Los aceites y las grasas son sustancias de origen vegetal o animal que consisten predominadamente en
mezclas de esteres de la glicerina con los acidos grasos, es decir, triglicéridos. En general el termino
grasa se usa para referirnos a los materiales solidos, a temperatura ambiete; mientras que aceite se
refiere a los que son liquidos en las mismas condiciones.

Comienza con la molienda de la aceituna. En

la actualidad se empleen cilindros metálicos
que actúan por compresión. El grado de
uniformidad de la molienda y elevar su
temperatura hasta unos 28°C – 34°C
favorece a que la pulpa se rompa un poco
mas y continúe liberando gotas de aceite
(dilacerado).

3. Proceso de extracción
La pasta ya batida es centrifugada por
procedimientos mecánicos. Exige de una
tecnología capaz de separar decantar el
aceite por acción de la fuerza centrifuga.
Este sistema emplea tecnologías mas
limpias, ya que la maquina es de acero
inoxidable no permanece tanto tiempo en
contacto con el subproducto y los residuos
del proceso, el rendimiento industrial es
mas elevado.

 4. Proceso de refinación

Tiene como objetivo, hacer comestibles los

aceites vírgenes no aptos por su acidez o
por sus características organolépticas y los
provenientes del aceite de orujo. El grado de
acidez libre que presenta unido a aquellas
sustancias naturales como aldehídos,
alquenos, butenos… lo hacen poco
comestible y es necesario refinarlos.
