Dans le cadre des activits du Rgime pour lApplication de Normes
Internationales aux Fruits et Lgumes* cr en 1962 par lOCDE, des brochures sont
publies sous forme de commentaires et dillustrations, en vue de faciliter linterprtation
commune des normes en vigueur, tant de la part des services de contrle que des milieux
professionnels responsables de lapplication des normes ou intresss aux changes
internationaux de ces produits.
Le Rgime pour lApplication de Normes Internationales aux Fruits et Lgumes
est ouvert aux pays Membres de lOrganisation des Nations Unies ou de ses institutions

Within the framework of the activities of the Scheme for the Application of
International Standards for Fruit and Vegetables* set up by OECD in 1962, explanatory
brochures comprising comments and illustrations are published to facilitate the common
interpretation of standards in force by both the Controlling Authorities and professional
bodies responsible for the application of standards or interested in the international
trade in these products.
The Scheme for the Application of International Standards for Fruit and
Vegetables shall be open to States being Member countries of the United Nations
Organization or its specialised agencies or the World Trade Organisation desiring to
participate therein in accordance with the procedure for participation set out in the
Decision C(99)10/FINAL of the OECD Council dated 8 April 1999.
This brochure is published in English and French under the responsibility of the

I. DFINITION DU PRODUIT
La prsente norme vise les haricots des varits (cultivars), issues de Phaseolus vulgaris L. et
de Phaseolus coccineus L., destins tre livrs ltat frais au consommateur, lexclusion
des haricots cosser ainsi que des haricots destins la transformation industrielle.
Les haricots viss par la prsente norme sont destins tre consomms avec les
gousses. Quelques varits peuvent aussi tre utilises pour tre cosses mais en tant
que telles, elles sont exclues de la norme.
Les haricots en filet (Ph. vulgaris) sont rcolts trs jeunes lorsque les gousses rondes et
droites sont longues et trs fines et les graines peu dveloppes. En gnral elles sont
vertes, tandis que certaines varits ont des gousses panaches. photo 1
Les haricots gousses rondes sont surtout issus de haricots nains (Ph. vulgaris), mais
aussi de haricots rames (Ph. vulgaris). Les gousses peuvent tre vertes, jaunes,
violettes ou panaches. En gnral, les varits daujourdhui sont sans fil, avec une
membrane intrieure plus ou moins endurcie. De ce fait, elles sont aussi appeles
mange-tout. Elles sont rcoltes plus tard que les haricots aiguilles et prsentent des
graines plus dveloppes que ces derniers. photo 2
Les haricots gousses longues et relativement aplaties sont surtout issues de haricots
rames (Ph. vulgaris) mais aussi de haricots nains (Ph. vulgaris). Les gousses peuvent tre
vertes, jaunes, violettes ou panaches. tant donn que les gousses bien dveloppes
ont des fils, les haricots sont rcolts lorsquils sont encore trs tendres, avant
lapparition des signes extrieurs du dveloppement des graines et lorsque les graines
sont fines et tendres. Ils sont consomms coups. photo 3
Les haricots dEspagne (Ph. coccineus) sont issus de plantes rames. tant donn quils
sont rcolts trs jeunes, les gousses sont tendres et sont consommes coupes. A un
stade plus dvelopp, les haricots dEspagne sont utiliss pour tre cosss. Ainsi seuls
les haricots dEspagne trs jeunes sont viss par la norme. photo 4

I. DEFINITION OF PRODUCE
This standard applies to beans of varieties (cultivars) grown from Phaseolus vulgaris L.
and Phaseolus coccineus L. to be supplied fresh to the consumer, beans for shelling or
industrial processing being excluded.
The beans covered by the standard are destined for consumption with the pods. Some
varieties may also be used for shelling but at that stage they are no more covered by
the standard.
Needle beans (Ph. vulgaris) are picked very young when the round and straight pods are
long and very fine and the seeds are hardly developed. They are usually green although
some varieties have variegated pods. photo 1
Beans with round pods are mainly grown from dwarf French beans (Ph. vulgaris), but
also from climbing French beans (Ph. vulgaris). The pods may be green, yellow, violet
or variegated. The varieties of today are usually stringless, with little if any lining
membrane. Therefore, they are also called snap beans. They show a more advanced seed
development than needle beans. photo 2
Beans with long and relatively broad pods are mainly grown from climbing French beans
(Ph. vulgaris), but also from dwarf French beans (Ph. vulgaris). The pods may be green,
yellow, violet or variegated. Since well-developed pods have strings, the beans are
picked while still quite tender, before outward signs of seed development appear and
while the seeds are small and tender. They are consumed sliced. photo 3
Runner beans (Ph. coccineus) are grown from climbing plants. Harvested very young
the pods are tender and are consumed sliced. In a more developed stage the runner
beans are used for shelling. Therefore, only the very young runner beans are covered
by the standard. photo 4

Classification
Les haricots font lobjet dune classification en trois catgories dfinies ci-aprs :
i)
Catgorie Extra
Les haricots classs dans cette catgorie doivent tre de qualit suprieure. Ils doivent
prsenter la forme, le dveloppement et la coloration caractristiques de la varit et/ou
du type commercial. photos 1 4
Les haricots doivent tre de prsentation trs soigne.
Ils doivent tre :
trs tendres.
pratiquement droits.
Les haricots doivent tre pratiquement rectilignes, compte tenu de la forme
typique de la varit.
sans fil.
Les graines, sil y en a, doivent tre petites et tendres. Toutefois, les haricots en filet
doivent tre exempts de graines. photos 17 18
Ils doivent tre exempts de dfauts, lexception de trs lgers dfauts superficiels,
condition que ceux-ci ne portent pas atteinte laspect gnral du produit, sa qualit,
sa conservation et sa prsentation dans lemballage.
De trs lgers dfauts superficiels peuvent apparatre en cours de culture, lors de la
rcolte, du stockage, du conditionnement ou du transport. photo 19

B.
Classification
Extra Class
Beans in this class must be of superior quality. In shape, development and colouring
they must be characteristic of the variety and/or commercial type. photos 1 to 4
Beans must be very carefully presented.
They must be :
very tender.
practically straight.
Beans must be practically straight, account being taken of the typical shape of
the variety.
stringless.
Seeds, if present, must be small and soft. However, needle beans must be seedless.

They must be free from defects with the exception of very slight superficial defects
provided these do not affect the general appearance of the produce, the quality, the
keeping quality and presentation in the package.
Very slight superficial defects may appear during cultivation, harvest, storage, packaging or transport. photo 19

Les haricots classs dans cette catgorie doivent tre de bonne qualit. Ils doivent

Bien que les exigences qualitatives soient moins svres pour la Catgorie I que pour la
Catgorie Extra, il nen demeure pas moins que les haricots de cette catgorie doivent
tre soigneusement slectionns et prsents.
Ils doivent tre :

Class I
Beans in this class must be of good quality. In shape, development and colouring they
must be characteristic of the variety and/or commercial type.
Although the Class I quality requirements are less strict than for Extra Class, Class I
beans must, nevertheless, be carefully selected and presented.
They must be:

Catgorie II
Cette catgorie comprend les haricots qui ne peuvent tre classs dans les catgories
suprieures mais correspondent aux caractristiques minimales ci-dessus dfinies.
Les haricots classs dans cette catgorie doivent tre de qualit marchande, de
prsentation convenable et aptes la consommation humaine.
Ils doivent tre :
raisonnablement tendres.
Les graines, sil y en a, ne doivent pas tre trop dveloppes et doivent tre
raisonnablement tendres.
Les graines peuvent tre un peu plus dveloppes que dans la catgorie I mais elles
doivent tre tendre pour la varit. photo 25
Ils peuvent prsenter les dfauts suivants, condition de garder leurs caractristiques
essentielles de qualit, de conservation et de prsentation :
dfauts de forme.
Les haricots peuvent prsenter des dfauts de forme et tre moins

dfauts de coloration.
Des dfauts de coloration par rapport la couleur caractristique de la varit ou
du type commercial sont admis condition que ces dfauts ne soient pas dus
une maladie et quils ne nuisent pas laspect gnral du produit.

iii)
Class II
This class includes beans which do not qualify for inclusion in the higher classes but
satisfy the minimum requirements specified above.
Beans in this class must be of marketable quality and suitably presented and suitable
for human consumption.
They must be:
reasonably tender.
Seeds, if present, should not be too large and must be reasonably soft.
The seeds may be a little larger than in Class I but must still be tender for the variety.

The following defects may be allowed provided the beans retain their essential
characteristics as regards the quality, the keeping quality and presentation:
defects in shape.
The beans may be less well-formed and less straight. photos 26 to 27
defects in colouring.
Some defects in colouring are allowed compared with the characteristic colour of
the variety or commercial type, provided that they are not due to disease and that
they do not detract from the general appearance of the produce.

Tolerances are determined after examining each sample package and taking the average
of all samples examined. The tolerances are stated in terms of percentage, by number
of beans in the total sample not conforming to the class (or to the size) indicated on
the package.
A.
Quality tolerances
i)
Extra Class
5 per cent by number or weight of beans not satisfying the requirements of the class but
meeting those of Class I or, exceptionally, coming within the tolerances of that class.
ii)
Class I
10 per cent by number or weight of beans not satisfying the requirements of the class,
but meeting those of Class II or, exceptionally, coming within the tolerances of that
class. Within this tolerance, a maximum of 5 per cent by number or weight may have
strings in the case of a variety and/or commercial type which should be stringless.
In addition not more than a maximum of 15 per cent by number or weight of beans
(excluding needle beans) may have the stalk and a small section of the narrow part of the
neck missing, provided these pods remain closed, dry and not discoloured. photo 31

Homognit
Le contenu de chaque colis doit tre homogne et ne comporter que des haricots de
mme origine, varit ou type commercial, qualit et calibre (en cas de calibrage).
On veillera particulirement rprimer le fardage, qui consiste dissimuler dans les
couches infrieures du colis les produits de qualit moindre et de calibre diffrent de
ceux qui sont visibles et spcifis par le marquage.
De mme, est exclue toute mthode ou pratique de conditionnement visant confrer
la couche suprieure visible du colis un aspect trompeur. photos 32 34
La partie apparente du contenu du colis doit tre reprsentative de lensemble.
B.
Conditionnement
Les haricots doivent tre conditionns de faon assurer une protection convenable
du produit.
La qualit, la solidit et la conception des emballages doivent leur permettre de protger
les produits lors du transport et des manutentions.
Il convient dassurer une protection approprie du produit laide de matriaux neufs et
propres lintrieur de lemballage et dviter que des corps trangers tels que feuilles,
sable ou terre ne nuisent sa bonne prsentation.
Les matriaux utiliss lintrieur du colis doivent tre neufs, propres et de matire telle
quils ne puissent causer aux produits daltrations externes ou internes. Lemploi de
matriaux et notamment de papiers ou timbres comportant des indications commerciales
est autoris, sous rserve que limpression ou ltiquetage soient raliss laide dune
encre ou dune colle non toxiques.
Les colis doivent tre exempts de tout corps tranger.
Le manque de propret manifeste constat dans plusieurs colis, peut entraner un
refoulement de la marchandise.

Uniformity
The contents of each package must be uniform and contain only beans of the same
origin, variety or commercial type, quality and size (if sized).
A special effort should be made to suppress camouflage, i.e. concealing in the lower
layers of the package produce inferior in quality and size to that displayed and
marked.
Similarly prohibited is any packaging method or practice intended to give a deceptively
superior appearance to the top layer of the consignment. photos 32 to 34

soumis ces rgles de marquage, mais doivent rpondre aux dispositions nationales prises en la matire.
En revanche, ces indications doivent, en tout tat de cause, tre apposes sur l'emballage de transport
contenant ces units.
3. Selon la lgislation nationale de certains pays, le nom et l'adresse doivent tre indiqus explicitement.

Dispatcher
For inspection purposes, thepackeris the person or firm responsible for the packaging
of the produce (this does not mean the staff who actually carry out the work, who
are responsible only to their employer). The code mark is not a trademark, but an
official control system enabling the person or firm responsible for packaging to be
readily identified. The shipper may, however, voluntarily or compulsorily, assume sole
responsibility for inspection purposes, in which case identification of thepackeras
defined above is no longer necessary.
To prevent indistinctness in the case where a code mark is used, the referencepacker,
dispatcherand/orexporter(or equivalent abbreviations, i. e.pack,exp.) has to
be indicated in close connection with the code mark.
2. Package units of produce pre-packed for direct sale to the consumer shall not be subject to these marking
provisions but shall conform to the national requirements. However, the markings referred to shall in any
event be shown on the transport packaging containing such package units.
3. The national legislation of a number of countries requires the explicit declaration of the name and address.
However, in case where a code mark is used, the reference packer and/or dispatcher (or eqivalent
abbreviations) has to be indicated in close connection with the code mark.
