Introduction India is the second largest producer of fruit in the world. Banana (Musa acuminata) is the second most important fruit crop in India after mango. Banana fruit is a delicate highly perishable fruit, whose production is subjected to serious postharvest problems including premature ripening, losses due to diseases, mechanical damages such as bruising, poor quality due to inappropriate ripening environments and losses in different markets due to its limited shelf life (Deka and Choudhury, 2006) • Research objectives: to know the influence of blanching on the characteristics of dehydrates sliced dried raw bananas at different temperatures. • Background: India is the second largest fruit producer in the the world, for example bananas. Banana (musa acuminata) are plants the second important fruit mango. • Subject of research: green bananas (Musa acuminata) Technique data collection Sample preparation, green bananas which will be used is obtained from the market as raw material. Prepare a tool to be used, the various tools used to research from beginning to end i.e. slicer used to cut bananas into slices. Mixer or blender to mix food products. Tray dryer to remove moisture from the banana slices of pale. The screen for the separation of the fiber and pulp of banana starch solution used. Research result The results of this research show the influence of blaching on the levels of water and dehydration of raw sliced bananas. Comparison of water content of flour banana varieties showed significantly h igher during the blanching temperature 50.
