.

-Storage locations for trolleys & carts
-Electrical appliances
-Beverages makers
- Ice makers
- Water supply (hot and cold)
- Water heater
- Trash compactors
- Lighting
- Interphone system
- Fume extraction system
- Water waste system
- Toasters etc
- Screen Curtains
- A means of chilling cold cupboards
(usually provided by a vapor cycle
chiller unit located near to the galley)

AIRCRAFT GALLEYS The electrical power for the galley is


supplied by the aircraft electrical system
GALLEY CONTROL SWITCHES (28v DC). The galleys take a HIGH
PERCENTAGE of the total electrical
system power requirement. Besides
having its own control switches at the
galley unit itself, and because of the high
electrical current drawn to power all the
galley services, they can normally also be
turned off by the galley MASTER SWITCH
situated in the Flight Deck.

This master switch can be used by the


pilot to OFF LOAD the galleys should an
electrical power failure problem occurs.
This will conserved the electrical power for
the aircraft essential services.

Most larger and modern aircraft will have a LOAD SHEDDING SYSTEM,
which is automatic in use, e.g. if an electrical generator fails, then the
non-essential loads powered by the generator will be shed, this will
include the galleys. For this reason part of the galley is fed from a
different electrical power source to ensure that not all galley services
will be lost though an electrical malfunction.

GALLEY POWER SUPPLY- IMPORTANT NOTES


Use a considerable amount electric, have their own feeder circuits that will be
LOAD-SHED automatically in times of high current demand.

Power supply (28v DC) may come direct and provided through Electric Load
Control Units (ELCU) which measures the current being drawn by the galleys
and prevent overload.

The ELCU also act as a switch to remove power to the whole galley assembly
should aircraft power consumption become too high.

Have an electric distribution panel accessible from the front of the galley
i.e. allows for individual isolation of ovens by Circuit Breaker action.

This panel has a LIGHT to indicate that power to the galley is ON.

All system have control switches and are located close to the galley, where a
Master Isolation Switch is also provided for both electrical and water supply.

BASIC AIRCRAFT GALLEY 1) The basic aircraft galley shown is a typical


for the 40-60 passenger seated aircraft.
Meals prepared in trays are loaded into slots
in the food tray containers. During take-off
and landing the RETAINING BAR is fitted
over the doors to prevent accidental opening.

2) As the meals are required, the trays are


inserted into the heatable containers until
they are heated to the required temperature
and are than issued to the passengers.

3) All the control switches (with exception of


the Galley Master Switch) are placed on the
galley, including the thermal circuit breakers,
which are connected with the hot cup and
heatable container protection circuits.

BASIC AIRCRAFT GALLEY


4) A thermostatically controlled hot cup
provides hot water for beverages. It is
filled from a water tank installed directly
above it. The hot cup can be filled without
removing it from its shelf by turning the
water tank valve on the water tank.

5) Galley waste is placed into a disposable


bag via a hinged cover on the work
surface of the galley. The bag is removed
after each flight through the waste bag
access panel and a clean bag refitted
ready for future use.

Galley are located onto and bolted down to the seat tracks, in a manner not dissimilar
to seats. In addition, TIE RODS are attached between the top of the galley and the
aircraft fuselage.

Special precautions are taken to prevent


CORROSION occuring under the galley
area. Many galleys are mounted on the
seat rails with specially sealed attachment
devices.

Galley floors are SEALED and may have


gutters around their periphery. The gutters
are drained by DRAIN LINES leading to the
overboard lines.

The galleys are braced using TIE RODS


incorporating moisture collectors.

GALLEY CHILLERS
The refrigerators used in the galleys are known as GALLEY CHILLERS. They
supply a CONTINOUS FLOW OF COOL AIR to the galley.

The cold air leaves the chiller at about 0`C and passes through a duct system
to the galley. The cold air is ducted to the MEAL TROLLEYS when they are
stowed under the galley work surface. This ensures that the meal trays and
their contents remain FRESH prior to heating. Cool air is also ducted to the
DRINKING WATER OUTLETS around the aircraft and to cool boxes in the
galley.

The chillers are usually installed under the galley floor. The cool air is ducted
through the floor and after cooling the required area, the air is drawn back
through the chiller to be cooled again. The galley air chiller is a small VAPOUR
CYCLE COOLING SYSTEM (VCCS)

(VCCS)
1)It is controlled and switched on from
the Galley Control Panel

2) The FAN MOTOR drives two fans:


- 1st FAN: Draws air from the cold
cupboard, and after cooling, passes it
back to the cold cupboards in the galley.
- 2nd FAN: Draws in ambient air to act as
a heat sink from the condenser (cools
the condenser), it is discharged
overboard.
3) Chiller air is drawn across the
evaporator and cooled by heat transfer
to the refrigerant (Freon/similar) and
passed back trough the ducting to the
cold cupboards.

4) VCCS relies on the principles


that as the refrigerant changes
state from LIQUID to GAS (from the
chiller air) A timer operates the
VCCS in 10 MINUTES cycles.

5) If at the end of the cycle, the


temperature of refrigerant is less
than 26`F ( -3`C), then AUTOMATIC
DE-FROST is initiated, this involve
the fan being shutdown and the
hot gas by-pass valve being
opened. De-frost stops when the
temperature reaches 4`C.

6) Some chiller may be shut down
when the Cargo Fire Extinguisher
System is armed.

7) To help REDUCE the noise


levels from chiller, they are
mounted on Anti-Vibration Mounts.

8) Maintenance of the chiller unit is


confined to checking for security,
leaks, damage and correct
contents level

AUTOMATIC SHUT DOWN of VCCS


is initiated if any operating
parameters are exceeded :

1) Refrigerant temperature is higher


than 54C.

2) Refrigerant pressure is higher


than 300psi

3) Refrigerant pressure is lower than


05psi

4) Compressor is over - temperature.

GALLEY CARTS

The catering trolley, or GALLEY CART is used to carry pre-


heated meals on trays, to the passenger seats. Prior to the
meals being heated in the galley ovens, the trolleys keep
them cool using cold air from the galley chillers.

GALLEY CARTS
All the trolleys are similar in construction, differing only in their internal fittings and
access door. The box is made from ALUMINIUM HONEYCOMB and is supported on a
CHASSIS fitted with castoring rubber tyred wheels. The trolleys is designed to fit
between the seats on either side of aisles. HANDLES at either end of the trolley allow it
to be moved along.

The wheels are braked when the trolley is stationary by RED COLOURED foot operating
brake pedals at either end of the trolley. The breaks are released by a GREEN
COLOURED pedals.

GALLEY CARTS -MAINTENANCE


Before each flight, the Galley Trolleys are inspected as follows:

1.Ensure that the DOOR LOCKS work properly.

2.Check that the brakes can be applied and released properly.

3.Inspect for any signs of damage.

4.Ensure that the wheel castors function properly.

5.Ensure that the trolley is secured in the storage area and ensure that the
trolley WASTE CONTAINER is capable to contain fire during emergency.

Check restraining cable for security and attachment, the spring tension and
the serviceability of the hook (if fitted).

TRASH COMPACTOR

- is a large press that squashes the trash to reduce its volume. If this is
not fitted, the galley will have a simple bin arrangement that has a
hinged top access panel.

BEVERAGES MAKERS

- are installed to brew hot drinks. Electrically powered, with a supply of


potable water. Have lights on the front the indicate LOW WATER and
system ON.

GALLEY LIFTS
1) Available normally on double-deck aircraft e.g.
B747-400, B787 Dream-liner, Airbus 380. Purpose
is to allow the carts (Service Trolley) to be loaded
on the Lower Deck and then transported to the
Upper Deck galley.

2) On a B747 aircraft, the lift is driven by two


motors that drive a vertical screw jack. The lift is
attached to this by way of ball nut assembly that
allows the lift to be lowered and raised between
floors. The micro switches prevents the lift from
moving unless the door is closed.

3) Mechanical Locks will prevent the access


door to the lift shaft from being opened
unless the lift is in front position .

1) Installation is on the Right-Hand


side forward passenger cabin
before the cockpit door and
adjacent to the toilet door.

2) Oven is fitted on top and the


water heater at the bottom.

3) The CONTROL PANELS are at


the topmost and the middle of the
installation.

OVEN AND WATER HEATER The WATER HEATER SYSTEM consist


of:
Water heater that slides into a
holder and simultaneously
electrically connects to the power
supply via two pins located at the
back of the water heater.

A Water Heater On-Off switch,


power light (amber) and fuse on the
lower control panel.

A Water heater temperature


select rotary switch fitted on the
lower control panel.
Then power is routed through a
fuse and a switch on the oven lower
control panel

OVEN AND WATER HEATER The OVEN is fitted with a fan and heater
with a timer and heater control. The oven
system consists of:
Oven with a side opening door
and electrically connected via a
connector at the rear.
A two position Galley On-Off
Switch on the P4 panel.
A two position Oven On-Off
Switch, power light (amber) & fuse on
the lower control panel
A Power On Light (Red) and
Timer Select Rotary Switch on the
upper control panel.
A Heater On Light (Amber) and
Temperature Select Rotary Switch on
the upper control panel.

OVEN OPERATION
1) The oven is switched on by putting the galley two position (On-Off) switch on P4 to ON.

2) The oven two position (On-Off) switch on the Lower control panel is selected ON And
the power light illuminates (amber).

3) The Power On red light on the left-hand side of the top control panel will illuminate
when the timer rotary switch is selected. The timer may be selected up to 60 minutes of
oven operation and is graduated every minute. 0, 10, 20, 30, 40 and 50 minutes are
marked.

4) Heating amber light on the right hand side of the top control panel will illuminate when
the temperature rotary switch is selected, temperature may be selected up to 450
degrees and is graduated every 50 degrees. 150, 250, 350 and 450 degrees are marked.

5) The oven is switched off by selecting the oven switch on the lower control panel to
OFF

WATER HEATER OPERATION

1) The water heater oven is switched on by putting the galley


two position (On-Off) switch to ON.

2) The water heater two position (ON-OFF) switch on the lower


control panel is selected ON.

3) The Temperature Select rotary switch rotated to the desired


temperature. And the power light illuminates (amber).

4) The water heater is switched off by selecting the water heater


switch on the lower control panel to OFF

OVEN AND HEATER MAINTENANCE PRACTICES


The water heater is removed/installed by sliding in or out from the holder.
Oven removal / installation is carried out by removing a cover panel located
in the toilet (4 bolts)

AIRCRAFT GALLEY - MAINTENANCE


1.Ensure that the galley area is clean and any spillages cleaned up.

2.At intervals specified in the Maintenance Schedule, through checks must be


carried out in the galley area for signs of corrosion and damage.

3.The lids of hot liquid (over 45`C) containers must fit securely.

4.Ensure the serviceability of all door hinges, catches and restraints.

5.Ensure galley and trolley placards are clear and readable.

6.Ensure waste containers close properly so that they can contain any possible
fire. This includes the waste containers on catering trolleys.

7.Ensure catering trolley restraints are serviceable.
