Féminine (en)
Mettre le lait et la pâte à pistache à infuser. À ébullition, mettre les jaunes d’oeuf, le sucre, la farine et la poudre à flan, au
préalable blanchie. Lorsque l’appareil arrive à ébullition, cuire pendant 1 min.
Crème au beurre
Jaunes d’oeuf 125 g
Sucre 65 g
Beurre 750 g
Eau 20 g
Faire cuire le sucre et l’eau à 121 °C. Verser sur les jaunes d’oeuf, préalablement montés au batteur. Arrivé à 50 °C, mettre
le beurre en cube et laisser monter pendant 10 min.
Mousseline pistache
Mélanger la crème au beurre et la crème pâtissière pistache.
Biscuit joconde
OEufs 200 g
Sucre 150 g
Poudre d’amande 150 g
Farine 40 g
Blancs d’oeuf 130 g
Sucre 30 g
Beurre fondu 30 g
Monter au batteur oeufs et sucre. Une fois bien monté, mettre cet appareil dans un cul-de-poule et monter une seconde fois
les blancs et le sucre. Mélanger la poudre d’amande et la farine dans le cul-de-poule et mettre les blancs montés. Terminer
par mélanger l’appareil oeufs/sucre dans la meringue et mélanger le beurre fondu. Étaler sur une plaque 40 x 60 cm et cuire
pendant 12 min à 170 °C.
Insert fraise
Sauce fraise
Chauffer la purée de fraise, le sucre et la pectine. À ébullition, ajouter la Maïzena ®. Faire cuire pendant 1 min et finir avec le
nappage neutre.
Perlé fraise
Brunoise de fraise 200 g
Sauce fraise 500 g
Mélanger la brunoise et la sauce fraise. Couler dans les cadres de 1 cm de hauteur. Mettre au grand froid. Mettre le biscuit
joconde sur l’insert fraise de chaque côté.
Glaçage rouge
Crème liquide 130 g
Nappage neutre 150 g
Eau 985 g
Gélatine 21 g
Sucre 230 g
Glucose 230 g
Beurre de cacao 55 g
Colorant rouge hydrosoluble 3 g
Faire chauffer la crème, le nappage neutre, le glucose et le sucre. Séparément, faire fondre le beurre de cacao, tremper
l’eau et la gélatine. Mixer l’ensemble jusqu’à 50 °C. Finir en incorporant le colorant.
Pâte sucrée
Beurre 120 g
Sel 2 g
Poudre d’amande 30 g
Sucre de glace 80 g
OEufs 50 g
Farine 225 g
Sabler le beurre, le sel, le sucre glace, la poudre d’amande et la farine. Incorporer les oeufs. Étaler des lamelles de 4 cm de
large sur 20 cm de long. Cuire pendant 8 min à 160 °C.
Montage du fraisier
Pour la réalisation de la mousseline, mélanger la crème au beurre et la crème pâtissière. Celle-ci doit être bien souple afin
d’épouser la forme du moule. Détailler l’insert fraise en 16 x 2 cm. Mettre au 2/3 et recouvrir de crème. Bloquer au grand
froid. Enfin, glacer avec le glaçage rouge. Finir avec de la pistache hachée sur le dessus du fraisier.
Chocolat plastique
Chocolat noir 300 g
Glucose 200 g
Faire fondre le chocolat et ajouter le glucose pour obtenir une pâte. Rouler des boudins de 1 cm de diamètre sur 10 cm de
long. Les passer à la poudre de rubis. Étaler le chocolat plastique et emporte-piècer 4 ronds de 2 cm et les passer à la
poudre de rubis.
Coller l’anse au sac à main en chocolat et coller les 4 ronds sur chaque anse.
Décor
Finir à la feuille d’or sur tout le fraisier.

Infuse the pistachio paste into the milk. Boil and mix the egg yolks, sugar, custard powder and flour. Boil for 1 minute.
Butter cream
Egg yolks 125 g
Caster sugar 65 g
Butter 750 g
Water 20 g
Cook the water and the sugar to 121°C and pour onto the whipped egg yolks. At 50°C place the butter cut into cubes and
leave to whip for 10 minutes.
Pistachio mousseline
Mix the butter cream with the pistachio crème pâtissière.
Joconde sponge
Eggs 200 g
Caster sugar 150 g
Almond powder 150 g
Flour 40 g
Egg whites 130 g
Caster sugar 30 g
Melted butter 30 g
Whip the eggs with the 150 g sugar. Once whipped, place the batter into a bowl and whip the egg whites and the 30 g sugar.
Fold in the premixed almond powder and flour into the meringue, finishing with the whipped egg mixture and fold in the
melted butter. Spread onto 40 x 60 cm trays and bake at 170°C for 12 minutes.
Strawberry insert
Strawberry Sauce
Heat the puree and add the sugar mixed with the pectin. Boil and add the starch. Boil for 1 minute and finish by adding the
neutral glaze.
Strawberries
Strawberry brunoise 200 g
Strawberry sauce 500 g
Mix together the brunoise and strawberry sauce. Pour into 1 cm high frames and blast freeze. Place the joconde sponge
onto each side of the strawberry insert.
Red glaze
Cream 130 g
Neutral glaze 150 g
Water 985 g
Gelatin 21 g
Caster sugar 230 g
Glucose 230 g
Cocoa butter 55 g
Red water based colorant 3 g
Heat the cream, neutral glaze, glucose and the sugar. Melt the cocoa butter, soak the gelatin in water. Mix together at 50°C
and finish with the colorant.
Shortbread
Butter 120 g
Salt 2 g
Almond powder 30 g
Icing sugar 80 g
Eggs 50 g
Flour 225 g
Rub together the butter, salt, Icing sugar, almond powder and flour. Add the eggs. Roll out rectangles of 4 cm by 20 cm.
Bake at 160°C for 8 minutes.
Modeling chocolate
Dark chocolate 300 g
Glucose 200 g
Melt the chocolate and add the glucose to create a dough. Roll 1 cm diameter stems, 10 cm long. Brush with ruby powder
and stick onto two 2 cm discs, brushed in ruby powder. Stick the strap onto the hand bag and then stick a disc onto the
sides of the strap.
Decoration
Finish with gold leaf onto the fraisier.
