Abstract
Production and commercialisation of “lanhouin”, a fermented fish-based condiment from
the Gulf of Benin.
A socio-economical and technological survey was conducted on a fermented fish-based
condiment named “lanhouin” in two departments of south Benin. This study has
permitted to identify the different actors of the “lanhouin” sector as well as the commercial
flux of “lanhouin”. This study showed that only women carried out the production and
commercialisation of “lanhouin” and this constituted for most of them the main source of
income. There are two variants in the technology of “lanhouin” production, but both
conducted apparently to the same final product. Problems associated to fish pre-treatment
and processing, the lack of potable water in the production sites, hygiene during
processing and quality of the final product are the main difficulties to overcome to ensure
the promotion of “lanhouin” sector in the Gulf of Benin.
