• This project will discuss the overall
production process in Sate Kajang Hj
Samuri carried out in its factory
located in Bandar Baru Bangi.

• Sate Kajang Hj Samuri factory is

involved in the processing and
preparation of the finished product
for distribution to Sate Kajang Hj
Samuri restaurants, outlets and
hotels.
• Sate Kajang Hj Samuri production process
adopted the Good Manufacturing Practice
(GMP) Guidelines in its production process.
GMP Guidelines
• GMP is a production and testing practice
that helps to ensure a quality product.

• Although there are a number of them, all

guidelines follow a few basic principles:
 Manufacturing processes are clearly
defined and controlled.
 All critical processes are validated to
ensure consistency and compliance
with specifications.
 Manufacturing processes are
controlled, and any changes to the
process are evaluated.
 Instructions and procedures are
written in clear and unambiguous
language.
 GMP Guidelines
• GMP guidelines are not prescriptive instructions
on how to manufacture products.
• They are a series of general principles that must
be observed during manufacturing.
• When a company is setting up its quality program
and manufacturing process, there may be many
ways it can fulfill GMP requirements.
• It is the company's responsibility to determine
the most effective and efficient quality process.
• Some of the GMP requirements that
Sate Kajang Hj Samuri has to fulfill
are the guidelines on the handling of
the matters below:
 Guideline for employees in
conducting their duties
 Guideline at the point of
receiving raw materials
 Storage guideline
 Defrosting of meat guideline
 Processing guideline

• The type of production processing carried out in Sate

Kajang Hj Samuri is product-focused using a system that is
dedicated to only producing one product that is sate.

• This form of production is called process manufacturing

which is common in food industry.

• The type of production process in Sate Kajang Hj Samuri is

labour intensive, whereby majority of the processes are
reliance on its labour force.

• The main production process that are involved in the

processing factory of Sate Kajang Hj Samuri are as follows:
 Chopping Process
 Mixing Process
 Skewering Process
 Production Process
• The flow of these processes are conducted in
a production factory as illustrated in the floor
plan diagram below.
