Salt's ability to preserve food was a foundation of civilization. It eliminated the dependence on the seasonal availability of food and it allowed travel over long distances. However, salt was difficult to obtain, and so it was a highly valued trade item, which followed the pull of economics along salt roads such as the via Salaria in Italy. Today salt is almost universally accessible, relatively cheap and often iodized.

Commodities and Attributes


Salt was so important a commodity in ancient times that it was often used as money! Words and expressions reflecting the former importance of salt include salary, safety, soldier, and worth ones salt, as well as the modern Hebrew words for war and peace. Salt became a relatively cheap commodity during the Industrial Revolution, when efficient methods for mining salt were developed. The chemical composition of pure salt is NaCl aka Sodium Chloride. Iodized Salt : A form of table salt, iodized salt is


fortified with iodine that was lost during processing. This is used for gioter (hyperthyroidism) that was caused by iodine deficiencies.

evaporated from a brine, usually under specific conditions approved by the Orthodox Jewish faith. It contains no additives or added iodine.

Sea Salt : Available in both fine and coarse grains, sea


salt has become increasingly available in markets but at a higher cost than table or kosher salt.

Rock Salt : Sold in large crystals, rock salt has a


grayish hue because it is unrefined. Rock salt makes a great bed for serving oysters and clams. Or combine it with ice to make ice cream in hand-cranked ice cream makers.

Salt substitutes
Salt is not a healthful option for everyone.
