Nelson (pineapple) Upside Down Biscuits

Sauce
¾ cup butter
1 ½ cup orange juice concentrate (pineapple juice)
1 ½ cup sugar or use honey ( a ½ is great)

Bring this to a boil.

Biscuits
4 cup wheat flour ( you can use white)
1 tsp salt
6 tsp baking powder
7 to 8 tablespoons shortening
1 ½ cups Milk

Mix dry ingredients cut in shortening. ( or you can put it in the bowl. Then put on a tight fitting
lid and shake until it looks like cornmeal.) Then add the milk need until a good dough. Roll out,
brush with butter, sprinkle with cinnamon, oatmeal, sprinkle with brown sugar. ( I mix white
sugar with molasses with a fork and sprinkle. You don’t need a lot.)
Roll up like cinnamon roll and use dental floss to cut. Pour 1/3 sauce on the bottom of a 9 x 13
pan. Put pineapple rings in the bottom of the pan and then put biscuits in squish so they go
together tight. Pour the rest of the sauce on. Cook for 20 to 25 min at 450.

The Nelson’s also call these food storage biscuits so they do use wheat flour, regular oatmeal and
honey. Rob likes them with lots of sugar but they taste great with just a little.

Garlic Bread
Prepare bread dough. Roll it out to fill a baking sheet. Either grease the pan first or spread
cornmeal on the pan to keep the bread from sticking. Once it' s rolled out, top with melted butter,
garlic salt, oregano, thyme, basil (and parsley, paprika, or whatever), and parmesan cheese. Poke
the dough a few times with a fork to prevent bubbling. Bake in a preheated 375 degree oven until
done, about 20 minutes. You may want to broil it for some of the time to get it browned on top.
Better than Peach Cobbler
Combine fresh or bottled fruit in a saucepan. I used frozen peaches, fresh cubed apples, and
apricot syrup. If you don't have enough liquid, use fruit juice or water. Heat through and add
honey to taste. Thicken slightly with cornstarch and water. It will continue to thicken as it bakes.
The amounts vary with taste and fruits used. Pour into a 9x13 pan. Use half a loaf' s worth of
bread dough. Roll it out and top the fruit as with a pie crust. Poke holes in it with a knife or fork
to prevent bubbling. Bake in a preheated 375 degree oven for about 20 minutes or until done. Let
cool slightly. Spread the top with about 1/4 cup honey butter (50/50 ratio) and top with walnuts.
