Ce pétrin est uniquement prévu pour pétrir des pâtes
alimentaires pour la boulangerie-pâtisserie ou la cuisine.
Son utilisation à d’autres fins ou sa modification physique,
conduirait VMI à se dégager de toutes responsabilités, sauf
accord préalable confirmé par écrit.

1.5- Avertissements
• Toute opération de maintenance, de réparation ou
d’entretien doit se faire par un personnel qualifié, avec
la machine hors tension.
• Il est strictement interdit d’introduire dans la cuve tout
objet ou corps étranger à la composition de la pâte.
• Ne jamais oublier de remettre ce manuel à l'utilisateur final.
• Ce manuel devra être conservé avec soin afin d’assurer
le SAV. Dans toute correspondance, rappeler le numéro
de la machine (voir la plaque d’identification sur le côté
de la machine).
Les renseignements contenus dans ce manuel peuvent
faire l’objet de modifications et d’améliorations sans
préavis.
2. IMPLANTATION
2.1- Aménagements préalables
• Le local doit être suffisamment éclairé.
• La surface portant le pétrin doit être plane et
horizontale avec une résistance de 3000 kg.
• Prévoir un sectionneur porte-fusibles ou un disjoncteur
mural placé à moins de 1.50 m de l’arrière du pétrin
pour son raccordement.
2.2- Manutention et déballage
• Quel que soit le type d’emballage, le pétrin doit être
stocké dans un endroit sec s’il n’est pas mis en place
dès sa réception.
Quel que soit le type d’emballage, la manutention ne peut
se faire qu’avec un chariot à fourches de 4 tonnes levant
à 3 mètres. Il devra être veillé à ce que les fourches
soient mises en place de manière à ce que le centre de
gravité du pétrin soit entre ces fourches. Ce point est
indiqué par deux flèches noires sur la palette.
• Déballage: Enlever la housse en plastique puis les
quatre vis qui le fixent sur la palette en bois.
• A l’arrière du pétrin, fixer la barrière 03536801 avec les
quatre vis fournies.
• Pose du pétrin au sol: Déposer le capot de bâti après
avoir enlevé la vis de fixation sous le capuchon blanc
en plastique (de préférence, utiliser une élingue en toile
passée sous les quatre coins de la cheminée du capot).
Pour lever le pétrin glisser les crochets de l’élingue
dans les deux trous de diamètre 30 mm placés sous les
courroies.

1.5- Warnings
• Every maintenance, repair or overhauling operation
must be performed with duly qualified people with
the machine disconnected from the power supply.
• It is forbidden to introduce in the bowl all type of
object useless to the dough preparation.
• Never to forget to give manual to final user.
• This operating manual must be kept carefully in
order to make required maintenance. For any further
request, remind the machine serial number (see
identity plate fixed on the kneader side).
Information given within this manual may change and
improve without any notice.
2. IMPLANTATION
2.1 Prior arrangements
• The room must be adequately lighted.
• The surface must be even and horizontal and the floor
must accept loads of 3000 kg.
• The kneader must be connected to the mains through a
circuit breaker or a fuse-carrier section switch located
at a maximum distance of 1.50 m from the kneader
backside.
2.2 Handling and unpacking
• Whatever packing is used, the kneader must be stored
in a dry place if it is not immediately installed and
commissioned.
Whatever packing is used, handling can only be
performed with a forklift which capacity is 4 tons and
able to lift at 3 meters. Forks will be placed so that
the gravity center is located between both forks. This
point is indicated by two black arrows painted on the
pallet.
• Unpacking: remove the plastic cover and the four
bolts that secure the kneader on the pallet.
• On the back of kneader, place the barrier 03536801
with four bolts supplied with.
• To place the kneader on the floor : remove the
kneader top cover when the fixing screw is taken off.
This screw is underneath a white cap. Preferably use a
sling band going under the four edges from the top
cover funnel. To lift the kneader, place the sling hooks
in both 30 mm holes located underneath the belts.

• Avec le chariot à fourches, soulever le pétrin pour le
poser au sol à sa place définitive. Respecter une
distance minimale de 30 cm entre la barrière 03536801
et le mur (ou un autre obstacle).
• Remettre en place le capot et le fixer. Le pétrin doit être
scellé. Quatre points d’ancrage sont prévus à cet effet.
Les vis doivent avoir une section de 10 mm minimum et
être fixées suivant le schéma.
Huit cales sont livrées pour la mise à niveau, si nécessaire.
2.3- Pose au sol
• Positionner le pétrin.
• Marquer l’emplacement des 4 trous au sol.
• Visser la tige filetée diamètre 10 mm dans la cheville.
• Enfoncer la cheville.
• Mettre la rondelle.
• Visser l’écrou sur la tige filetée jusqu’à son blocage.
3. MISE EN SERVICE
3.1- Préambule
• Par un spécialiste, faire effectuer le branchement du
câble d’alimentation du pétrin sur le disjoncteur mural,
sans oublier la Terre.
• Tourner le bouton rotatif de montée de la tête du pétrin:
La centrale se met en marche. Si la tête ne monte pas,
faire inverser deux des trois phases du câble
d’alimentation.
• Une fois la tête en position haute, appuyer sur le
bouton correspondant au «Déverrouillage cuve» pour
sortir la cuve.

• With the fork lift, raise the kneader in order to place it
at its final location. Respect a miminum distance of 30
cm between the barrier 03536801 and the wall (or other
obstruction).
• Place again the top cover and fix it.The kneader must
be fixed. Four fixing points are provided to do so. Bolts
must have a minimum 10 mm section and be fixed
according to the drawing.
Eight shims are supplied to adjust the kneader stability
if required.
2.3- Anchoring
• Kneader to be located in position.
• Position of 4 anchoring holes to be marked on the floor.
• Threaded rod diametre 10 mm to be screwed into the peg.
• Peg to be driven.
• Washer to be fittted.
• Nut to be screwed hard on the threaded rod.
3. COMMISSIONING
3.1 Setting up
• Using a specialist, connect the kneader to the power
supply through a circuit breaker fixed on a wall and
watch the ground is connected.
• Switch on the kneader head rise : the hydraulic power
plant starts running. If the head do not raise, then
have two of the three phases inverted on the supply
wire.
• Once the head is up, push on the «bowl unlocking»
push button in order to remove the bowl.

3.3- Mode opératoire
• Mettre le sectionneur général sur I (placé sur l’armoire).
• Choisir le cycle de travail avec C2.
• Engager la cuve dans le pétrin. Le verrouillage est
automatique (H2 s’allume).
En mode automatique:
• Régler les minuteries: M1 pour travailler en petite vitesse
outil et M2 pour travailler en grande vitesse outil.
• Choisir le sens de rotation de la cuve avec C3.
• Démarrer le cycle en appuyant sur le bouton S1.
• La tête de pétrin descend. La cuve et l’outil tournent
selon le fonctionnement désiré:
• Si le choix A a été fait, pendant M1, l’outil tourne en
petite vitesse et la cuve tourne en sens horaire, puis
pendant M2, l’outil tourne en grande vitesse et la cuve
en sens anti horaure. A la fin de M2, la cuve et l’outil
s’arrêtent, la tête remonte.
• Déverrouiller la cuve en appuyant sur S2.
• Si le choix B a été fait, le cycle est le même mais
pendant M1, la cuve tourne en sens anti horaire.
En mode manuel:
• Descendre la tête avec C1.
• Choisir le sens de rotation de la cuve avec C3.
• Appuyer sur S4 pour travailler en petite vitesse outil
(H4 s’allume).
• Appuyer sur S5 pour travailler en grande vitesse outil
(H5 s’allume). La cuve tourne en sens anti horaire.
• Pour arrêter les marches manuelles, il faut appuyer sur
S0, ou mettre le bouton C2 sur sa position milieu. Après
avoir relâché S0 et ramené C2 sur la position manuelle,
actionner C1 vers le haut pour remonter la tête.
• Déverrouiller la cuve en appuyant sur S2.
Nota: En mode automatique, il est possible d’interrompre le
cycle avec S6 (H6 s’allume, la tête remonte et les minuteries
sont mémorisées). Pour reprendre le cycle, appuyer sur S1
(H6 s’éteint, la tête redescend et le cycle reprend). Si H7
(placé sur le côté gauche de l’armoire) s'allume, vérifier le
niveau d'huile de la centrale hydraulique et le filtre à huile.
4. CONSEIL D’UTILISATION
IMPORTANT: En cas de surchauffe des moteurs, des
disjoncteurs magnéto thermiques se déclenchent. La
surchauffe est due à l’usage du pétrin avec des pâtes trop
fermes ou par un dépassement de ses capacités.
Diminuer la quantité, ouvrir l’armoire, réarmer les
disjoncteurs et attendre quelques minutes avant de
remettre en marche.

3.3- How to operate
• Turn the main section switch on I (placed on the
electric panel).
• Choose the cycle with C2.
• Engage the bowl in the kneader. The locking is
automatic (H2 switches on).
With the automatic mode:
• Adjust the timers: M1 to work in slow speed tool and
M2 to work in high speed tool.
• Choose the rotation way of the bowl with C3.
• Press S1 to start the cycle.
• The kneader head loweres. The bowl and the tool turn
following the choice:
• If you chose the A option, during M1: the tool turns in
slow speed and the bowl in clockwise way, then
during M2: the tool turns in high speed and the bowl
in counter clockwise way. At the end of M2, the bowl
and the tool stop. The kneader head lifts again.
• Press S2 to unlock the bowl.
• If you chose the B option, there is the same cycle but
during M1, the bowl turns in counter clockwise way.
With the manual mode:
• Lower the head with C1.
• Choose the bowl rotation way with C3.
• Press S4 to work in slow speed tool (H4 switches
on).
• Press S5 to work in high speed tool (H5 switches on).
The bowl turns in counter clockwise way.
• To stop the manual actions, you must press S0, or turn
C2 on center position. To lift again the head, don’t
press S0, turn C2 on manual position, and turn C1 to
the high position.
• Unlock the bowl with S2.
Nota: With the automatic mode, you can stop the cycle
with S6 (H6 switches on, the head lifts and the timers are
memorized). To start again the cycle, press S1 (H6
switches on, the head loweres and the cycle starts again).
If H7 (placed on the left of the panel door) switches on,
check the oil level of the hydraulic station and the oil
filter.
4. ADVICE FOR UTILIZATION
IMPORTANT: In case of overheating of the motors,
magneto thermics circuit breakers switch on. There is
overheating when you use the kneader with a stiif
dough or with wrong capacities.
Drop off the quantity, open the electric panel, reset
the circuit breakers and await a few minutes before
to switch on the machine again.

• Dépoussiérer les moteurs.
• Vérifier l’état des courroies (outil et cuve).
Les retendre si nécessaire.

Capacity: around 27 liters. Adjustment of pressure by
pressure switch: See the enclose sheet 11.

Courroies: Changement Belts: Change

• Retirer le capot de bâti pour les courroies outil et le
carter 03367107 pour les courroies cuve.
• Desserrer les vis de tension.
• Dégager les courroies et les remplacer par des neuves.
• Resserrer les vis de tension.
• Remettre le capot de bâti et le carter.
Nota: vérifier la tension des courroies neuves après 10
heures de marche.
Important: Avant toute opération d'entretien ou de
nettoyage, mettre le pétrin hors tension.
• Remove the framework top cover for the tool belts and
the casing 03367107 for the bowl belts.
• Unscrew the tension screws.
• Remove the belts and place the new belts.
• Tighten the tension screws.
• Replace the framework top cover and the casing.
Nota: chek the tension of the new belts after 10 working
hours.
Important: Switch off the kneader before to clean or
repair it.

6. DYSFONCTIONNEMENT
Le pétrin ne démarre pas:
• Vérifier si le disjoncteur n’a pas sauté.
• Vérifier si les fusibles au primaire et au secondaire du
transformateur sont en bon état.
Si la tête s’arrête pendant la descente, enlever
l’obstacle qui aurait pu soulever la barrière et appuyer
à nouveau sur le bouton « Marche » pour continuer la
descente. Parfois, la barrière peut se coincer, remuer
la légèrement et recommencer la descente.
La cuve ne se verrouille pas:
• Vérifier si la cuve est engagée à fond dans le pétrin.
Les courroies de cuve patinent:
• Retendre celles qui patinent, accès par l’arrière du
pétrin en faisant pivoter le support de centrale
hydraulique.
Les courroies d’outil sautent:
• Retendre celles qui sautent. Nota: une tension
excessive peut abîmer les roulements des fourreaux.
La cuve frotte contre le capot du pignon de cuve:
• Vérifier que le pétrin est sur une surface plane.
L’espace doit être d’au moins de 2 mm.
La cuve ne se déverrouille pas:
• Vérifier que le moteur de la centrale tourne. Dans ce
cas, la bobine du distributeur peut être à changer.
Pour assurer le déblocage de la cuve, appuyer
simultanément sur le bouton et sur le tiroir du
distributeur correspondant à la fonction.
La tête du pétrin ne monte pas:
• Vérifier le sens de rotation du moteur de la centrale.
La tête du pétrin ne descend pas:
• Vérifier que le fin de course du capot n’est pas excité.
• Vérifier le fin de course du verrouillage cuve.
• Vérifier que le moteur de la centrale tourne. Dans ce
cas, la bobine du distributeur correspondant à ce
mouvement peut être à changer.
Pour se dépanner, appuyer simultanément sur le bouton
et sur le tiroir du distributeur correspondant à la
fonction.

6. TROUBLE SHOOTING
The kneader does not start :
• Check whether the thermal relay has blown up.
• Check whether fuses from primary/secondary of
transformer are alright.
• If mixing head stops when lowering, then remove the
obstruction and push again the « on » button to
continue lowering. Sometimes the safety fence may
jam, then shake it slightly and make again lowering.
Bowl is not locked:
• Check whether the bowl is fully located in the kneader.
Bowl belts are slipping:
• Stretch those which are loose. Access from rear of
kneader by pivoting the hydraulic power plant stand.
Tool belts are loose:
• Stretch them. Nota: a too strong tension may damage
bearings from the tool flange.
The bowl touches against the bowl gearing cover:
• Check that the kneader is on a plain and horizontal
surface. The clearance must be 2 mm minimum.
The bowl is not unlocked:
• Check that the hydraulic power plant motor is running.
If so, the distributor coil is maybe to change. To
unlock the bowl, push the simultaneously on both the
push button and distributor slide valve corresponding
to the function.
Kneader head does not lift:
• Check the rotation way of the hydraulic station motor.
Kneader head does not lower:
• Check that the top cover limit switch is not excited.
• Check the bowl locking limit switch.
• Check that the hydraulic station motor is running. If
so, the distributor coil corresponding to this movement
is maybe to change.
In emergency, to have it running, push simultaneously
on both the push button and distributor slide valve
corresponding to the function.

Réglage de la centrale hydraulique
Réglage de la pression de la centrale
Introduire une cuve et attendre son verrouillage.
Descendre la tête à l'aide du bouton "Descente
manuelle" sur le tableau de bord et insister après
l'arrêt complet.
La pression indiquée est la pression maxi de la
centrale ( sur le manomètre de droite ).
Pour faire varier cette pression, agir sur la vis de
réglage tout en maintenant le bouton en position
"Descente" (sens horaire sur la vis pour monter la
pression après avoir desserré le contre-écrou).
Réglage de la pression de la centrale: 90 bars
Réglage du pressostat cuve:
Après avoir réglé la pression maxi de la centrale:
* Mettre le commutateur sur "cycle automatique".
* Introduire une cuve et attendre son verrouillage.
Ensuite contrôler la pression sur le manomètre de
gauche. Si elle est insuffisante, desserrer la vis de
freinage excentrée puis tourner le pressostat de 1/8
ème de tour dans le sens de la flèche ( sens horaire ).
Réglage entre 65 et 70 bars.
* Sortir la cuve, si la pression n'est pas encore
correcte, refaire l'opération jusqu'à la pression
demandée.
Réglage du pressostat tête:
Après avoir contrôlé la pression de la cuve, la cuve
étant toujours verrouillée:
* Descendre la tête (la pression sur le manomètre de
droite pendant la descente doit être de 10 à 20 bars).
* Ensuite contrôler la pression sur le manomètre de
droite. Si elle est insuffisante, desserrer la vis de
freinage excentrée puis tourner le pressostat de 1/8
ème de tour dans le sens de la flèche ( sens horaire).
Réglage entre 65 et 70 bars.
* Remonter puis descendre la tête, si la pression n'est
pas encore correcte, refaire l'opération jusqu'à la
pression demandée.
Après les réglages des pressostats, ne pas oublier
de serrer les vis de freinage.

Hydraulic power plant presure adjustment
Introduce one bowl into the kneader and await its locking.
lower the head with the « manual lower » button on the
control panel and keep pushing a while after the stop.
the indicated pressure is then the hydraulic power plant
maximum pressure( on right hand side pressure gauge). To
alter this pressure, still pushiing the « lower » button ,use
the adjusting screw (clockwise way on screw when
counternut is loose to increase the pressure).
Hydraulic power plant pressure adjust.: 90 bars
Bowl pressure switch adjustment
when the hydraulic power plant maxi pressure is adjusted
* Switch on « auto cycle »
* Introduce one bowl and await its locking
Then check pressure on the left hand side pressure gauge.
If it si not enough, unscrew the offcentered brake type
screw and then turn clockwise way (see arrow) 1/8 of
rotation the pressure switch.
Adjustment between 65 and 70 bars.
* Take the bowl out of the kneader, if the pressure is not
correct, try again the operation until it becomes
acceptable.
Head pressure switch adjustment
After the bowl pressure is checked and the bowl still
locked:
* lower the head (pressure on the the right hand side
pressure gauge must be between 10 and 20 bars).
* Then check pressure on the right hand side pressure
gauge. If below pressure requested, unscrew the
offcentered brake type screw and then turn clockwise
way(see arrow) 1/8 of rotation the pressure switch.
Adjustment between 65 and 70 bars.
* Lift and lower the head , if pressure is still not correct,
try again the operation until having the requested pressure.
When pressure switches adjusments are over, do not
forget to tighten the brake type screws.

9.1- Conformité

9.2- Extrait des conditions de vente
• Garantie:
La durée de garantie normale du matériel est de six
mois. Elle ne peut, même dans des cas spéciaux,
explicitement prévus, excéder un an. Dans le cas où le
matériel est utilisé de jour et de nuit, elle est
obligatoirement diminuée de moitié.
Elle est strictement limitée au remplacement ou
réparation de pièces mises hors service par suite de
défauts ou vices de construction.
Elle ne s’applique pas aux remplacements ni aux
réparations qui résulteraient de l’usure normale des
appareils ou machines, de déteriorations ou d’accidents
provenant de négligence, défaut de surveillance,
d’entretien ou d’installation et d’utilisation défectueuse
des appareils.
• Transports:
Toutes les opérations de transport, assurance, douane,
octroi, manutention, sont à la charge et aux frais,
risques et périls de l’acheteur, auquel il appartient de
vérifier les expéditions à l’arrivée et d’exercer, s’il y a
lieu, ses recours contre les transporteurs, même si
l’expédition a été faite franco.
En cas d’expédition par le vendeur, l’expédition est
faite en port dû, aux tarifs les plus réduits, sauf
demande expresse de l’acheteur et dans tous les cas,
sous la responsabilité entière de celui-ci.
• Contestation:
En cas de contestation relative à une fourniture ou à son
réglement, le Tribunal de Commerce de Nantes est seul
compétent quels que soient les conditions de vente et le
mode de paiement acceptés, même en cas d’appel en
garantie ou de pluralité des défendeurs.
9.3- Service après vente
Pour la maintenance, s’adresser en priorité au vendeur de la
machine.

9.1- Conformity

9.2- Extract from the conditions of sale
• Guarantee:
The normal guarantee period for equipment is 6
months. It can never exceed one year even in special
cases which have been explicitly negociated. In case
of equipment which is used day and night, the
guarantee is automatically halved.
It is strictly limited to replacements or repairs of parts
which no longer work due to faults or construction
errors.
It does not apply to replacements or repairs which is
result from normal use of apparatus or machines, nor
to deterioration or accidents caused by negligence,
lack of surveillance, servicing or defective installation
and use of apparatus.
• Transports:
All transport operations, insurance, customs duties,
taxes and handling are at the purchaser's charge, as
well as the risks and perils resulting from the
transportation, and it is the purchaser's duty to verify
on arrival of the goods that is well, and if need be to
make a claim against the transporters even if the goods
have been sent at our charge.
In case of goods being sent by the seller, this is done
at the lowest rates possible and the transport is
payable on reception of the goods, except if the
purchaser has expressly demanded ohterwise, and in
all cases it is his entire responsability.
• Claim:
Any claim relating to good supplied or their payment
are to be treated by the "Tribunal de commerce de
Nantes", which is the sole authority no matter what the
conditions of sale or where there exists several
defendants.

For the maintenance, first call the seller of the machine.
