even though they may be similar. Use Ramalhos resistances

When the oven is assembled all of the adjustable positions should be set according to what is being baked as the positioning of the
openings from which the heat exits are refined according to the figure below.
However, if the baking is not uniform, it will be necessary to request the technical services of Ramalhos so that they may readjust the
oven according to what is being baked.

8 | Platform system (S-Maxi, S-Plus and Dual)

The platform system is practical for various reasons:


· It could take various different rack sizes;
· It could take two simultaneously (only Dual);
· Due to its high resistance, the S-Maxi platform supports 350 kg and the Dual supports 500kg;
· There is also a safety system to stop the rack(s) from damaging the platform system.

9 | Oven maintenance

9.1 MAINTENANCE OF THE RACK ROTATION MECHANISM

LUBRIFICATION:
Every two months.

Lubricating the rack rotation mechanism represented in Fig.


5 to the left, (located above the oven) should be done with
high temperature lubricant at points 1 and 2 as indicated in
the figure.

LUBRICATING THE CLUTCH:


When the rack is not rotating.
When it is necessary to disassemble the mechanism.

The clutch in the rack rotation mechanism is a sliding joint at


the rotation axel where the washers A compress the gear B.
If sliding occurs (the rack will not rotate), the washers need
to be tightened closer to the gear by tightening the nuts C
(clockwise). If for any reason it is necessary to dismantle the
rack rotation mechanism, is will have to be assembled again
in accordance with the figure here illustrated.
The clutch can never be completely tightened (or locked),
in order to guarantee the maximum safety of the rack cou-
pling. Therefore it should be tightened in such away that
permits a slight slide with a resistance of 80N against rota-
tion.

9.3 SUBSTITUTING BULBS 9.4 GENERAL OVEN CLEANING

9.4.1 CLEANING THE GLASS DOORS

The glass doors should be cleaned at least once a week.


They should be cleaned with warm water (30-40º C) and with
detergent in order to remove any dirt.

Important
The glass is tempered and therefore should not be
cleaned with cold water as this may causethe glass to
break, explode or crack.

9.4.2 Cleaning the stainless steel structure

The front of the oven, which is stainless steel, should be clea-


ned at least once a week. The cleaning should be done with
a “spray” appropriate for cleaning stainless steel and that will
remove grease and clean the surface without scratching it.
Non-abrasive products may be used.

9.4.3 CLEANING THE BAKING CHAMBER

The baking chamber should be cleaned at least once a week.


This should be cleaned with a non-abrasive cleaning product
that is non-toxic and non-inflammable but that will remove
grease and clean the interior of the oven. It is advisable to
wipe down surface with a dry cloth in order to remove any
humidity resulting from the cleaning.

9.5 WARNING MESSAGES AND FREQUENCY OF OVEN MAINTENANCE

In order to keep the oven in good and safe working condi-


tions, it is necessary to take the following maintenance steps:
Clean weekly:
· The oven front;
· The oven glass doors;
· The oven baking chamber;
· The oven racks and trays.
Lubricate every two months:

Notwithstanding the fulfilment of the aforementioned dead-
lines, the oven has a system that warns the operator of the
need to carry out periodic maintenance. This warning is a
general preventative warning, i.e. disregards the specific
