dans le processus d'étêtage et d'éviscération des sardines. Cette démarche vise à
assurer un environnement de travail d'une propreté impeccable, minimisant ainsi les
risques de contamination et maintenant des normes d'hygiène rigoureuses

• Généralement, l'opération de nettoyage et de désinfection dans le cadre de l'étêtage et de l'éviscération des sardines
se déroule dans l'ensemble des zones de production, comprenant les tables de travail conçues à cet effet. Elles
doivent souvent conçues avec des matériaux résistants à l'eau et faciles à nettoyer pour garantir des normes
d'hygiène élevées.
• Ces tables sont souvent disposées de manière ergonomique pour faciliter le flux de travail et optimiser l'efficacité
du processus(Hauteur adaptée, Espace suffisant, Accessibilité des outils, Éclairage approprié)


- Planification et exécution des opérations de nettoyage des tables de viscères et des
équipements d'étêtage des sardines.
- Utilisation de produits de nettoyage et de désinfection conformes aux normes
sanitaires.
- Inspection régulière des zones à nettoyer pour identifier les points sensibles.
Gestion appropriée des déchets résultant du nettoyage.
 Responsables de la Qualité et de la Sécurité Alimentaire :
- Supervision des processus de nettoyage pour s'assurer de leur conformité aux normes
de sécurité alimentaire.
- Mise en œuvre de protocoles de vérification pour garantir la qualité des zones
nettoyées.
- Contrôle des concentrations des solutions préparé pour le nettoyage et la désinfection
avant leur utilisation
- Planification des formation visant a former les employés sur les meilleures pratiques
d'hygiène pour minimiser les risques de contamination
 Fréquence
• Le nettoyage doit être effectué au minimum deux fois par jour. Cette fréquence permet
de maintenir des conditions sanitaires élevées en éliminant rapidement les résidus et
en prévenant la contamination croisée entre les sessions de travail
• Ca peut changer en fonction du volume de production : avec des volumes de
production élevés ,on peut opter pour un nettoyage plus fréquent pour répondre à la
demande accrue et maintenir des conditions sanitaires optimales.
