Farmers began to mix the vitamin into chicken feed, which traditionally struggled to
stay alive during the winter months, fairly healthy year-around
The family chicken flock soon became a welcome source of income small farms

Hens were housed in elevated cages to improve production efficiency as well as
sanitary condition through organization and ventilation
Today
The cage system has replaced the farmyard flock as the source of most commercial
chicken eggs

Grading and Sizing
• Egg grades
AA
- Always handle eggs with eggs with clean hands to avoid any cross contamination
- Crack them into a bowl before adding them into a pan or to other ingredients (inspect them for
freshness)
- A fresh egg will have a tight white and a plump, bright yolk
Storage
- Refrigerate eggs at 40oF or below (35 – 38 F) in their carton to prevent them from absorbing odors or
coming in contact with bacteria
- Store them large end up and keep them on a refrigerator shelf rather than in the egg holder on the
door where the temperature can fluctuate
- For the best quality, use them within 3 weeks of purchase
