PIPERADE À LA CITRONNELLE
• 100 g de poivrons 3 couleurs
• 1 gousse d’ail
• 100 g d’oignons blancs émincés
• 1 cuillerée à café de tomate
concentrée
• Une pincée de sucre
• Piment d’Espelette
• Sel
• 2 cl d’huile d’olive
• 200 g de tomates concassées
• Huile à la citronnelle
(voir recette plus bas)
HUILE À LA CITRONNELLE
• 1 L d’huile de pépin de raisin
• 600 g de citronnelle émincée
FENOUIL CONFIT
• 520 g de fenouil coupé en tronçons
• 5 g d’ail
• 3 cl d’huile d’olive
• 10 cl d’eau
• 1 feuille de laurier
• 1 branche de thym frais
• Poivre blanc du moulin
CHIFFONNADE DE FENOUIL
• 360 g de fenouil émincé finement
• 4 cl d’huile d’olive
• 4 g d’aneth hachée
• 1 cl de jus de citron de citron vert

2. HUILE DE CITRONELLE
Faire chauffer l'huile avec la citron-
nelle puis laisser infuser minimum 1
heure à feu très doux sans faire bouillir.
Passer ensuite au chinois, pour ne
récupérer que l'huile infusée.
3. PIPERADE À LA CITRONNELLE
Couper les poivrons 3 couleurs en
julienne de 0,5 cm d'épaisseur.
Faire suer les oignons et l'ail dans
l'huile d’olive, sans coloration.
Ajouter les poivrons et laisser cuire
15 minutes.
Ajouter les tomates concassées, la
cuillerée à café de tomate concentrée
et le sucre.
Laisser cuire environ 40 minutes à
couvert en remuant régulièrement.
En fin de cuisson, ajouter l'huile infusée
à la citronnelle.
Assaisonner de sel et de piment
d’Espelette.
4. CHIFFONNADE DE FENOUIL
Couper le fenouil cru en fines
tranches à l’aide d’une mandoline
puis mélanger la fine chiffonnade
avec l’huile, le jus de citron et l’aneth
haché.
5. FENOUIL CONFIT
Raccourcir la tige du fenouil à environ
10 cm et la couper en 6 tronçons
dans la longueur.
Huiler une plaque de four avec la
moitié de l’huile et parsemer avec l’ail
haché.
Ajouter les tronçons de fenouil, saler
et poivrer.
Ajouter le thym et le laurier, verser le
reste de l’huile et l’eau puis couvrir
d’un papier aluminium et cuire au
four à 160° pendant 30 à 40 minutes.
Vérifier la cuisson à l’aide d’une
pointe de couteau (confit et légère
coloration).
- INGREDIENTS -
SPICED BULGUR
• 120g bulgur
• ½ liter water
• ½ vegetable stock cube
• Salt, pepper
• 10g butter
• 10g finely chopped onions
• 1g grated fresh ginger
• Spices: a pinch of cumin and turmeric
LEMONGRASS PIPERADE
• 100g peppers (3 colors)
• 1 garlic clove
• 100g finely chopped white onions
• 1 tsp tomato sauce concentrate
• A pinch of sugar
• Espelette chilli pepper
(piment d'Espelette)
• Salt
• 20ml olive oil
• 200g chopped tomatoes
• Lemongrass oil (see recipe below)
LEMONGRASS OIL
• 1 liter grape seed oil
• 600g finely chopped lemongrass
CARAMELIZED FENNEL
• 520g fennel cut into pieces
• 1 garlic clove
• 30ml olive oil
• 100ml water
• 1 bay leaf
• 1 sprig of fresh thyme
• Ground white pepper
FENNEL FRONDS
• 360g finely chopped fennel
• 40ml olive oil
• 4g chopped dill
• 10ml lime juice
- METHOD -
1. SPICED BULGUR
Dissolve the vegetable stock in water,
add salt and pepper.
Bring to a boil and cook for 1 minute,
add the bulgur and cook covered for
about 15 minutes.
Drain and set aside.
Cook the onions in butter until soft
but not brown, add the ginger and
spices and cook on a low heat for 5
minutes.
Finally, add the bulgur and mix with
the spices.
2. LEMONGRASS OIL
Heat the lemongrass oil and let it
infuse over a very low heat, without
boiling, for at least 1 hour.
Then pass through a sieve, to save
only the infused oil.
3. LEMONGRASS PIPERADE
Cut the peppers lengthways into 0.5
cm strips.
Cook the onions and garlic in olive oil
until soft but not brown.
Add the peppers and cook for
15 minutes.
Add the chopped tomatoes, tomato
sauce concentrate and sugar.
Cover and cook for about 40
minutes, stirring regularly.
At the end of cooking, add the
lemongrass-infused oil.
Season with salt and Espelette chili
pepper.
4. FENNEL FRONDS
Cut the raw fennel into thin slices
using a mandolin and mix the fine
chiffonade with the oil, lemon juice
and chopped dill.
5. CARAMELIZED FENNEL
Shorten the fennel stem to about 10
cm and cut it lengthwise into 6
sections.
Oil an oven tray with half the oil and
sprinkle with finely chopped garlic.
Add the fennel sections, salt and
pepper.
Add the thyme and bay leaf, pour in
the rest of the oil and water, cover
with aluminium foil and bake in the
oven at 160° for 30-40 minutes.
Check the cooking with a knife tip.
It should be caramelized and lightly
colored.
