CITRONS CONFITS
Citrons jaunes bio2 pièces

Eau500 g
Laver les citrons et les tailler en 6 en retirant la membrane intérieure. Blanchir les citrons 3 fois dans l’eau,
départ eau froide. Réaliser un sirop avec le sucre et l’eau. Cuire les citrons dans le sirop à feu doux jusqu’à ce
qu’ils soient transparents et moelleux. Chinoiser en gardant le sirop et le chauffer à 103 °C pour le reverser
sur les citrons. Laisser confire une nuit au réfrigérateur.
CONFITURE DE FRAMBOISES
Framboises200 g
Purée de framboises100 g
Pectine NH5 g
Sucre semoule35 g
Jus de citron jaune bio10 g
Faire chauffer la purée et les framboises en remuant, à 60 °C ajouter le mélange pectine et sucre et porter à
ébullition pendant 3 à 4 min en remuant. Ajouter le jus de citron et redonner une ébullition. Débarrasser et
réserver.
Faire chauffer l’eau à 80 °C et infuser les herbes 30 min à couvert. Chinoiser et ajouter le sucre et le jus de
citron puis l’alcool à froid. Réserver.
Au cutter, mettre les oeufs avec le sucre, le sucre inverti et le zeste de citron. Laisser tourner pendant 10 min.
Ajouter ensuite la crème fraîche, le jus de citron, l’alcool, le beurre fondu mais froid et l’huile d’olive. Passer les
dés de citron dans un peu de farine. Tamiser la farine et la levure chimique et les ajouter au mélange. Finir par
incorporer les dés de citron à l’aide d’une maryse. Verser dans un moule à cake graissé et muni d’un tube en
métal au milieu. Cuire au four ventilé pendant 45 min à 155 °C. À la sortie du four, retirer la barre du cake et
sortir le cake du moule. Imbiber généreusement celui-ci de chaque côté. Laisser refroidir avant de garnir
l’intérieur de confiture de framboises. Réserver au réfrigérateur avant de décorer.
DÉCOR
Poudrer le dessus du cake avec de la poudre de framboises et du codineige. Décorer avec du zeste de citron
confit et des têtes de framboises.

Rectangulaire avec un coeur confiture de framboises.
LES SAVEURS ?
Le citron et la framboise dans un cake moelleux, imbibé avec un sirop aux herbes et au limoncello.
ATTENTION
Il est important de passer les cubes de citron confi t dans la farine pour ne pas qu’ils tombent au fond du cake
durant la cuisson.

Lemon cake with raspberry centre
Recipe for 2 cakes approximately 700 g.
CANDIED LEMONS
Lemons, organic2 pieces
Caster sugar250 g
Water500 g
Wash lemons and cut into 6, taking out the centre. Blanche 3 times, starting from cold water. Make a syrup
with water and sugar and cook on low heat until they become transparent and soft. Strain and retain syrup.
Cook to 103°C and add lemons. Leave to candy overnight.
RASPBERRY JAM
Raspberries200 g
Raspberry puree100 g
Pectin NH5 g
Caster sugar35 g
Lemon juice, organic10 g
Heat puree with raspberries to 60°C, constantly stirring. Add pectin mixed with sugar and boil for 3 to 4
minutes, continuing to stir. Add lemon juice and boil again. Set aside to cool.
SOAKING SYRUP
Water300 g
Swiss mint leaves6 g
Lemon thyme6 g
Verbena6 g
Caster sugar80 g
Lemon juice, organic80 g
Limoncello50 g
Heat water to 80°C, add herbs, cover and infuse for 30 minutes. Strain, add sugar, lemon juice and alcohol.
Set aside.
Mix eggs, sugar, invert sugar and lemon zest in a food processor. Leave to mix for 10 minutes. Add cream,
lemon juice, alcohol, cold melted butter and olive oil. Fold diced candied lemons with a spatula. Pour into cake
moulds with metal tube in the centre. Bake at 155°C for 45 minutes. Out of the oven take out metal bar and
soak well each side. Leave to cool before fi lling the centre with raspberry jam. Refrigerate before decorating.
DECORATION
Sprinkle raspberry powder on top and non-melting icing sugar. Decorate with candied lemon zests and
raspberries.
